The second Koei Chrysanthemum I finally came across😍. Again, no detailed data available 😍. 100% Hachitan-Nishiki from Hiroshima Prefecture Polishing ratio of 50% (or is it 50%?) Alcohol content 14%. Sake meter - Acidity Fat 5/10 (bottle opened 6/4) When the bottle is opened, it has a fresh apple aroma with a little bit of almondy and nutty aroma. The first thing that hits the palate is a delicious sweetness, like young apples or peaches, with a good acidity. The last part of the mouth is sweetness and spiciness like young apples or peaches! This is what makes it so delicious 😘. It seems to be made with "natural lactic acid bacteria" 🤩I didn't know it was possible to make such a delicious taste. On the second day, the slight bubbles settle down...the texture becomes smoother, but the lingering umami spiciness is still there! This is really delicious! It's interesting to see how it changes over the days, but you can also enjoy the changes over time... It tastes better when it's well chilled, but the deepening flavor when it's close to chilled (room temperature) is also interesting! There are many fruity sweet and spicy sake, but this one is irresistible! Kouei Kiku! This is amazing! I'm going to be hooked 🤣 The only drawback is that it's a bit pricey 😅 Yum! I missed Yasuda Kinen, but my tickets for 6/1,2 were good 💴.

The end of May 100% Yamada-Nishiki used Polishing ratio 60 Alcohol content 18 Sake meter degree: +7, Acidity: - (for reference) Fat: 5/7, opened 5/31 I tasted a few different kinds of sake at my favorite liquor store and liked this one! The smell after opening the bottle was completely opposite to the fruity smell of the rice flavor😍I was trying to imagine what it was! This is it! Vanilla! A rich vanilla flavor with lots of vanilla beans! And it's smoky too! I've never experienced this smell before 🤩 I am overflowing with anticipation! When you put it in your mouth, you can taste the fragrance and the delicious rice flavor! It was so dry that the spiciness spread out and lingered for a long time, but the spiciness went well with the oily yellowtail sashimi. When I tasted it, I thought it would be a refreshing dry wine for early summer, but maybe it's because it was just opened... it was so delicious! It's a sake match (happiness) 😍 Delicious! Last week's horses The Derby was ridden well by Mr. Nori Yokoyama 🙅. The horses I targeted came in 1st, 2nd, and 3rd in the Kyoto 11R on Saturday, and I won a big prize!

100% Yamadanishiki produced in Iga, Mie Prefecture Polishing ratio 50%. Alcohol content 15%. Sake meter: -3.3, Acidity: 1.5 (reference) Fat bottle opened 5/3 and posted 5/21 I've been drinking Gizaemon in one cup at a fish-based izakaya where I often go for a drink (report posted on 2022.10.4), but this is the first time I've seen a four-pack bottle! I have to admit, I was taken by the jackets ☺️ swimsuit 👙🤣. It's a summer sake bottled from freshly squeezed new sake, once fired, and has a refreshing aroma after opening the bottle! It has a refreshing aroma with a hint of marijuana and almost no alcohol! When you put it in your mouth, the refreshing sensation is very pleasant and there is no messiness at all! So, you can enjoy it if you cool it down and drink it while savoring the refreshing sensation and feeling the change in flavor as the temperature gradually rises. Delicious! About GW I watched my daughter's badminton tournament for the first time. This tournament was a regional qualifier mainly for 3rd graders, and only my daughter and 2 other 2nd graders participated, including one from another school. One of the 2nd graders was the winner of the 1st grade tournament (my daughter came in 3rd), and although her opponent was good, she persevered to win in a full set 🎉 She lost in straight sets to a 3rd grader in the next round, but I was able to see how much my daughter had improved after watching her fight back even when leading 🎉 It was a great day for me to see how much she had grown 🥰.

