My personal preference: ⭐️⭐️⭐️⭐️4/5 (on the day of bottling) Kumazawa Sake Brewery is the only sake brewery in Shonan, Kanagawa Prefecture, located in Chigasaki, and their company motto is "Yobarai makes Japan rich" 🤣✨I think the company motto is just waiting for a lucky break 😭. Kumazawa Shuzo's "Tensei Asashiboribori" is an interesting sake that is bottled freshly squeezed at dawn and sold by the liquor store in the morning of the same day 😊. I drank a bottle over 5 days and it was by far the best on the day it was bottled 👍On the 4th or 5th day, the fruity rice flavor was reduced and the alcoholiness started to stand out, so I heated it up, but that wasn't too bad (it also went well with chicken dumplings in a pot)✨. It's slightly yellow and I think it's just a little bit thicker. A little chili and fresh gas feeling on the tongue. Anyway, fresh ❗️ fresh fruitiness 🍏 with a touch of citrus and green apple, and the sweet fruity taste of the rice ✨. But it's crisp 👍It has a beautiful sharpness ❗️ and clarity 😆🩷. It has a nice sharpness, but the aftertaste is deep with a bitterness like a combination of berries and high cocoa chocolate. But the freshness made it a delicious water with a delicious acid bittersweet danger that I can drink as many glasses of Swiss 😭. Thanks for the treat 🙏. (Sake rice: Gohyakumangoku? Extremely personal preference⭐️⭐️⭐️⭐️4/5 I was curious about this Haneya, which is made from the rather rare Toyama Yumachi ✨. The label is austere ☺️ I'll take it 🙏. Elegant ginjo aroma, elegant mouthfeel 😊. After a light gassy sensation, the palate is pleasantly filled with fresh pineapple from the raw sake, followed later by the sweet acidity of muscat 🍍. It has Haneya's typical refinement of not being too sweet in the aftertaste, but it also has the mellowness and strength typical of Omachi, with a great sweet-acid 😆👍. I opened the 4-goupe bottle in no time because I never get tired of it, and it goes well with food as well. 🙇🏻 Thank you so much for your hospitality 🙏! (Rice: 100% Omachi from Toyama prefecture, Polishing ratio: 60%, Alcohol content: 15%)

Extreme personal preference⭐️⭐️⭐️✨3.5/5 Osha label that doesn't look like Miyaganbai👌. It's a collaboration with SENDAI pageant of light. The bottom power of the active nigori, automatic stirring when you open it 😙 but you still get the supernatant part ✨✨. Highly aromatic. The grapefruit-like ginjo aroma is refreshing. At first, a shrieking gassy sensation makes you anticipate what's to follow. Fresh fruity citrus acidity and sweetness. The bitter acidity is pleasant 🥹✨✨ when the tailings are involved. To be honest, I didn't like it on the opening day because of the grueliness in the lees, but after about the 3rd day, the grueliness in the lees is removed and it turns into a nice bitter taste👌. The 3rd and 4th day, the creamy and fruity sweet and sour taste with a touch of gas still remains, and the lingering sweet bitterness also helps you enjoy the drink 😊✨✨. A gem that makes me want to visit the SENDAI Pageant of Light (I've been to the Sendai Tanabata Festival) ☺️ Thank you for the food 🙏🙏. Extremely personal preference⭐️⭐️⭐️⭐️✨4.5/5 (up to 2 days after opening) This deliciousness at 80% low milled rice❗️ amazes me‼️ And I know what "Nakadori (Nakakumi, Nakadare)" is, but what is "Midori" of Kaze no Mori? I looked it up 🤗. It is a limited edition brewed with 80% low-polishing rice from Akitsuho, a sake rice synonymous with Kaze no Mori. The "maka-hakuri" method is a unique brewing method of the Aburacho Brewery. Only the part of the sake that drips down from the press without applying pressure is harvested. It is a luxury product made by bottling such a rare sake as it is freshly squeezed. As the label says, it has a slightly sweet aroma of melon banana ✨It has a soft but rich mouthfeel, probably because it is picked in the middle of the bottle, and is pleasantly slightly carbonated from start to finish 👌. Slightly thick but not heavy at all 🥹. There are complex flavors from the low milling, but they're all wrapped up with good acidity and Akitsuho's transparency ✨. The aftertaste is a mellow yellow (old w do they sell it now?). However, after opening the bottle, the acidity is getting stronger and stronger, so it would be better to drink it sooner. It was a great treat 🙏. (100% Akitsuho from Tsukihi, Nara prefecture, Polishing ratio: 80%)

