Hatsu Shibori New Sake Orikarami Junmai Unfiltered Nama Sake 100% Takananishiki produced in Nagano Prefecture Polishing ratio 70%. Alcohol content 15%. Sake meter degree +1, Acidity 1.3 (reference) Fat 12/3 (bottle opened 12/25) Toyooka is one of the best cospa! It's really helpful for the pocketbook husband 😘. Slightly effervescent 🫧 with a bit of non-arrival when poured into a glass. After opening the bottle, there is no assertive smell, but you can smell a thin white grape-like aroma and the scent of sake rice 🙂 There was also a slight alcohol taste! In the mouth, you can feel a little gas, and the deliciousness of the sake rice spreads out in a flash, and you can enjoy a thin grape (Delaware) like aroma 😘. The alcohol content is not so low, so if you like sweet and tasty sake, please visit ❓️, but I think it is beautifully made with a rice polishing ratio of 70%, which is hard to believe. Overall, there is no sense of being stuck, and the five tastes of sweetness, acidity, astringency, spiciness, and bitterness are in harmony 😚. I don't think it tastes like a bad taste. I would classify it as slightly dry. It's delicious! I forgot to take a picture of the top of the glass with the snake eyes on it😅

Sake meter degree -10, acidity 1.5 (reference) Fat bottle opened 11/29, posted 12/25 MaryChristmas🎅🎄🎄 I drank this sake a month ago 😅 It's been a long time since I've had a bottle of St. 🤩The material of the label on the bottle gives it a luxurious feel. The smell after opening the bottle is a sweet smell! It's like sugar candy like cotton candy! When poured into a glass, fine air bubbles stick to the glass. When you put it in your mouth, it's like cotton candy, sweet! But there is also a slight orangey acidity 🍊 There is also a light gassy sensation! This is... sweet... very sweet to me! I felt it was too sweet, so I warmed it up a bit and I liked it better than cold 😅. Yum!

Sake meter - Acidity Fat: Opened on 11/25 and bottled on 12/16 Bunraku Reborn I was so worried when I was choosing 😅I chose the sake recommended by the owner of the liquor store! The aroma after opening the bottle is refreshing! It smells like pears! As you put it in your mouth, you are enveloped by the slight effervescence and bright citrus acidity that is typical of REBORN 😊. The taste is still reminiscent of pears! The sharp acidity makes it fresh, but the lees makes it full-bodied. To put it simply, it is fresh and light! In short, it is fresh and light, but with the flavor of rice on top 😘. Delicious! Winter Nigori Sake I got my two favorite Sentori Yukidaruma and Hirotogawa 😘I can't wait to try them 😍. Especially the Hirotogawa, it's been 2 years since I've had it so I'm going to savor it slowly and enjoy the change in taste...

Hanamup Junmai Daiginjo Yamadanishiki I was able to buy it for the first time in 2 years 🤩. I got it at the last minute this time too😅. I feel like I'm doomed 😘. Please refer to the repo as my impression is exactly the same as 2 years ago 🙏. Well, it's delicious, as you all know. I think the spiciness like alcohol feeling at the beginning is the reason why it is popular among the experts 😊. If you like sweetness, you should also try it 🙏. The trick to enjoy it is the change of taste on the 2nd and 3rd day 😁. Yum! It's been 2.5 years since my surgery. Although life is normal, there are a few hardships that I don't show everyone😅but I don't know if it's scary or good to get used to it, but one thing I feel keenly is the decline of my immune system💦maybe it's because I'm old🤣. I've been feeling sick since last Tuesday and I've been sick since Wednesday... I slept through Thursday, Friday, Saturday, and Sunday and managed to work until today, Thursday, but I can't seem to get better 😭I used to get better if I exercised, ate lots of food, and slept even if I had a cold before 😅. I'm thinking again how important it is to be healthy 😁. Flu and colds are going around. Many people on the train are coughing too! Please be careful everyone! Amami New Sake Nigori Nama Junmai Ginjo Made with domestic rice Polishing ratio 60 Alcohol content 15 Sake meter degree - Acidity Fat bottle opened 11/19, posted 12/3 Winter limited edition, commonly known as "Yukiten". I think they used to call it "White Heaven" or "Blue Heaven" 😅... The smell after opening the bottle is a grape type 🍇 white grape or something 🤔 it's a fresh smell. Chilliness in the mouth at first. I feel freshness with fine micro bubbles and carbon dioxide gas. I felt the coolness was stronger than the silky feeling that is often found in Nigori. I felt a little bitterness in the aftertaste, but I didn't mind it after I chilled it well. I tried it up to the 3rd day, and it became very mellow as the slight bubbles disappeared, so if you have a bottle of this sake that hasn't been opened yet, I recommend you give it a try 😊. It's different from the Yukiten I had last year 😳 Last year it was silky and had a strong yogurt taste. It's interesting to see how different these flavors are from year to year😍. Yum!!!