Morishima Junmai Ginjo Yamadanishiki 100% Yamadanishiki produced in Hyogo Prefecture Polishing ratio 60 Alcohol content: 15% (undiluted) Sake meter degree: +2, Acidity: 1.6 (reference) The bottle was opened on April 28 and posted on May 17. This is the first Morishima! This is Morishima! I was interested in this sake after reading your comment. After opening the bottle, the aroma is soft and slightly sweet with a hint of gas and a fine, silky texture! Awesome! I also detected a thin hint of strawberry-like ginjo aroma! I was impressed by this alone 🤩. In the mouth, it has the fullness typical of Yamada-Nishiki, and the taste is elegant and sharp. It has a fresh, clean acidity and a pleasant dry aftertaste. I would like to drink this again! I'll do it! Morishii 🤣 Delicious! I bought a replacement for the broken glass... same one 🤣 because... it's easy to use... I wanted to buy the piccolo glass you bought, but I gave up on it because it's inevitable that I'll break it at home 😅.

GANKI Arabashiri Fat bottle opened 4/26, posted 5/11 We drink this every year 😁. I don't think I need to explain anymore! It's just delicious! After opening this year's bottle, I felt that it was drier than usual! The taste is still the same, but the spiciness is more pronounced... Some people may find this tasty, but for me, it was strong and harsh... But, I'm sure it's delicious... Delicious! 5/11 night ACL Champions Cup Final We had a close game vs. Al Ain in the first round at home ⚽⚽We had a close game but we won 2:1 🎉We still have a lot of problems to solve but winning is the most important thing ⚽☝️ My son was escorted to the game by a father of his team and he had a good seat to watch the game ⚽ He had a good time and won 😁. Koei Chrysanthemum Anastasia Green 100% Saganohana Polishing ratio: -%. Alcohol content 13%. Sake meter - Acidity Fat 4/20, opened 5/8 I like the fact that the detailed data is unknown. Finally met Koei Kiku😍! Anastasia green. It seems to be named after "Anastasia Green," the name of a European female chrysanthemum variety that is as spectacular as fireworks, named after the Greek word "Anastasia," which means "resurrected woman. After opening the bottle, it smells fresh and crisp, like muscatel and ruby grapefruit. When I pour it into a glass, it is slightly effervescent 🫧It has a nice sweetness in the mouth, like a Shine Muscat or clear green apple, with just the right amount of spiciness and astringency that I feel with white wine 🤣It is delicious 🥰I can see why everyone is raving about it 👍. I still have two more bottles of different Koei Kiku, I hope I can come across it again... Yum! Golden week was a black week 😭 busy at work💦. I felt like I went there after reading your travel, outings and sake repots! I felt like I drank 🤣. Nope! I was jealous😅.

Sake meter: -1.7, Acidity: 1.7 (reference) Fat bottle opened on 4/08 and posted on 4/23 Buy the label🤣I love these old-fashioned labels 😍. It has a gorgeous apple aroma, but it's not cloyingly fruity. It has a light acidity and a slight effervescence. It's more mellow and drinkable than fruity: ☺️ I tried it up to the 4th day, but the first day is by far the best 👆. Come to think of it, this was my first Oita sake 😅. Yum!!! I bought a replacement for the broken glass... same one 🤣 because you know... it's easy to use... I wanted to buy the piccolo glass you bought, but I gave up on it because I'm sure I'll break it at home 😅I won't be posting about the new glass for a while! 4/21. Spring is always a relaxing time, but work is busy💦. I'm busy with many tasks that cross over from one fiscal year to the next, and also with a big project that I've been working on since the first year 😅I wonder if I'll be able to take GW off... 😅 Made with Yamada-Nishiki Polishing ratio 60 Alcohol content 15 Sake meter - Acidity Fat bottle opened 4/11, posted 4/20 We got it again this year 😍Tomoten Surprisingly, I was able to get it assly and I even saw it another day... When I opened the bottle, I did it again this year... the moment I took the aluminum stopper off, the inner stopper skipped. The family who was eating was surprised 😳I was surprised too🤣. The aroma when opening the bottle is not fruity but rather sweet like a moderately scented kompeito sugar...same as last year! It still has a dry taste with a hint of astringency, but it's not unpleasant, in fact it's delicious! It's still delicious when you let it air in your mouth! This is the only way! In no time at all, I was mana-chi! It's hot through spring 💦. I still can't even run let alone play soccer because my right knee is less watery and I can't do deep bending 💦 but I play table tennis 🏓 with my kids and we sweat 😁. I need to buy some glass...

