Gozenshu: Togai Omachi 50 Nama 720ml Rice used: Omachi rice from Okayama Prefecture (out-of-spec rice used) Rice polishing ratio: 50 Alcohol content: 16%. This is the second bottle purchased at Seven Tsudanuma and Kinni-shoji. On this day, I went to an izakaya with my classmates, but before that, I opened a bottle with my friend at the hotel. My friend who taught me Isohajime and Tasake ten years ago said, "I don't drink much sake these days. I asked him to try it because there is a wider range of sake nowadays. He highly praised the sake, saying it was tart and light sweet, and that it was delicious. The all-you-can-drink sake at the izakaya afterward was Hakkaisan. A little too much to drink 😓.

Kangiku Matsuo boasts Limited Shiboritate Unfiltered Nama-shu Junmai Ginjo Remake Rice polishing ratio : 55 Alcohol content : 15%. I went to 7-Eleven Tsudanuma and Kinni-shoji. There was a full lineup of Saku, Kaze no Mori, and almost all of them. I was able to see the full lineup of Saku, Kaze no Mori, and Kaze no Mori. I spent a while admiring them 😄. I didn't hesitate because I had already decided which sake I wanted to buy. It was not as gorgeous as usual, but it was very slightly effervescent. It was a good sake, not too much to drink 🍶.

Itaru Junmai Activated Nigori Nama Sake 720ml Rice polishing ratio 60 Alcohol 15%. This sake is probably one of the best 3 active nigori sake we have had this season, it is that good 🍶. The bottle was of course opened in a bowl 🥣. It was opened and closed about 5 times, it is a very energetic sake. The ori shimmers like a cloud😃. The sizzle lasts a long time in the bowl. The dryness is slightly fruity with a firm flavor, this is delicious 😋. Last Sunday, when I bought 3 bottles of sake requested by a staff member at work, I took the last one home with me. I had to chase them down 🤣.

Oze no Yukidoke Junmai Daiginjo Peach Color Nigori Nama Shu 1800ml Alcohol content: 10 Rice polishing ratio: 50 The April Hanpukai. No red yeast malt or red yeast derived ingredients are used, says the rice on the back label😄. Sweet and sour and low in alcohol😄. I paired it with donk bucket and mozzarella cheese 😉. There was a time for red wine, bucket and cheese on the weekend, but it was fun to pair it with sake 😋.

Kame no Kai Haruura Junmai Ginjo Light Nigori Nama 720ml Rice: Hitogochiki (Nagano Prefecture) Rice polishing ratio 59 Alcohol content: 16%. We got this from a liquor store in Chikuma. It was very popular and the shelves were empty. So, let's open the bottle. It's shimmering white like dry ice in the mouth of the bottle. Nice aroma 😃. What's that? It's completely different from yesterday's clear sake, it's not glamorous at all, rather it has a delicate taste more like Shinshu Kamerei 😍. Delicious 😋.

Kame no Kai Haruura Junmai Ginjo Nama 720ml Rice used: Hitogochiki (Nagano Prefecture) Rice polishing ratio 59 Alcohol content 17%. There are two kinds of Haruurara. One is a clear sake and the other is a light nigorigo sake. The first bottle was opened. A little gorgeous and fruity, delicious 😋. The second glass was a Shinshu Kamerei and 🐢🐢🐢 We compared them 🐢🐢. As I said, this one is more gorgeous😄.

Shinshu Kamerei Junmai Ginjo Yamae Nishiki Unfiltered Nama-shu 720ml Rice polishing ratio 55 Alcohol content 15%. The bottle is kept in the vegetable compartment of the refrigerator at home, and it is being opened more and more. We have decided to keep Shinshu Kamerei's unpasteurized sake in a refrigerated room or a chilled room, but it was hidden in the vegetable room. It was fine on the second day, too 👌. Since we're here, we'll have a cup of Hana Cup 🥛. Delicate fresh & fruity ^ ^. Stable and good 😋.