Extreme personal preference ⭐️⭐️⭐️3/5 It's not "Hanamura", it's "Hanamomoe" 🤗. I walked into a liquor store and thought "Oh, there's Hanamomura! I thought, "Wait, I mistook Hanatomoe for Hanamomura before, but I've never had it before" and bought it 👌 Well, I took a sip of the new Hanaboe sake and thought, it's good but I'm in trouble 😂Well, I guess you can like it or not, but it's an interesting taste✨It's hard to describe the flavor. But really interesting flavor ✨. The top layer is light and floral, then covered with a very interesting sourness. It's an interesting sourness that is followed by an astringent sweetness. When the tailings are involved, it becomes more and more complex, with a melon, grain, floral, and new sake-like roughness of rice, as well as the austere powderiness and dryness of the tailings, and the strong acidity that interrupts all of this. It has a strong acidity that breaks through the roughness and dryness of the rice that is typical of new sake, but there is also a strong acidity that breaks through the roughness and dryness. I think the reason why it is called "fast brewing" is because Hanaboe is a rare method of brewing without any yeast, while fast brewing usually requires the addition of lactic acid bacteria and yeast. My personal preference: ⭐️⭐️⭐️✨3.5/5 (3 or 4 days after opening) You're right, it's better 3 or 4 days after opening: ☺️ On the opening day, there was a bit of bitterness like a too green melon, but on the third day, the sweetness and flavor came out ahead. It is also very clear and beautiful, probably because it is made from "shin-gin" polished rice (flat polished rice). When you drink it, you first get a melon juicy 🍈✨ from the elegant gasiness. It is the third day, so it has mellowed considerably but still has a freshness to it. The muscat in the mouth does a nice job, and the sweet and acidity ride on top of each other nicely 👍. The lingering bitterness and soft sweetness from the back is well balanced and pleasing to the throat 🙏. Gone after 4 days, but it seemed like it could be good even after that ✨✨I want to try it sometime 😚. Extreme personal preference ⭐️⭐️⭐️⭐️4/5 Akabu's new sake is indeed delicious ✨✨. Junmai sake is also very cosy (though I was quite torn between it and Jungin at the liquor store 😂). Green apple aroma and a nice gassy feel on opening the bottle 😆. When you drink it, the fresh and light green apple type sweetness and citrusy acidity from the clear and juicy umami combine in the mouth, resulting in a very good balance! The sweetness and acidity come together to push out the umami, giving it a milky impression 🥛. The sweet bitterness lingers in the aftertaste, and the lingering sugar like white peach finally sits in the back of the tongue, increasing the desire for the next cup 😊👍. I think it's a modern medium that everyone loves: ❣️ It went very well with the teriyaki yellowtail 👌😆. My personal preference: ⭐️⭐️⭐️✨3.5/5 I usually like Yame tea and drink it every day, and this is a Shigemasu nigori draft from Takahashi Shoten, a venerable brewery that has been in Yame City for over 290 years in its 18th generation. This is the same brewery as the Kojiya brewery I checked in with before. The top aroma is sweet and distinctive, with a thin layer of residues at the bottom, and when you take the supernatant, there is no gasiness, and the rice-fruity, slightly melon flavor carries a gentle umami 👌 and it is also gorgeous. Then soft cotton candy on the tongue. The aftertaste is a smooth sweetness, but when the tailings are involved, the bitterness and sweetness are a great match👍. When the tailings are all mixed together, a creamy, gentle bitterness covers everything, giving the sweetness depth, fineness, and fullness ✨✨. It's a very cosy sake with an impressive sweetness as gentle as Yamecha 🍶😊. Thanks for the treat 🙏🙏. (Rice: Fukuoka Yume-Ichiken, Polishing ratio: 50%, Sake degree: +1, Acidity: 1.4, Alcohol percentage: 16%-17%)

