Extreme personal preference⭐️⭐️⭐️✨3.5/5 It's already a tradition ❄️ When you see a snowman on a white frosted bottle, you buy it as a spinal reflex. ⛄️ The aroma has a yogurt-like aroma of unrefined sake, and when you drink it, it has a strong gassy feeling. Muscat, green apple, young sweetness, then sourness. The silky tailings bring bitterness and a crisp, umami spiciness. A light astringency lingers in the aftertaste and a delicate yogurt impression. ☺️ The alcohol content is only 13 degrees, which makes it easy to enjoy 🍶✨. I had it with okonomiyaki, but it seemed to go surprisingly well with sauces and mayonnaise 😊👍 Winter came to our house after drinking the snowman: 🌨️☃️ Thanks for the treat 🙏🙏. (Domaine Sakura, 100% Yamada Nishiki, produced in Sakura City, Tochigi Prefecture)

My personal preference: ⭐️⭐️⭐️✨3.5/5 Melon on the nose, nice tingling sensation on the tongue, juicy & fresh sweet & sour melon🍈. While tasting the sweetness of the melon, a beautifully delicious bitterness comes from the back 🥹, and I also feel a bit of green apple 🍏. Then, a moment after tasting the good balance of rice flavor and acidity, a sharp spicy bitterness that sweeps away everything at once 😊✨. The sweetness comes first on the palate, but the spiciness leaves a lasting impression on the finish 🍶✨. What makes it addictive is the slight sweet bitterness in the aftertaste❗️ This may be the depth of 寫楽 that allows you to drink more and more cups without getting bored 👌 It was a real treat 🙏. (Sake rice: 100% Yume-no-Kou from Aizu Minato, Polishing ratio 60%)

Extreme personal preference ⭐️⭐️⭐️⭐️4/5 Sake rice is undisclosed, but I wonder if this is also a "single sake" 🤔. Interesting new sake. It is Hiragana Takachiyo, which is the exact opposite of Niigata Tanrei Dry, but it has a particularly sweet, dark, bitter, juicy, but also addictive taste. It is a sake that should be drunk slowly, really, with a kotatsu (table over a kotatsu). It is also good with mikan (mandarin oranges). I think it is best to drink it warm and a little chilled. When it gets to room temperature, the sweetness and richness come out, which is also an entertainment. It has a pink grapefruit flavor, but it is not limited to that, and has a depth of flavor that changes depending on the temperature (probably thanks to the flattened rice). In many ways, it was a new sake that showed the depth of the brewery's rice polishing (in-house rice polishing, flat rice polishing, mysterious sake rice, and undisclosed rice polishing ratio)! But to take it to the extreme, it tasted like Kirin Mets slightly carbonated greef when chilled 😭(but unlike Mets, it tastes very different when the temperature changes 🙏) Thanks for all the treats: 🙇🏻 (Sake rice: Ipponshime? I'm not sure about the rice polishing ratio, it's originally a mystery and it's flat polished rice)

Abe, Abe, Abe-san's new sake: ❗️ Abe-san's new sake, orikarami❗️ Abe-san, Abe-san's❗️Yuta Abe is fantastic✨✨ All I can say is drink it, but just a review 😂. Opened the bottle, strong pong👍. Just a little yellow cloudy. The top aroma is fresh slightly sweet rice. When you drink it, you can smell the gaseousness and the gleffle aroma from the strong piquancy 👏. The sweetness and bitterness from the tailings cover the tongue in a refined manner, and the slightly sticky tailings spread a sense of vanilla lactic acidity on the palate. The appreciable acidity enhances the rice flavor, and in the second half, the freshness of the green apple leaves the palate. Finally, the delicious acidity of the rice nicely reconciles the bitterness of the hoppy beer and the astringency of the white wine-like tannins🤝. It is crisp and refreshingly dry, yet mellow ❗️ The impression is full and refreshing✨✨ Abe-san, you've done an amazing job: 🙇🏻 I want to drink another bottle 🥹. Extreme personal preference: ⭐️⭐️⭐️⭐️4/5 (part lightly intertwined with Ori) What the heck is Halloween? Halloween is Cosmo in my mind because of the awesome setting of a character named Cosmo who only says "Halloween" in Chainsawman 🤣. So I opened it today because Halloween is infinite (good reason why I couldn't open it on 10/31 w) It's a super juicy "sweet delicious bitter" ✨✨. Sweet and sour aroma, strong pinapple 🥹 when you include it and a mild sweetness like LaFrance afterwards. The mouthfeel is light, but the rich flavor comes unexpectedly, but it is not too heavy. It has a modern medium-full flavor. When the corkage is added, the umami bitterness becomes stronger and the lingering taste has more depth, this one is definitely my favorite 😊. The real scary thing about Halloween is to taste the spiciness and bitterness when the cage is involved 😂😂. So isn't this the best "Trick or Treat!" by the brewery (I don't know why) ✨. (Sake rice: undisclosed, Polishing ratio: 48% flat polished rice)