Kangiku OCEAN99 Nagi -Spring Misty- Junmai Daiginjyo light nigori unfiltered unpasteurized 720ml Raw material rice: Kitsushizuku Polishing ratio 50%. Alcohol content 15 This sake was released in January, ahead of the early spring. It was kept for a while because we couldn't go to the liquor store due to the heavy snow in February, as I recall. I went to pick it up with Aizan. Shuwashuwa is very energetic. It's quite crispy. But the sweetness is a little bit restrained, but just enough 😊.

TUKIYOSHINO's Sakura Unfiltered Nama Sake 720ml Rice used: Hitogokochi Rice polishing ratio 59 Alcohol content 15%. I opened the bottle on Sunday when I came home from seeing the cherry blossoms. I had it last year at this time of the year, but I think it tastes better this year. It's a delicious sake with clarity and umami. I already got the green one and would like to try the purple and sky one. By the way, I gave my neighbor a bottle of Tsukiyoshi red fire-brewed as a return gift for Tateyama, and she highly appreciated how refreshing and delicious it was👍.

Mizuhata Spring Salmon Festival ④ Manjusen Junmai Daiginjo Kotobuki This sake was given to us as a gift from the brewery when it was reopened five years ago. It is a big bottle, about 2.5 liters. It has been kept in a refrigerator for a long time. It has a slight aroma of maturity and has aged well. We are very grateful for this very valuable sake. Next door at the Toyama City Gymnasium, the Spring Tournament of Sumo Tournament was being held 😃.

Mizuhata Spring Sake Festival (3) Garyubai Junmai Ginjo Spring has come. Rice used: Yamadanishiki produced in Hyogo Prefecture Rice polishing ratio 60 Alcohol 15%. This wine has a strong acidity and is quite unique. It is a modern, mellow, wine-like type. The day was windy and the weather was unstable, but during a break in the weather, the Tateyama mountain range was glimpsed over the cherry blossoms.

We opened the bottle that we brought from Ueda at the end of last year. Now let's see how it tastes. Compared to the Oshinshu of the previous day, it is a bit lighter. But I can't say which is better or worse. Stored in the vegetable compartment of the refrigerator at home. The thermometer is 5.7 degrees Celsius right now. The temperature in the refrigerated room above is 1.7 degrees Celsius. The winter sake stored in the vegetable room should be consumed soon and replaced with fire-aged sake.

Daishinshu Tank-batamzume Junmai Daiginjo Tank Shiboribori Nama 720m Rice used: 100% 2024 contract-grown Hitogochi rice Rice polishing ratio: 49 Alcohol content: 16%. We took this bottle with us last year when we dropped by Hatoya for Iraka Kuro. After that, I was able to fully enjoy the freshness of this bottle at Daigo Kanazawa store, so I put my home stock on standby until now. I cured and opened the bottle, but didn't say a word. It might have been better to open it right after I brought it to the store. But the piquancy has settled down, but the fresh & fruity is still there. Too good 😆. It's an apple-like fruity sensation.

Tateyama Nigori Sake Special Junmai Sake Active Nama Shu 1800ml Rice: Gohyakumangoku, Yamadanishiki Rice polishing ratio 59 Alcohol content 18-19%. A gift from a neighbor. This person said that nigori is not his favorite. Hmm? Bitter? Gone? It hasn't been in the fridge for a long time, and I don't know if the room is unheated or not. I shouldn't give a fresh sake as a gift. I thought I might use it for simmering, but I can't waste a drop of sake, sad nature to drink it 😢. I'll have it hot today 🍶. PS: I had a 720ml of this sake in February. At that time the nigori was swimming like a cloud.

Hi @Mizuhashi 😀 If you don't know how to manage your sake, it's not a good idea to give your raw sake sake to others 🥲. Maybe you just don't know 😅. Worst case scenario, you could use it as a cooking sake, but that would be a waste too 😅...