Sake meter degree -1 Acidity 1.5 (reference) Fat bottle opened 11/16, posted 11/28 Denchu Denchu Denchu Denchu 😘. I couldn't help repeating it in my brain when I found it in a liquor store on my expedition 🤣. Yes, it's Tasake... 😅 Because you know...this is the first time I was able to get Tasake seasonal sake 😚. The aroma after opening the bottle is banana🍌. It also has a slight lychee flavor. On the palate, unlike the aroma, it's young young apple 🍎 green apple🍏 🤔. It's accompanied by an amino acid-like acidity, and after the umami taste, the spiciness gradually increases and the aftertaste is quite spicy and runs through! Oh, wow! It's different from other tazake I've had 😳I read in some liquor store's report that it's "transparent" but it's not transparent... I think it's more of a complex flavor! This is an interesting sake! You may or may not like it 😅 I'm... It's good... I got off work early on Tuesday, so I bought some horse mackerels and went home and made some namero 🐟️ I gave it to my 5th grade son who was watching the process of making it and he ate half of it 😅. Clouds zaag zaag in the mountains Special Junmai Sake 100% Gin-no-Yume produced in Kochi Prefecture Polishing ratio 60 Alcohol content: 14% (undiluted) Sake meter - Acidity Fat: The bottle was opened on November 12 and bottled on November 26. Unfamiliar sake Kawazawa Sake Brewery in Kochi is another sake brewery you may not have heard of. The name "Zaaguzaagu" is said to represent the sound of walking on the frozen snow made by the severe cold winds blowing from the mountains. After opening the bottle, there is a faint scent of grapes and white wine. When you put it in your mouth...hmmm? Sweet? Dry? Taste of rice? It is very light! Very light impression. You feel the deliciousness of the rice and fresh sweetness, and then it finishes with a pleasant dryness. The freshness, the deliciousness of the rice, the sweetness, the spiciness, the acidity, and the slight astringency all coexist to create a perfect balance. The taste may be different from white wine or Delaware depending on the person who drinks it 🤔I think it is a sake for different tastes 😅.... Overall, I would describe it as a light, fresh, complex, yet well-balanced sake! I guess 😁. I think it's more complex when you let it air in your mouth! I hope you give it a try 🤩. Yum!

Tamitsu Kitanoshizuku Junmai Ginjyo, bottle hi-iru 100% Kitashizuku from Hokkaido, Japan Polishing ratio 55 Alcohol content 15%. Sake meter - Acidity Fat bottle opened 11/6, posted 11/25 This Tamitsu is a sake that was shipped in small quantities on a trial basis. The liquor store where I visited said the same thing 😅. I've never seen it before, right? I have nothing but high expectations for Tamitsu after a long time 👍. The smell after opening the bottle is fruity, but the mouthfeel is also sweet rather than fruity, and it tastes like panna cotta or nata de coco? Or nata de coco? The taste in the mouth is clean, light and refreshing, but you can taste the gentle umami until the aftertaste. Delicious! I was also impressed by the fact that it tasted a little light and not like a Tamitsu 🤔. When I went to the liquor store where I bought it the other day and had a chat with the owner, I told him that it was difficult to melt the sake rice the way I wanted, so it was made light. I see...it's fun and educational to talk about sake with a professional like this 🤩I'm sure I'll learn a lot from talking to him again😘.

Sake meter degree +3.9 Acidity 1.5 Fat 11/3 (bottle opened 11/19) Ryoseki Shuzo's Hana Yuu or Suitama is one of my favorite breweries. ☝️ This is the first "back" Suitama I have come across 🤩. I have nothing but high expectations! I read the concept of this sake and read articles and reports that it is "dry with a mellow aroma and umami flavor", but was it really...? The aroma after opening the bottle is very fruity😍I thought it would taste more like honeyed apples than melon🍈 on the palate, but then the spiciness gradually rushes in 🤩 of course the aftertaste goes from deliciously spicy to sharp! The aftertaste was also apple and green apple-like! I think the taste is not rich and mellow, but light and dry, with umami and dryness coexisting in the same taste. Della is so good 😍! The regular Suitama is delicious, but the Ura-Suitama is also delicious! That's what I'm talking about, Ryoseki Shuzo 😘. Yoko Doronuma Yogurt is used Rice polishing ratio Alcohol content 5 Sake degree - Acidity Fat: The bottle was opened on Nov. 1 and submitted on Nov. 17. Tatenokawa Shuzo offers a variety of liqueurs with sake in them. I was interested in "Yoko" among the many fruit liqueurs such as Greffles 😁. The sales lady let me try all of these liqueurs and Tatenokawa's limited editions, so on my way home on an empty stomach, I was soon tipsy 🥴. This Doronuma Yoko was a limited edition Yoko's liqueur and had an interesting flavor, so I bought it 😦. The sales lady got me 🤣. The smell and taste is just like yogurt! It's all there is to it, but it was interesting to get a hint of the sake in the flavor 😍. The alcohol content is 5 degrees, so it's really fat. It was delicious with salty cheeses like gorgonzola 😘. Yum! First horse post in a while 😁. Tokyo 9R on Sunday I picked up the 13th most popular horse in a field of 14, Glenoaks, and it paid a huge dividend 👍.