Extreme personal preference⭐️⭐️⭐️⭐️4/5(only on opening day) Here it comes: ❗️New Sake❗️New Sake for Nama Sake lovers 😂. The first new sake of the season is Kido👍Yummmm it's good 😭. First of all, the aroma of fresh rice 🌾. The mouthfeel is so good 😊Fruitiness dances on your tongue when you take a sip, and then a moment later, the acidity pops to reveal some fresh muscats ✨✨. Then, a gorgeous ginjo aroma runs through the nostrils, and the bitter astringency typical of Gohyakumangoku flows crisply and cleanly. The final impression is a bit dry, but after the crisp finish, the slight but firm sweetness and acidity of the rice leaves a deep impression 🙏. The second and third days, of course, the juiciness and tanginess fade away, and the bitterness and astringency quickly come to the fore since it is not fire-aged. The second day or so it is still in the tasty range, but by the third day, it is a completely different sake. After 3 days, it is better to warm it up. It is best served with anglerfish hot pot. It is best enjoyed cold, within 3 hours of opening. This is the best new sake at such a low price. ❗️ (even though this is only the first bottle of new sake).

Extreme personal preference ⭐️⭐️⭐️✨3.5/5 I've been curious about this one, but this is my first time trying it. I found it at a liquor store I wandered by and was torn between it and Junmai Daiginjo, but I bought the Junmai Ginjo because I tend to like Junmai Ginjo better and I thought it would be more economical if it tasted good 👌. This is delicious 🫢. Thanks to "Kuroyan no mizu", the softest water in Japan, it is soft on the palate, and the rice ginjo aroma comes in quickly, followed by juicy rice and apples that spread in your mouth 🍈. The sweetness of the rice flavor comes in slowly as it fully expands, and a good acidity comes in for a crisp finish 🤣✨✨. I grilled some cheap raw flying fish at home with salt and served it as a side dish, but it went so well with it👍! The Junmai Ginjo from Ding-san is quite cosy 🌾. I'm looking forward to taste some freshly squeezed new sake from Ding in the future 🥹. Thank you for the food 🙏🙏. (Sake rice: Miyamanishiki, Polishing ratio: 55%)

Extremely personal preference ⭐️⭐️⭐️⭐️⭐️5/5 (within 1 hour of opening the bottle) 2023 Autumn Tankoba Kumi is badass 🫢. It has less sweetness, more sharpness, and more tingling than 2023 Spring (so beautiful) 😭 I opened it because it was the wife's birthday 🙏. The "tamba kumi-kumi" is freshly squeezed sake, and is available only to sake brewers who can pick it up at the brewery on the spot (of course, it's also available outside of Yamaguchi Prefecture due to good distribution nowadays). The brewery has instructed us to keep the sake in the refrigerator and finish it within two weeks due to its extremely delicate quality, and the liquor stores are asked to consume it by the end of October. Sake is usually bottled in brown or green bottles to protect it from ultraviolet rays, but the white frosted bottles mean that the sake should be refrigerated in a dark place at 5 degrees Celsius or lower and drunk as soon as possible. ✊️ To be honest, I exaggerate, it's like "Meiji Oishii Milk" ‼️(I exaggerated 🙇🏻) with a gassy feeling and more sharpness 😂I don't think you can get drunk with Meiji Oishii Milk, but it's clean and beautiful and the most wholesome feeling 🥹.

The super clean juicy milk is accented with just a little bit of beautiful bitterness in the last part, and then it is followed up with a fluffy taste.

The first cup is almost free of acidity in a good sense. The first cup has almost no bite, in a good sense. The first drink is almost no hooking, in a good way, and the subsequent cup of Wakarimizu is very good. But the more you drink it, the deeper the flavor becomes and the more the umami deepens (but I think within 1 hour of opening the bottle) 🌾.

