Senkori Hatsu Tank Araubashiri Modern Edo-bari Version Made from 100% Yamadanishiki produced in Sakura City, Tochigi Prefecture 　100% Yamadanishiki produced in Sakura City, Tochigi Prefecture Polishing ratio: undisclosed Alcohol content 13% (undiluted) Sake level Acidity Fat: Opened on 1/29/2012 and bottled on 2/10/2012 This is the second of the three brothers of the newly remodeled first tank! Araubari The smell after opening the bottle is...well...smell of boiled soybeans...😅I poured it into a glass and turned the glass around to feel the smell exactly. There's a faint grape aroma mixed with the smell of boiled soybeans😅may be a miscellaneous aroma🤔. When I pour it into a glass, it's slightly effervescent 🫧It's thin and cloudy white⚪️When I mix it lightly, it becomes cloudy⚪️(The picture is not mixed)In the mouth, I can feel Sengkyo's characteristic sourness up front, but the lactic acid drink taste that is often found in nigori is quite moderate and the miscellaneous taste that is not like Sengkyo makes an interesting taste 😁. Yes, I'll try heating it up! Let's try heating it up. I tried warming it up... not recommended 🤣. It became easier to drink once the temperature dropped below human skin 👍 Well, that's how it's done 😊. Yum!

We were wondering why we couldn't get all three... I got the Araubashiri and now I have all three of the first tanks. SOME is the last sake to be pressed and is said to have the smallest amount of sake and a lot of impurities. The aroma after opening the bottle is like Senkou 🥰 It's really consistent! When you put it in your mouth, it is very sharp, which is different from the aroma! The sharp acidity comes rushing in! A hint of sweetness makes it seem fresher. There is no cloying taste, but you can feel the lingering aftertaste a little longer. When you put it in your mouth and let it air out, it really opens up the flavor😍Try this with a sour sake such as Senkou, it will double the flavor.... Yum!

Senkori Tachiharu Asa Shibori Junmai Ginjo Nama Genjyo Made with domestic rice Polishing ratio 60 Alcohol content 13%. Sake meter degree - Acidity Fat bottle opened 2/5, posted 2/6 The season of Risshun Asashimusubi has come again this year! This is the fifth year in a row that I have received Senkyoku's Risshun Asashibori! There are 4 sakes that I haven't posted yet, but I have to mention this one 😘. After opening the bottle, the aroma is slightly grapey 🍇 with a nice Delaware aroma! On the palate, oh wow! It's super fresh😍I don't feel any alcohol or tingling sensation at all 😅The taste in the mouth is also Delaware 😅Last year's Risshun Asa Shibori also tasted like Delaware. The aftertaste is a little dry, but the freshness is more than enough and the aroma through the nose is very fresh 😍. I am impressed with how well it can be brewed in time for Risshun! The color of the bottle this year is dark brown! I wonder if they alternate the color with green every year🤔It's fun to find the differences in the bottle and label as well as the flavor. Yum! Calf separation 😱 sore after upping the intensity on Tuesday's run...

Sake meter degree: +5, Acidity: 1.3 Fat drinking 1/24/2012, posted 2/4/2012 Late New Year's party with soccer friends of the same age 🎍. And it started at 9 pm😅. We went to a pub in the nearest station. I was curious to know if they have old Dewazakura sake! I was so curious that I ordered it... I can feel the aroma of aging peculiar to old sake! It's soft and rich 🤩. I got it cold, but I would have liked to drink it warmed! I think the aroma would blossom. I should have had another glass 😅. Yum!

Toyokoh Junmai Ginjo Oorigarami Unfiltered raw sake 100% Toyonishiki produced in Nagano Prefecture Polishing ratio 59 Alcohol content 16%. Sake meter degree +1, Acidity 1.2 (reference) Fat bottle opened 1/20, posted 1/31 R6. Toyokami encountered in December. I told the liquor store where I bought it that it was delicious, and they said they have a junmai ginjo oorigarami of the unfiltered, unpasteurized sake 😍. I had no choice but to buy it! When I opened the bottle, I could smell the aroma of grains! The rich rice flavor and aroma spreads in the mouth 😍And the aroma that rolls around in the mouth and goes into the nose is mellow 🤔Mellow gives a heavy image, but this is rather light 🤔The lingering aftertaste is sharp, so it goes well with a meal 👍. It is a sake to be savored gradually 😘. It's so good! January of 2025 has come to an end already..............................haya ina! I still have 3 more repos of the sakes I drank this month💦. I have the repos written, but I'll update them as they come in 😁. The running & dashing continues👍 I went for another solid run after I got home today 🏃💨.

Hanaizumi Sekko-Oké direct-filling Junmai Unfiltered Nama Sake Gohyakumangoku Yumeko and Yondan rice Himenomochi used Polishing ratio 65 Alcohol content 17 Sake meter - Acidity Fat bottle opened 1/18, posted 1/30 The "Age Oke" is a tank that receives the sake that flows from the "Yabuta", the machine used to press the sake. It is a raw sake made by directly bottling only the mellow and fresh sake from the top clear part of the new sake that has accumulated in the raised vat. The aroma after opening the bottle is quite mellow 😚 In the mouth, you can taste the deep flavor of Delaware with a lot of gas and a touch of petitiveness 🍇 It has a sweet flavor at first, but then you can smell and taste as if it was brewed in a cedar barrel. The aftertaste is spicy and you can feel the freshness of unfiltered unpasteurized sake and the delicious richness of the rice. The owner of the sake shop advised me to try it heated! It has a sweeter and more gorgeous flavor, but the high alcohol content may also give it a bit of a zing 😁. It was a good encounter 😘. Delicious! Horseback riding on 1/25,26 I couldn't have a horse show because I was busy both days, but I won a big one in the race I was aiming for and I'm happy 💴.