Extremely personal taste: ⭐️⭐️⭐️3/5 It's a good sake, full and classic 😊. Anyway, I was curious about this sake because it was made from the edible rice Sasanishiki. When I was a child growing up in Akita, there was no "Akita Komachi" and the best rice was Sasanishiki. I don't think it is sold much in supermarkets now, but I was happy when I could eat Sasanishiki as a child, so I remember the nostalgia when I hear the name 🥹. The sake is a little cloudy, though it may vary from one individual to another. The aroma is surprisingly fruity and gorgeous. The mouthfeel is slightly slightly carbonated, with a classic, robust rice flavor and sharp, bitter acidity👍. The bitter sharpness and dryness makes it easy to go on to the next cup 👌. The crisp and light feeling of cooked Sasanishiki may be the reason for the sharpness. It's been a long time since I've had a good old-fashioned Sasanishiki 🥹. (Rice: Sasanishiki from Kyotango, Polishing ratio: 60%, Alcohol percentage: 16.2%)

Extreme personal preference ⭐️⭐️⭐️⭐️4/5 It's some kind of limited edition sake with a cooling bag 🙂. Yamamoto Pure Black's Nama sake may be rather rare 😊. It comes with an interesting cold storage bag (and it's expensive 😭) ✨. I mean, I bought it for the cold bag 😂. But the main body was also delicious 🍶✨✨. Banana-like ginjo aroma. Slightly gassy on the palate. The juicy rice flavor that is not too sweet spreads in the mouth in a youthful way, and the summer tangerine-like acidity covers them pleasantly immediately. ☺️ This time, the koji mold of Pure Black was changed and the sake is said to be fully fermented with less than 0.1% residual sugar, so it has the sharp taste of a Japanese sword, which is true to the description on the back of the bottle, and is more refreshing and acid-dry than the usual Pure Black ✨✨. It's excellent as a food sake and goes with everything 👍Thanks for the treat 🙏. I'm going to take this cold bag to the liquor store to stock up today 🏃💨! Extreme personal preference⭐️⭐️⭐️✨3.5/5 Hi again Tochigi❗️ maybe I was a Tochigi resident in a previous life 😂. The label is cool as always✨ It's rare to see a blend from Mita 🤔. They use Yamadanishiki and Gohyakumangoku for their rice ✨. I was thankful for this first new Mita sake of the season 🙏 and took a sip first. From the muscat aroma, it has a gentle muscat touch. And it's not rough, which is typical of new sake, but rather gentle, fresh and juicy without being too aggressive ✨✨. Sweet and sourness spreads to the palate, with a light wildness👍 of berries and bitterness of gourd at the throat. The lingering sweetness of the muscat, with a gentle blue alcohol taste, gives just the right dry crispness, making you anticipate the next cup 🍶. It has a sense of balance and flavor control that is hard to believe it is a new sake. The sense of balance between the richness and the juiciness that can be enjoyed in a big gulp is superb 😂. First of all, thank you Mida for your new sake: 🙇🏻 (Rice: Yamadanishiki, Gohyakumangoku)