I'm a man who only drinks Akita sake (and Ryoseki again)😭 I'm getting a bad habit 😂. This sake is brewed by our unique low-temperature, long-term brewing method using "Rikkisui," one of the 100 best waters in Japan, which flows from the Kurikoma mountain range, as the brewing water. It's hand-packed and carefully bottle-fired only once. It's a bit like a domaine. It's like a domaine. It has a mild ginjo aroma with a hint of sourness, and when you drink it, the fresh, fruity sweetness and acidity will make your tongue tingle pleasantly. Hints of muscat spread across the palate, followed by a fresh umami that caresses the taste buds and lingers on the throat with a sweet bitterness near melon rind 🙏. It is a refined and deep jewel-like flavor that truly lives up to its Japanese name "Suitama" (emerald). Speaking of Ryoseki, "Hanayuup", which was recently created with technical support from Jyushiyo's Takagi Brewery, is very popular, but this "Suidama" has also inherited the excellent Ryoseki suite and is not at all inferior ✨✨. Extreme personal preference ⭐️⭐️⭐️3/5 I bought some Akita sakekko because of its nice color and appearance 😭 I want to be careful because if I'm not careful, I'll end up with all Akita sakko (I still have 3 bottles of Akita sakko lying around 😂) It's like they brewed "Ippozumi" with "Association #1 yeast" and "bottle-fired once" and "the young brewers of Ryoseki" got together and test brewed "ONLY ONE" so it's all ONE 🌾✨. I'm a little confused, is it sweet and spicy 🤔? First, a pleasant fresh aroma of Muscat ✨✨. On the palate, the fruitiness of the Shine Muscat, quite sweet and fruity ❗️ to berry-like and the transition to melon sweetness is a delight to the palate 🍈. After that, the custard flavor invades the tongue and is pleasantly spicy with bitterness and strong acidity coming in! The lingering sweet bitterness is well-balanced and finishes with a long-lasting depth 🙏. Extremely personal preference: ⭐️⭐️⭐️✨3.5/5 (only on opening day) Well, I got stuck and bought some Akita sakekko 😂. I can't go west at all 😱. At first there is a little gasiness from the banana flavor 🍌. Then fresh & juicy gourd type delicious acidity in the mouth. Wild acidity covers them, and the bitter & astringent taste typical of Miyamanishiki lingers strongly with alcohol in the finish. The #6 yeast from Shinsei and the Miyamanishiki from Akita Prefecture complement each other by bringing out the best of both worlds: the gorgeousness and sweet bitterness ✨🌾. The sunset orange may represent the exuberance of the setting sun (glamorous) and the awe of the coming night (bitter & astringent). Thank you for the treat 🙏. (Association No.6 yeast, Polishing ratio 5.5%, 100% Miyamanishiki?)

My personal preference: ⭐️⭐️⭐️3/5 It is a little bit cloudy, and if you look closely, you can see that it is a little bit cloudy. A bit pungent and a bit tangy on the palate. Sour and delicious is what I'm talking about ✨✨. This tastes like an expensive Riesling type white wine 😂. Reasonably priced and something to be gained 😭. Mature fruity 🍑🍑🍏🍑 with green apple, white peach, and apricot coming out 👌. The lingering astringency that doesn't go all the way to bitterness gives it a tannic feel, and the white wine finishes with a crisp astringent acidity 🍾. It reminded me of that sunset sky when I was chasing red dragonflies in Akita, and it was the sad acidity and astringency that brought me back to my childhood 🥹. Thank you very much for the food 🙏🙏. [The rice is 100% Yamadanishiki (Domaine Sakura Yamadanishiki) grown in Sakura City, Tochigi Prefecture.]

I recall that it had been the talk of the town for a while, winning awards overseas and being sued over its name. I found a half-bottle of it on sale, so I tried it. It is golden yellow in color, with a slight sweet aroma of rice. It has a thick, syrupy texture on the tongue and throat. From the rich cotton candy, there is a wild flavor of Omachi. The mouth is filled with acidity with a sense of aroma due to the hard water of Mt. The lingering finish is pleasantly long with an overwhelmingly beautiful sweetness. It has an elegant, rice dessert wine taste. It's kind of delicious, but half a cup was just right 🤣. [Polishing ratio 90%, Koji ratio 40%, Rice (100% Omachi from Okayama Prefecture), Rice Koji (100% Omachi from Okayama Prefecture)]

Starts with a strong ginjo aroma and gorgeous rice flavor✨ It still has a white wine feel when you drink it! Fresh acidity and sweetness like raspberry, sweet and sour of ripe grapes, grapefruit bitterness that slowly builds, and umami acidity 😋They are all balanced and comfortable without being biased towards any of them. ‼︎ The lingering bitterness gives a sense of depth while the freshness of the white wine finishes it off👌. I would recommend this to anyone who loves wine ✨✨. A great sake 🥹 that is a well-balanced sake/wine hybrid that is not biased towards either 🥹. (Yamada Nishiki)