Yuki-Onna) Domestic rice variety SECRET Polishing ratio SECRET Alcohol content: 14.5° C (undiluted) Sake degree - Acidity 　Active nigori Corked 1/15, posted 1/28 Finally met ❄Yuki Onna-san! When opening the bottle, it was ponk🎉 and cheerful! Champagne? The cork popped 🤯 and at the same time the automatic stirring started and I corked it with my palm in a hurry 🤣. While stirring, lees were flying up in the bottle like snow and it was so beautiful😍It really looked like snow was flying around ☃️ After opening the bottle, the aroma was of milky muscat 🍇 and in the mouth...hmmm? Melon? The aroma is young, like an Andes melon with a moderate fragrance. I also feel sweetness, but the aftertaste or aftertaste is a bit bitter or spicy, and finally disappears with a "sweet and sour" taste🤩. Oh! That's amazing! This must be the umami derived from rice. I felt like it was playing "strange balance" in praise 😘. Also, you can see the schwarziness in the picture 😁. After the second day, the sweetness was moreish 🤩. Yum!

Mimuro Sugi Junmai Ginjo Yamadanishiki Unfiltered raw sake orikagarami Getchu following last year 😘. I was tired and came home late at night, and when I opened the bottle after dinner, the cork hit the ceiling. The cork hit the ceiling and my wife who was standing beside me was also surprised 😳. You can see the schwash when you look at the picture 🫧. No more words are needed! This sake is more dry than sweet, and has the umami of rice and a light lactic acid drink taste like a Japanese sake even among orikara-mi sake. Ahhhh, it's delicious! I can't deny that I'm stressed from work and caring for my family, but for the first time in a long time, I've killed sake in a blink of an eye 🤣. Because...it's so good 🤣! I want to drink Namimuro cedar ogara-mi again next year! Delicious! I mentioned in my last check-in that I had resumed running during the week, but on Saturday night (1/25) I went to a practice game for ⚽️, a local soccer team that I always participate in. ⚽️ I always get moving when I'm moving 👍I was forced to run 3 x 15 mins and 1 x 20 mins, but it was fun 😍. Proverb. Playing soccer is several times more fun than watching it🤣. [Addendum I always get interrupted by my kids when I try to take a picture of them drinking 🤣I have a lot more stupid face pictures that I'm collecting 🥰.

Jyuseki Shuku Junmai Ginjo 100% Celebration from Kyoto Prefecture 　Using Kyo-no-Koto yeast Polishing ratio 60 Alcohol content 16%. Sake meter degree: ±0 Acidity: 1.8 Fat 1/12 The bottle was opened on 1/24 I've been reading your check-ins at Sake-no-Wa and this is the first time I've had this sake. I finally came across it 😍. And it's a "celebration"! After opening the bottle, it smells like a faint fruity scent...hmmm 🤔 not full of honey, but more like a ripe apple 🍎! Pour it into a glass and it has a slight golden color, you can't tell from the picture 😅. When you put it in your mouth, wow... what is this? What's this 🤩Fruitiness and graininess come rushing in at the same time! It's a little dry on the tongue with just the right amount of umami and acidity, just when you think it feels soft. The lingering aftertaste is of apple aroma, followed by a solid sense of weight from the grain! It is massive but never heavy, it is massive with a sense of deliciousness 😘. Yum! It seems to be in good spirits since New Year's Day... As you can see in the picture, it's so cloudy that you can't even see the snake's eyes! The aroma is a light and elegant Delaware 🍇. It's a bit of a sizzle in the mouth 🫧. As soon as you feel the spiciness, which is more like a refreshing white wine than sweetness, you will feel the taste of the wine and it will be overturned. It is my favorite smell 😘. When poured into a glass, there are a few air bubbles on it 🫧. In the mouth it is soft and mellow from OMACHI, but still has the delicious sourness of SENKYO 🤩. This is what it's all about, isn't it? The sourness of Sentori is 🤩. It goes down the throat, leaving a pleasant aftertaste with a hint of spiciness 🤩. I can't say anything else! Sake meter - Acidity Fat: 12/23 (bottle opened 12/31) All the brewery staff were involved in the design and planning of this sake! It is important to create something new while cherishing the good old things in any industry! After pouring, it arrives lightly in the glass with a slight bubbly 🫧 aroma of fruity, dark grapes 🍇. As soon as you put it in your mouth, you can feel the slight bubbles! Amaaaaaaaazing! It tastes like a combination of Fanta Grape with bitter lemon and grenfre 😁It tastes sweet at first, but gradually it runs away from the moderate bitterness, leaving a pleasant aftertaste. It's a little lemony, citrusy, bitter aftertaste that lingers a little longer. However, it is easy to drink with its 13% alcohol content, so you can drink it in gulps 😘. Nice work, Kaze no Mori! When I drank the supernatant first, it tasted like a pear, but it also had a pungent or strange taste... When I drank it after mixing the lees... 🤔I knew it was quite different from last year... Smell is like thin honey 🐝I can say it is a thick sugar water... 😁It also smells a little like alcohol. In the mouth, you feel a sweet honey-like sweetness at first, but the basic taste is clean and refreshing Then it suddenly develops! Sake level Acidity Fat 12/6, opened 12/17 This is a sake made from rice rice, not sake rice! I thought I never heard of it, but it's not sake rice, it's rice rice. The aroma after opening the bottle is a bit like Senkou? The aroma after opening the bottle is a little like Sentori! You can feel the acidity from the aroma. When you pour it into a glass, it has a light bubbly taste. The color is a light golden hue, and the rice polishing ratio of 80% is convincing.