Extreme personal preference⭐️⭐️⭐️✨3.5/5 It's already a tradition ❄️ When you see a snowman on a white frosted bottle, you buy it as a spinal reflex. ⛄️ The aroma has a yogurt-like aroma of unrefined sake, and when you drink it, it has a strong gassy feeling. Muscat, green apple, young sweetness, then sourness. The silky tailings bring bitterness and a crisp, umami spiciness. A light astringency lingers in the aftertaste and a delicate yogurt impression. ☺️ The alcohol content is only 13 degrees, which makes it easy to enjoy 🍶✨. I had it with okonomiyaki, but it seemed to go surprisingly well with sauces and mayonnaise 😊👍 Winter came to our house after drinking the snowman: 🌨️☃️ Thanks for the treat 🙏🙏. My personal preference: ⭐️⭐️⭐️✨3.5/5 Melon on the nose, nice tingling sensation on the tongue, juicy & fresh sweet & sour melon🍈. While tasting the sweetness of the melon, a beautifully delicious bitterness comes from the back 🥹, and I also feel a bit of green apple 🍏. Then, a moment after tasting the good balance of rice flavor and acidity, a sharp spicy bitterness that sweeps away everything at once 😊✨. The sweetness comes first on the palate, but the spiciness leaves a lasting impression on the finish 🍶✨. What makes it addictive is the slight sweet bitterness in the aftertaste❗️ This may be the depth of 寫楽 that allows you to drink more and more cups without getting bored 👌 It was a real treat 🙏. (Sake rice: 100% Yume-no-Kou from Aizu Minato, Polishing ratio 60%)

Extreme personal preference ⭐️⭐️⭐️⭐️4/5 Sake rice is undisclosed, but I wonder if this is also a "single sake" 🤔. Interesting new sake. It is Hiragana Takachiyo, which is the exact opposite of Niigata Tanrei Dry, but it has a particularly sweet, dark, bitter, juicy, but also addictive taste. It is a sake that should be drunk slowly, really, with a kotatsu (table over a kotatsu). It is also good with mikan (mandarin oranges). I think it is best to drink it warm and a little chilled. When it gets to room temperature, the sweetness and richness come out, which is also an entertainment. It has a pink grapefruit flavor, but it is not limited to that, and has a depth of flavor that changes depending on the temperature (probably thanks to the flattened rice). In many ways, it was a new sake that showed the depth of the brewery's rice polishing (in-house rice polishing, flat rice polishing, mysterious sake rice, and undisclosed rice polishing ratio)! But to take it to the extreme, it tasted like Kirin Mets slightly carbonated greef when chilled 😭(but unlike Mets, it tastes very different when the temperature changes 🙏) Thanks for all the treats: 🙇🏻 (Sake rice: Ipponshime? Extreme personal preference: ⭐️⭐️⭐️⭐️4/5 (part lightly intertwined with Ori) What the heck is Halloween? Halloween is Cosmo in my mind because of the awesome setting of a character named Cosmo who only says "Halloween" in Chainsawman 🤣. So I opened it today because Halloween is infinite (good reason why I couldn't open it on 10/31 w) It's a super juicy "sweet delicious bitter" ✨✨. Sweet and sour aroma, strong pinapple 🥹 when you include it and a mild sweetness like LaFrance afterwards. The mouthfeel is light, but the rich flavor comes unexpectedly, but it is not too heavy. It has a modern medium-full flavor. When the corkage is added, the umami bitterness becomes stronger and the lingering taste has more depth, this one is definitely my favorite 😊. The real scary thing about Halloween is to taste the spiciness and bitterness when the cage is involved 😂😂. So isn't this the best "Trick or Treat!" by the brewery (I don't know why) ✨. Extreme personal preference⭐️⭐️⭐️⭐️4/5(only on opening day) Here it comes: ❗️New Sake❗️New Sake for Nama Sake lovers 😂. The first new sake of the season is Kido👍Yummmm it's good 😭. First of all, the aroma of fresh rice 🌾. The mouthfeel is so good 😊Fruitiness dances on your tongue when you take a sip, and then a moment later, the acidity pops to reveal some fresh muscats ✨✨. Then, a gorgeous ginjo aroma runs through the nostrils, and the bitter astringency typical of Gohyakumangoku flows crisply and cleanly. The final impression is a bit dry, but after the crisp finish, the slight but firm sweetness and acidity of the rice leaves a deep impression 🙏. The second and third days, of course, the juiciness and tanginess fade away, and the bitterness and astringency quickly come to the fore since it is not fire-aged. The second day or so it is still in the tasty range, but by the third day, it is a completely different sake. After 3 days, it is better to warm it up. It is best served with anglerfish hot pot. It is best enjoyed cold, within 3 hours of opening. This is the best new sake at such a low price. ❗️ (even though this is only the first bottle of new sake).