Suizuan Junmai Ginjo Unfiltered Nama Sake Limited edition 100% Gohyakumangoku Polishing ratio 60 Alcohol content 15%. Sake meter -4.0, Acidity 1.4 (reference) Fat bottle opened 10/16, posted 11/9 I met this Suizuan at Takashimaya. It is the first sake from Gifu that I have ever known. I was overwhelmed by the bright blue color and massive kanji label and picked it up😅. When I opened the bottle, I couldn't detect any particular aroma. When I put it in my mouth, it first has a lot of gas and acidity! The sourness is different from that of Senkou and a bit unique😅. As the label says, it tastes like melon! The acidity also seems to be citrusy! Delicious! I went to Sushi Kagura for lunch when I was in Kannai for work 🍣The lunch menu includes sushi and seafood bowls at reasonable prices, but the best part is that this restaurant has a huge selection of Sake 😳The picture is only a part of it! The all-you-can-drink policy doesn't include the rare sake, but it's still great. I promised my subordinate that we'll go there next time, and then I went back to the office. It's also interesting that the store is located in an inconspicuous place 🤣.

It has a freshness like green apple or pear. When you put it in your mouth, the fresh fruitiness spreads in your mouth just like the aroma, and then the refreshing sweet and sour taste follows. Wow! Takachiyo Halloween Custommade Houjun-mujin Junmai Daiginjo Unfiltered Nama-shu I still have a few bottles of sake that I haven't posted yet... I'll have to open a bottle today on this day and drink it to check in 😘. Halloween is almost never associated with the Kozo family 🎃. I used to go around my friend's house when my kids were in kindergarten 😅 I miss it... The smell after opening the bottle is lychee! It is exactly lychee! But it smells a little like a light mint. In the mouth, a wave of lychee is coming in from the gassy pizzazz 🌊. The citrus bitterness (or grefleur bitterness 🤔) is a nice accent, and the rice flavor and yogurt flavor that is often found in orikara is only slightly noticeable 🤔. Of course, the sweetness of Takachiyo is still there, but this sake is a little less sweet! But for me, a lover of spicy and sour tastes, I'm like, "Sweet!" 🤣 I tried it with gorgonzola as a side dish... Oh! The first aroma after opening the bottle is melon 🍈, a fresh aroma like muskmelon 🍈, and the fresh melon aroma spreads in the mouth, but it is not light and the taste is concentrated and fresh 🤩. The lingering taste is lightly acidic and finishes with a sharp finish! Dew leaves wind has a powerful acidity taste 😘This is delicious! But... there was a noticeable change in taste on the second and third day 😥 This is a pity, and the spiciness that was not felt on the first day is gradually increasing, which is a negative evaluation: ⤵️ The taste on the first day is quite good! So after opening the bottle, please manaach it 😘. Yum!!!

10/12 Sunday. Stopped by Ginjo Tuna on the way back from Tokyo Racecourse where I went with my horse racing and drinking friends. Great place to pour your own 😘. Checked in to Aizu Nakasyo, which I had never had before! (1) Bakuren super dry The aroma doesn't stand up. As soon as you feel the light sweetness in your mouth, it's not so much super dry as refreshingly dry😍The aftertaste runs through you shortly after you feel it! (2) Takachidai Dry Junmai Sake Miyamanishiki The light ginjo aroma also conveys freshness from the aroma! You can feel the deliciousness of the rice more than the bakuren! (3) Ou boast 14C (juicy) It's juicy! Juicy 🤣! Light sweet! Like sugar water! 4) Hanaboe Yamahai Aki-agari The aroma is juicy and sweetness is felt from the aroma and the rice aroma is also felt in the followings! (5) Daimine 3 grains Hiya Oroshi Yamadanishiki Namazume I've gradually become lax in my notes on what I've had 😅. Yum!!! Because 🤣. (6) Aizu Nakasyo Junmai-shu Wow, it's delicious!
