I've been so busy during the holiday season that I haven't been able to check in, but I've managed to check in for the first time in 2024 😂.
I had a lot of drinks during the New Year's Eve and New Year's holiday, so there's a big traffic jam of things I haven't checked in on yet.
Takeba is located in Noto-cho, Hozu-gun, a rather far end of the Noto Peninsula, and is a valuable sake brewery that supports the sake industry in Okunoto. As the label on the back of the bottle says, it is brewed with Noto ingredients, and I am deeply impressed by the Noto-domaine-like style of brewing.

Gentle aroma of rice 🌾.
Soft and smooth to drink.
Refreshing rice flavor, acidity and richness.
It is then sharp and clean all at once.
The aftertaste is the spiciness of rice with a slight astringent taste of young white wine.
It is well-balanced and well-contoured.
It is also great as a mealtime sake 👌👌.
And when heated up, the aroma and sweetness stand out and it's delicious.
It is perfect when served lukewarm with hot pot 🍲.
It was a real treat 🙏.
The website of Kazuma Sake Brewery reported that although there was considerable damage to the brewery, all employees and their families are safe and sound.
