I like it deeper than 2024 spring: ❣️ I bought and drank two bottles this season and they are quite individual (of course, both are delicious), but the slight bubbly feeling, the amount of light lees, and the texture of both bottles are completely different. At the beginning, it has a fruity and light feeling with apples and cherries, As the bottle opens, it becomes more and more mellow. However, the charm of this tankba kumi is that it is mellow but light, with a deep flavor but not heavy. When the temperature rises a little, the final taste is milky but light, like Meiji Oishii Milk! ✨✨ It is indeed a tank place pumping. Thank you for the treat 🙏🙏.

First the supernatant Tingling gas feeling on the tongue Refreshingly juicy, bouncing sweetness Green apple, melon and rice sweetness Gorgeous complexity. Beautiful acidity and sharpness. When you mix the tailings, the mouthfeel is grapey and the umami is enhanced. Good aroma of unrefined sake Creamy and slightly bitter Sweet and bitter with a long aftertaste. The impression is fresh. For some reason, it goes surprisingly well with o-hagi (rice cakes). It might go well with Japanese sweets in particular. As always, Kido's sake is very cost-effective and I want to support their corporate efforts! Thank you very much for the sake! Sake rice: Gohyakumangoku Polishing ratio: 55

It's so good that I regret why I didn't drink it until now even though I had seen it! It has a pleasant gaseous sensation and a gorgeous aroma. Gorgeous aroma without being overbearing. The attack is very fruity and fresh, but also rather calm. The fruity part has the complexity of the raw sake, but it seems to be well put together. It is citrusy, but also has mango and a little bit of richness and flavor. The lingering bitterness keeps the drink going. It has a cool and refreshing taste that you will not get tired of drinking. Good balance of sweetness and acidity. Good cost performance It is a brand that I want to drink from now on! Fresh juicy aftertaste lemon bitterness. 2nd day Sweetness and umami up. Lemoniness is gone, bitterness fades and meloniness is up. Good acidity ✨Yummy 😋. 3rd day Sweetness and deliciousness up The bitterness fades further and the citrus flavor also fades. Mellow melon sensation. Mild sourness. Each of the first, second, and third days had a different flavor, and it was a wonderful sake to enjoy for three days. Extreme personal preference ⭐️⭐️⭐️✨3.5/5 Second bottle of Ding's home brew 🍶. A light pon to open with a little tailings. Fruity mouthfeel and some floral aroma with some floral notes. Lots of pear, melon flavor, and fresh acidity as the sweetness comes through ✨✨. Gentle acidity that finishes with a gentle acidity and slowly fades away with a lingering bitterness that reveals the flavor of the rice 🙏. After a few hours the sweetness comes forward and the second day is much sweeter but with a lingering bitterness of umami melon that is also delicious 😊👍 Thanks for the treat ✨✨ (Ingredients: Contract grown rice from Nagano Prefecture Kuroyau water, the softest water in Japan Rice Hitogokochi, Kakemai Kinmon Nishiki Sake degree -7 Acidity 1.6 Amino acidity 1.6 Rice polishing ratio 55 Alcohol 16%)

Extreme personal preference: ⭐️⭐️⭐️✨3.5/5 The label says "🍊" (mandarin orange). The label says "Mikan" and it is full of flavor from the freezing point storage, but it is not heavy because of the bouncing tangerines 😆. It's a very good reproduction of mikan 👏 juicy sweetness of ripe mikan and light acidity 🍊. And no peculiarities 💧. It's a medium-bodied, smooth wine with a fresh tangerine flavor that would otherwise be heavy with sweetness 🤣. The aftertaste is also bitter, just like the aftertaste of eating mandarin oranges. I tried it and it still goes well with mandarin oranges and citrus 😭.

Extremely personal preference: ⭐️⭐️⭐️⭐️4/5 This is a sake that supports Noto by drinking it, and they are going to donate 1,000 yen per bottle to the sake breweries in Noto that were affected by the earthquake and tsunami. In this sense, it is worth drinking. I'm not a big fan of kijo sake and usually avoid it, but this one is delicious. ❗️ Maybe it's a good match for Yoshida Kurau ✨. The top aroma is fresh banana. The nose is fresh and firm, with a hint of banana. There is a fresh, firm citrus sweetness to start, with a heavy Orangina feel (though the carbonation and juice strength are completely different). The citrus juiciness and the hints are like the darker side of a ponkan. It is full of flavor and more mellow, but not too sweet, and is easy to drink. The lingering ponkan sweetness and bitterness is pleasant 🥹. The balance between fruity sweetness and light acidity is very good, so it's not too heavy, but I think it has a citrusy freshness. Surprisingly, it might be interesting to lay down for a couple of years. Maybe I should go buy another bottle. Anyway, I don't usually drink kijo-zake and my wife enjoyed it very much. After drinking it, we naturally clasped our hands together to say "thank you for the sake" as shown on the nice yellow label. Wish for NOTO