Extreme personal preference ⭐️⭐️⭐️3/5 Another bottle opened last week on the Mid-Autumn Moon 🎑. The label is already, I think ^_^ tsukimi-sake🌕. Also, Iki Island, where Shigeke Brewery is located, is home to Tsukiyomi Shrine, the original and head shrine of all Tsukiyomi shrines in Japan. The three deities are Tsukuyomi-no-mikoto, Tsukiyomi-no-mikoto, and Tsukiyumi-no-mikoto, all of whom are related to the moon. I'm sure my dad at the liquor store told me that it's a drink often used to seduce women, but tonight, I hate to drink alone 😭. The night was cloudy, with only the occasional full moon peeking out from between the clouds. ⛅️ First of all, let's have a cup of sake with the moon. From the refreshing aroma of rice, the attack is a little strong with sweet and sour. Plump acidity from the cotton candy spreads across the palate, changing from sweet acidity to elegant umami acidity 🥹. It's so different from the previous lot that it seems a bit of an experimental lot (different sake rice or yeast?). The sake is very good but I can't describe it well 🤣. Honestly, drink it and let me know 😂. Gorgeous aroma of rice, clean rice flavor on the palate and a tingly pleasant light gas feeling on the tongue 🥹. Then, gentle sweetness of melon near the skin, and as the temperature rises in the mouth, is it bitter melon cream or slightly mellow sweetness, bitterness, slight lactic acidity? The sweetness, bitterness, and lactic acidity are very deep in the mouth. The sweetness, bitterness, and nourishment are then covered by a thin veil of beautiful acidity, which is contained within and runs down the palate with a clear and crisp taste ✨✨. The finish is dry and refreshing due to the way the acidity is beautifully applied, making it exactly what the brewer says it will be 👏👏. If you're not careful, it will empty quickly 😭 When I receive Abe-san, I can feel that this sake is made by a small sake brewery that has really tried and made great efforts in brewing it 🙇🏻 Thank you so much 🙏. Extreme personal preference: ⭐️⭐️⭐️⭐️✨4.5/5 Mmmm Sentori! Omachi! Nama yeast! Yum! I can only say that it is as good as it should be 🥹. It's also amazing that it's getting better and better every year! It must be the result of research and trial and error 👏. Fresh muscat from the gentle rice aroma, juicy fruitiness. Slight tingling and gasiness that feels good on the tongue. Harmonious sweetness and acidity that is typical of Sentori fills the mouth, immediately followed by a sweet and sour bitterness that encompasses the wild wildness of Omachi, which is tasteful and spreads further into the mouth and throat ✨✨. The lingering taste has the richness of a traditional sake yeast yeast yeast, but finishes light and refreshing 🙏. It's amazing that it's this light and it's still a pure sake. I wonder how the conflicting beauty and wildness can be in harmony 🤔. Is this all coming together because it's a super soft water terroir Sentori? Because it is a domaine? You have to visit the brewery once for this. The way it is made is classic but the taste is like modern. Anyway, it's an amazing sake 😭. Thank you 🙏. It's just a very, very personal preference 😂) Well, it's been a while since I've been to Haneya, but it's really good. It is a full and well-balanced sake, just like Haneya, perfect for long autumn nights as the weather cools down👍. The aroma is gorgeous, the taste of the rice makes the mouth full and melon-like 🤣The ginjo aroma is also gorgeous 🍶. The aftertaste is not persistent, and the gentle rice flavor leaves in a flash. It is a really well-balanced and easy-to-drink sake, and it was empty in no time 😭. Thank you 🙏. (Rice <Gohyakumangoku> produced in Toyama Prefecture)

Extreme personal preference⭐️⭐️⭐️3/5 Well, it's a crazy lingering summer heat ☀️ I found some cheap beef tendon, so I spent 4 hours on such a hot day and cooked beef tendon stew with a lot of sweat 😂. I wasn't sure what kind of sake to serve with it. I bought a bottle of "Kojiya" Junmai Ginjo from Takahashi Shoten in Yame City, Fukuoka Prefecture ✨✨ which was recommended by the owner of the liquor store. I thought it would go well with the beef stew 👍. The fruity and sweet flavor of the rice comes from the subtle aroma of rice, and the rich acidity passes through refreshingly without a pause. Finally, a moderate amount of bitterness and tastiness remains, giving the sake its own deep aftertaste. However, the impression is still refreshing and light. Perhaps it is the pleasant acidity left behind and the obviously delicious Yame no Mizu water that makes it so. This matches the sweet and spicy beef stew, and one can't help but drink more and more. It was worth all the sweat I put into making the beef stew 😭. It was a great treat 🙏. (Rice: Yamada-Nishiki, Yume-Ichiken)