Limited edition, Tatsu Aikoku use (secret specs) Polishing ratio 55% (secret specification) Alcohol content: 15° to 16° C Sake meter - Acidity Fat: 4/5 (opened 4/12) This is a limited edition of Houou Mita, and it seems to be a test brew for the revival project of Aikoku, one of the three major Meiji varieties: Aikoku, Kame-no-o, and Jinriki. The first one is Tatsuru. I don't dislike Houou Mita, but as I prefer slightly spicy, I've been avoiding this sweeter brand a bit 😅But hey, test brew 🤩limited edition 🤩I had to buy it 🤩... The smell is like a grape type smell and then it goes away, for some reason I don't feel it anymore even after checking the smell many times 💦I wonder why 🤣 the second day was the same! Maybe my nose is getting used to it🤔. The taste is the same as Houou Mita, but it's clean 😳The aftertaste is sweet and spicy, and you can enjoy this smooth and spicy taste! Well, it must be mellow 😁. The second day after opening the bottle, there is no big change. On the 3rd day after opening the bottle, the taste is much calmer and the aroma is not as strong as expected 💦. It's delicious! The other day when I was in Funabashi for work, I was able to stop by Yajima Sake Shop 🤩 I bought 2 bottles of 5 different brands that I have never seen in a liquor store before and I am looking forward to opening the bottle 😍.

It's not a bad smell by any means, it's a very pleasant one 😁. When you put it in your mouth and let it air out, it tastes like Nikki, just like the lychee and the smell, and it is full-bodied! I think it's a taste that is hard to find! The second day is milder. The Nikki-like smell and taste seems much thinner It was a slightly dry sake and easy to drink♪ Delicious! Well, I don't need to explain anymore 🌸I feel the smell of grapes (Delaware) 🍇 and green apples 🍏. I thought it had a little more of a tangy taste than last year's. I also tried it at room temperature last year! It's still good at room temperature, which I also tried last year! I used to drink it a lot in my early 20s😅. Senju Manju was hard to find back then. It's been a long time since I've had nigori sake from Kubota! So I bought it! No lees dance when I opened the bottle. No energy... The smell is... it's hard to describe... well, sweetness is all over the place! In the mouth, it's 🤔 how can I describe it... I don't know how to describe it 🤔... but the more I expected it to be, the more disappointed I was 💦. I'd like to know how other people feel about it, so let's search for "sake-no-wa"! Maybe I'll buy some Senju next time and take my revenge on Kubota...

Nigori Sake - Super Ancient Method Additive-free yeast Wooden vat brewing Nama yeast 2023-2024 Nigori Domaine Sakura Kame-no-o 100% used Polishing ratio 90 Alcohol content 13%. Sake meter - Acidity Fat: The bottle was opened on 3/22 and the first bottles were bottled on 4/6. This sake seems to be made with a lot of care. The sake is very well made and has a very nice aroma. The aroma is a mix of Sengoku's unique sourness and sweet dobrokku aroma at the same time. When you put it in your mouth, you feel a pleasant gasiness and tingling sensation, and then the sweet sourness fills your mouth and recedes without leaving a lingering aftertaste 😳. This is awesome! The cheeses I paired this with were Gorgonzola and Pecorino Romano 🧀. The salty taste of the cukes went well with the sweet sake 🤩. Yum! On 4/6 Sat, I took a break from horse racing and went to see cherry blossoms with my family 🌸we go every year to a park where there used to be a horse race track ⛲The blossoms were only 6-7 minutes old but it's always a beautiful place (bottom 2 photos of the 4th photo) and the top 2 photos are of cherry trees along a canal in Kawasaki🌸they were in full bloom🌸I love this time of year😍I wish I didn't have hay fever If only I didn't have hay fever😅

