Sasasamune Special Junmai Hatsushibori Nama-shu 720ml Rice used: Kitakata-produced Yumeko Rice polishing ratio: 60 Alcohol content: 15%. Taken at Tazuru-san. They said that this year's rice was hard to melt, but they recommended this one, saying it had a mild fruity finish. The mellow fruity taste spreads after a clear and refreshing mouthfeel! Delicious 😋.

Takeba Activated Nigori Sake 720ml 100% Noto rice Contract farmer: Yumeurara Corporation (Shiga Town, Ishikawa Prefecture) Rice polishing ratio 67 Alcohol content 18 Takeba Activated Nigori Sake: ✌️ First, the supernatant. It is quite dry and shrieky. Next, I mixed it a little and sipped it fluffy like Hakuun's ☁️. Oh? The sweetness increases at once. The last mellow part is for the second day. Active nigori is fun 😋.

AMAMI Junmai Ginjyo Shinshu Nama-zake 720ml Rice polishing ratio: 60 Alcohol content: 15%. This day was a combination of the second day of Hokian Okuni and Tenbi Shinshu. The sweetness of the Hokian Okuni opened up on the second day. The Tenmei is clear, clean, and clean, and is quite the opposite of Beian Daiguo. The good points of each sake stood out even more, making for an interesting comparison. Now, what should we pair it with tonight?

Hokian Okuni Shiboritate Nama-nama-shu 720ml Rice polishing ratio 70%. Alcohol content 19%. We went to the Kitaan Okuni brewery's direct sales area. There was a limited edition sake called "Totteoki" that is not normally distributed, but this time I went for the new sake Shiboritate. I opened the bottle as soon as I got home. What's that? Maybe it is less sweet than usual. Yesterday, on the way from Nagano to Hakuba, I decided to stop by the brewery's store and took the road to Omachi and went up the mountain. Gradually, the road surface became icy in the shade. The road surface was completely frozen on the way up the mountain. Even with studless tires, it was impossible. We chose the road down to Lake Kisaki on the right. However, the road was so narrow that cars could not pass each other on the way down, and it was frozen and slippery in the shade, so we went down praying that no oncoming cars would come. I was relieved when I saw the national highway. If you follow the navigation system, you will be forced to go over the mountain without any problems, so be careful in winter. Takizawa Tokusozakura Shiboritate Limited Nama-shu 720ml Rice: 100% Hitogochiki Rice polishing ratio 59 Alcohol content 17 The price is 1,190 yen including tax! We took it to Hara-san on Friday and opened the bottle for a nightcap. On Saturday we had miso, amazake and 4 bottles of sake 🍶! But the morning in Ueda was cold 😨 minus 4 degrees. I left the towels I used at the onsen in the car on the back seat and they were frozen. I don't need a cooler box at night 🧰. On Saturday, we stopped at two liquor stores in Ueda, Chikuma, Nagano, Omachi, and Hakuba before heading home. I will refrain from liquor stores for a while😅.

YOKOYAMA Jungin Super Spicy 7 [Nama Rice type: Yamadanishiki Rice Polishing Ratio : Koji rice=50% Kake rice=55 Alcohol percentage: 15 This is a new Yokoyama sake, opened yesterday, but the Yamadanishiki rice is new, so it is said to be from 2024. Chilli chilli, spicy, fruity and delicious 😋. By the way, today I just wandered up to Ueda 😀. I brought along two new sake from Takizawa, Kinkame, Genmai Miyamanishiki, Kame no Kai Arabashiri, and Tsukiyoshi 😉. We soaked in Bessho onsen and had mini katsudon and chuka soba at Yoshimi Shokudo in Ueda 😋. It wasn't mini at all😅. Tomorrow I hope to be around Beian Daikoku and Daisetsugakei ✌️

Nitoshi - Newly Shiboritate Junmai Yamadanishiki 65 Nama-zake 720ml Rice used: 100% Yamadanishiki Rice polishing ratio: 65 Alcohol content: 15%. When it is poured into a glass, there are bubbles. On the first day, there was not much sweetness, but on the second day, the bottle opened with a sip and the sweetness opened up all at once! Crisp, sweet, and indescribably delicious 😋.