Extreme personal preference ⭐️⭐️⭐️✨3.5/5 I've been curious about this one, but this is my first time trying it. I found it at a liquor store I wandered by and was torn between it and Junmai Daiginjo, but I bought the Junmai Ginjo because I tend to like Junmai Ginjo better and I thought it would be more economical if it tasted good 👌. This is delicious 🫢. Thanks to "Kuroyan no mizu", the softest water in Japan, it is soft on the palate, and the rice ginjo aroma comes in quickly, followed by juicy rice and apples that spread in your mouth 🍈. The sweetness of the rice flavor comes in slowly as it fully expands, and a good acidity comes in for a crisp finish 🤣✨✨. I grilled some cheap raw flying fish at home with salt and served it as a side dish, but it went so well with it👍! The Junmai Ginjo from Ding-san is quite cosy 🌾. I'm looking forward to taste some freshly squeezed new sake from Ding in the future 🥹. Thank you for the food 🙏🙏. (Sake rice: Miyamanishiki, Polishing ratio: 55%)

Extremely personal preference ⭐️⭐️⭐️⭐️⭐️5/5 (within 1 hour of opening the bottle) 2023 Autumn Tankoba Kumi is badass 🫢. It has less sweetness, more sharpness, and more tingling than 2023 Spring (so beautiful) 😭 I opened it because it was the wife's birthday 🙏. The "tamba kumi-kumi" is freshly squeezed sake, and is available only to sake brewers who can pick it up at the brewery on the spot (of course, it's also available outside of Yamaguchi Prefecture due to good distribution nowadays). The brewery has instructed us to keep the sake in the refrigerator and finish it within two weeks due to its extremely delicate quality, and the liquor stores are asked to consume it by the end of October. Sake is usually bottled in brown or green bottles to protect it from ultraviolet rays, but the white frosted bottles mean that the sake should be refrigerated in a dark place at 5 degrees Celsius or lower and drunk as soon as possible. ✊️ To be honest, I exaggerate, it's like "Meiji Oishii Milk" ‼️(I exaggerated 🙇🏻) with a gassy feeling and more sharpness 😂I don't think you can get drunk with Meiji Oishii Milk, but it's clean and beautiful and the most wholesome feeling 🥹.

I'm a man who only drinks Akita sake (and Ryoseki again)😭 I'm getting a bad habit 😂. This sake is brewed by our unique low-temperature, long-term brewing method using "Rikkisui," one of the 100 best waters in Japan, which flows from the Kurikoma mountain range, as the brewing water. It's hand-packed and carefully bottle-fired only once. It's a bit like a domaine. It's like a domaine. It has a mild ginjo aroma with a hint of sourness, and when you drink it, the fresh, fruity sweetness and acidity will make your tongue tingle pleasantly. Hints of muscat spread across the palate, followed by a fresh umami that caresses the taste buds and lingers on the throat with a sweet bitterness near melon rind 🙏. It is a refined and deep jewel-like flavor that truly lives up to its Japanese name "Suitama" (emerald). Speaking of Ryoseki, "Hanayuup", which was recently created with technical support from Jyushiyo's Takagi Brewery, is very popular, but this "Suidama" has also inherited the excellent Ryoseki suite and is not at all inferior ✨✨.