Consecutive Submissions 🙏 Gagakuyo Hana Akari Koshi-tanrei rice is used Polishing ratio Alcohol content 14.5 Sake meter - Acidity Fat 3/16, opened 3/31 Long time no see Masayo 🤣 Utashirone Sake from Sado Island with unknown specs. When you open the bottle, you can hear a nice "shubob" sound 🎶Fine bubbles adhering to the glass when you pour it into a glass 🫧. The aroma is slightly Delaware🍇 and it has a cool and refreshing feeling. When you put it in your mouth, the tingling microbubbles dance on your tongue💃. But I think it lacks some characteristics 🤔I can hardly feel the deliciousness of the rice, and it is light and dry, although I can feel the sweetness at first! It doesn't have a lingering aftertaste, so it might go well with salty or fermented foods such as tempura and nuka-zuke (pickles). On the second day, the tingling sensation has calmed down and the sweetness and spiciness have become more elegant. I had high expectations for Masayo, but it wasn't good for me 💦I should have tried Mimuro Sugi Hana-kyun or Oze Yuki no Harusake 😅I went back the next week and they didn't have it 😭. The cheese I paired it with was mozzarella. It doesn't go well with anything else😅I'd rather have something salty rather than subdued cheese. I also won a few horses on 3/31 🥰. I bought more booze, but my family hawked it too 🤣.

Sake meter degree +8 Acidity 2.1 (reference) Fat: 3/12 (opened 3/31) The label is my favorite, Kingfisher of Kariho😘. It's a light nigori with a little lees 🤩. But I won't add it to the nigori sake series 😁. You can feel the sourness in the aroma after opening the bottle. As soon as you put it in your mouth and feel the fluffy freshness, the acidity comes rushing in with a "DON! It's not a bad sourness at all, but it's a deliciously spicy sourness, which is opposite to the sourness of Sengoku, and you can feel the firm sourness. Not only that, it also has a refreshing fragrance that spreads in the mouth. It is a cool, dry and dry sake with no sweetness 😍. Delicious! What is your favorite snack to eat with sake? Banshu Issen -Spring Shine Made with Yamadanishiki produced in the special A district of Yoshikawa Polishing ratio 55 Alcohol content 14 Sake meter - Acidity Fat: The bottle was opened on 3/10 and the bottle was opened on 3/31. I was curious about this sake since Pon-chan posted about it on 3/1, and I saw it at a liquor store and bought it immediately. The aroma after opening the bottle is not noticeable, but it has a pleasant sugar water aroma. That's a difficult expression😅. When you pour it into a glass, fine bubbles adhere to the glass! It's not so much shwashy, but it's very foamy! This pitchyness will become much weaker on the second day. When you put it in your mouth, wow... it's as good as ever! It tastes as good as ever! The sweetness increases instead of decreasing. It's a sake with interesting changes in flavor! Delicious! I actually injured my right knee during a soccer practice match that I returned to in mid-February 😥I was diagnosed with a nerve contusion and had to drain the water... yesterday was the third time 💉I still have blood in it so it will take a while for it to fully heal. The three brothers of the first tank (3) The last one is "SESAME The smallest of the three brothers. Domaine Sakura: 100% Yamadanishiki is used. Polishing ratio: 50% for koji rice, 60% for kake rice Alcohol content 14%. Sake meter - Acidity Fat: 3/4 opened, 3/26 submitted I've heard that it has a lot of miscellaneous flavors because it is squeezed at the end of the bottle, but every time I drink it, I hardly feel it! It has a fresh grape (similar to Delaware) fruitiness, and of course the acidity characteristic of Senkou is the strongest of the three, but it's not unpleasant at all. It is moderately spicy 😘. The "Nakadori" is also delicious, but the "Seste" is the most Japanese sake of the three, easy to drink and delicious, and the "Arabashiri" contains a lot of lees, so you can enjoy its freshness while it's still shrieking! Yum! I think I will finish these 3 bottles this year 😱. It's one of my favorite seasonal Sentori series so I'm not disappointed 😭 I paired this sake with a semi-hard type of mozzarella cheese 🧀 🤩 The mozzarella itself is not very assertive, so for better or worse, they respect each other and went better together than I expected👍