Koshi Honjozo Shiboritate Nama 720ml Rice used : Yuzukogane Rice polishing ratio : 70 Alcohol content : 18 We are very happy to have this new rice and new sake Honjozo Nama-no-Harazake at a reasonable price of 1,540 yen. It is fresh, but not rough and well-balanced 😋. The third picture is the one I brought with me yesterday after putting some refrigerant in a cooler box to replenish my stock at home. The ones we were looking for, Toku Junsei, New Moon and Hirotogawa Nigori, were sold out 😭. But some of them made it just in time and we had more to look forward to 🥰. I went home and put them in the fridge so my wife wouldn't find them 😅. The fridge is already waiting for an empty seat 🥲. Fridge problem is tough this month 🤔

Shangiku Denshokiku Junmai Daiginjo Yamadanishiki 50 Unfiltered Nama-shu 1,800ml Rice : Yamadanishiki Rice polishing ratio : 50 Alcohol content : 15%. I opened the bottle after returning home from Miyazaki. It has a light chili sensation, and the umami flavor soaks through. It will heal the tiredness of a long trip. At the Miyazaki airport store, there were Sentoku and Hatsumigoyo. I wondered if I should bring Hatsumigayo with me, but it was 2,800 yen for a 4-pack of Junmai Ginjo 🤔. I decided to try it another time 😅. The 4th one is Kamaage Udon Orita Trees, Main Store, Kamaage Udon with egg 😋.

AKABU Junmai NEWBORN 720ml Rice used: Iwate rice Rice polishing ratio 60 Alcohol content 15%. We chose AKABU NEWBORN again. Fresh, delicate, and delicious 😋. I think there were a few bottles left. UA Snowman was just in stock. I also brought Sentoku with me, but I'm taking it home 😄. The third one is Kiccho Udon, Tachibanadori, burdock udon 😀.

WAKANAMI Junmai Ginjo 720ml Rice polishing ratio 55 Alcohol 16%. At Tomo-chan, we had Kibiki Blue. The owner is a fisherman, and when he catches bonito, it appears at the restaurant. I was lucky because I did not see him the last time I visited. We walked back to the inn, feeling completely tipsy. In the dining room of the inn, I opened a bottle of Wakanami Junmai Ginjo. It was a fun party with other guests of the inn, surfers🏄, and self-sufficient farmers from 🧑‍🌾 😆.

Wakanami Junmai-shu 720ml Rice polishing ratio 65 Alcohol 15%. On this day, we went to Tomochan in Aoshima. Chicken momo yaki, chicken nanban, bonito sashimi, etc. Before going to the restaurant, I opened a bottle of Wakanami Junmai-shu at the inn. It soaks through as an aperitif. With all the momentum, we headed to Tomochan. The chicken nanban was served with just three slices because there were three of us. The attention to detail was wonderful. Moreover, the inside was rare. Everyone was very satisfied with the delicious dish 😊.

HIROKI Junmai Ginjo Black Label 720ml Rice / Polishing ratio: 40% Koji rice, 50% Kake rice Alcohol content 16%. We were asked to purchase another bottle of HIROKI for at least 2,500 yen. He said it was fine since he had three other bottles with him. The delicate balance of the taste is indescribable, and I think everyone will be captivated by it. It's amazing how many liquor stores have such a lineup of sake on display 🥰.

HOYOBAI Junmai Shiboritate Unfiltered Nama-shu 720ml Rice ... 100% Hanabukiyuki produced in Fujishiro, Hirosaki City Rice polishing ratio ... (Koji) 55%, (Kake) 60 Alcohol content ... 16%. We visited Hidaka, a sake shop in Miyazaki City. This month's recommendation was a set of Katsuma and Manjusen. I received the recommendation, but since it was from Toyama😅. But the lineup in the fridge is amazing ‼️ We had a hard time deciding which 4 bottles to bring! After returning to the inn, we started with Toyobai. It was fruity but also umami, as expected of such a popular sake, it had to be good, right?

Torachiyo Junmai-shu 1,800ml Rice used: Domestic rice Rice polishing ratio: 78 Alcohol content: 14%. We were lured by the comment that this sake is good for refreshing everyday drinking, and it was priced at 1,782 yen including tax. Upon further investigation, it seems to be a sake produced and re-branded by a company called Transit. Since I had had Akabu Newborn the day before, it tasted a bit bland and had a slight hiney aroma. I held out until about halfway through the meal, but gave it to the hostess of the inn for use as a cooking sake. The fourth picture is gobo-ten udon from Onitama Udon.

Daigo no Kai 16 Chiketsuru Junmai Rice used: Hachitan-Nishiki Polishing ratio 70%. Alcohol content 15 This sake is probably the last one. This time we got many recommendations from the restaurant. I wish I had left it to them earlier. When I choose my own sake, I tend to choose only my favorites. I also met some sake that I didn't know about, so it's fun to be a part of the fun 😆.
