Shinshu Kamerei Miyamanishiki Junmai Ginjo Rice used: Miyamanishiki produced in Nagano Prefecture Rice polishing ratio: 55 Alcohol content: 15% 2024.6 Manufactured Somehow, I was curious about how this trend differed from Shinshu Kamerei, a rice produced in Nagano Prefecture, and there was a Miyamanishiki, a fire-aged sake from just one year ago. So let's open the bottle. Yes, it is the usual Shinshu Kamerei. There is also a light schwarziness. There was a clear difference between Noto rice and the three varieties. Well, today is Shinsei day. I think I'll join the event after work 😃.

Shinshu Kamerei Noto Yume-Mizuho 720ml Alcohol content: 15%. Rice used: 100% Yumemizuho from Noto Production Date: July 2024 The bottle of Yumemizuho from Noto, which was sold as Shinshu Kamerei at the brewery's direct sales store, was opened. What's that? It's got a lot of sweetness to it. The commission-brewed Gohyakumangoku is not quite dry, but it is crisp. In comparison, Yumemizuho is clearly sweeter. Last year, I think it had a bit more bitterness in it. This is another Shinshu Kamerei that was only available last year, and I was grateful to have it.

Takeba Noto Gohyakumangoku Junmai Ginjo 720ml Rice used: 100% Noto Gohyakumangoku Rice polishing ratio 60 Alcohol 15% (15% alcohol by volume) Manufactured: 2024.06 After the Noto Peninsula earthquake, Okazaki brewed this sake on consignment from rice produced by Kazuma-san. As I recall, it was in late June of last year when it first appeared on store shelves. It has already been a year. I kept it in the refrigerator at home and opened the bottle. Once again, I think that sake tastes different depending on the water. Am I also attracted to the water in Ueda? Now it is a fantastic sake. I was grateful to be able to drink it 🙇.

Kurobekyo Unfiltered Ginjo Nama-shu "Kura Shibori" 720ml Rice: Gohyakumangoku Rice polishing ratio 55 Alcohol content 16 Since I stepped on the 1200 Kiri number ✅ with a Jyushiyo, I will start 1201 with a Toyama sake. ▶️ I dropped by a local liquor store for the first time in a very long time. In the evening, just before 6pm, I said hello and my dad came out from the back and was already drinking 😆. He and his wife enjoy drinking together, they have the same hobbies and work, and they seem to be having fun 😄. Well, I decided to have a drink. Hayashi is very popular these days, but Kurobekyo's raw sake is fruity and consistently delicious 😋. The December production was still left in the store fridge: ✌️

Jyushidai Nakadori Jungin Akaban Omachi 1,800ml Rice polishing ratio: 50 Rice used: 80% Akaban Omachi, Okayama Prefecture Alcohol content: 15%. The bottle was opened at 2023.09 We have been waiting for a long time to open the bottle 💦 because we were not sure when we would be able to open it. We can only say that it is delicious 🤤.

Gorohachi [Nigori Sake] [Autumn/Winter only Alcohol content 21%. 100% Niigata rice I left Iyari-ri for tomorrow, so I opened a bottle of Gorohachi which was in the refrigerator. By the way, this is treated as a liqueur. When I drank it again, I realized that it has grains of rice, a thickened taste, and sweetness, which explains why it has been popular for a long time. The owner of a liquor store in my neighborhood loves this and keeps a lot of bottles aged every year. I haven't visited him recently, so I might drop by this weekend for the first time in a while 😄.

Iyari Junmoto Junmai Unfiltered Nama-shu 720ml Rice type:Hitogochiki Rice polishing ratio: 59 Alcohol content: 17 It is gradually getting hot and humid. However, the temperature seems to be lower than usual. Salad of radish, avocado, and tomato 🥗. After wondering what to open the bottle of sake, we went with Iyari. The specs are mellow and dry, but the sweetness and acidity mix to create a complex flavor that is at once rich and refreshing 😃. I'm looking forward to the taste change after the second day 😋.

Sei Masamune Omatsuri carp Junmai Ginjyo Unfiltered Unrefined Nama Shu ORIGARUMI 720ml Rice: 90% Hitogokochi (from Nakano City, Nagano Prefecture), 10% Morimorimochi (from Obuse Town, Nagano Prefecture) Rice polishing ratio: 59 Alcohol content: 14%. Sake as exciting as a festival or something 😀. Indeed, I'm looking forward to the fact that every time I drink sake here these days, I have to try it to see the various flavors 😋. Open the bottle with a light shupo. Pour it into a bowl. The acidity of the lactic acid and the chirichiri-ness of the garnish make it feel like a summer sake, right? Calpis soda for adults, not sweet. Let's have a little more on the rocks when you get home! 🔸P.S., Day 2 It didn't have as much schwarziness as the calpis soda (...;) It was a taste change to a delicious drink that you can take your time with... Ἰ.

Koshino-Shiratori 2040 No.11 Junmai Daiginjo Koshitanrei Unfiltered Unrefined Unrefined Sake Rice:Niigata Prefecture "Koshitanrei Rice polishing ratio: 50 Alcohol percentage: 16% (Manufactured: 10.10.2024) This was served at the Joetsu Kenshin Sake Festival last October. Yamama is limited to special dealers, so it seems that it cannot be sold at the event. This sake was sold for 2,000 yen, I believe, at the venue only. This sake is aged for 2 years in 2021. Pouring it into a bowl, you can see that it is quite colored. There is no scent of old sake at all, and if you are not told, you would not know it is an aged sake. Sake that originally has a sense of body is suitable for aging, isn't it? It is a round, glossy, and delicious sake. ✌️ Thank you very much for the food 😋.

Itaru Junmai Ginjyo Nama-genshu 720ml Rice polishing ratio: 55 Alcohol content: 17%. Is it almost the end of Itaru's nama-shu? I took a peek and found the last bottle! We took it with Kaze no Mori. It is slightly gorgeous, but you can also taste the umami of the rice. I'm looking forward to the next fire-brewing. By the way, next weekend is my physical checkup 😅. I go to my local internist once every 2 months and I think I'm fine 😀. But next week I'll cut back a bit on the drinking 😄.

Matsuo Junmai Ginjyo Ikaruo Tank Mouth Pressed Nama-Nazake 720ml Rice used: Yamae-Nishiki produced at the foot of Mt. Rice polishing ratio 58 Alcohol content 15.5°. Recently, I use Shinshu for one-day trip to Ueda, Chikuma, Shinonoi, Hakuba, and Itoigawa, because I can save the cost of expressway and gasoline. And there is a sake shop, Kasuga, along the way 😀. I took this one from Mr. Kasuga, too. I think this is the third time I've tried Matsuo's sake, and I've never had a bad experience with any of them. It's not glamorous, but it's a delicious sake that soaks in deeply. It is not a classical sake, but an orthodox one, I guess. I have another bottle of fire-brewed sake in stock, but I will let it sit for a while longer.

Urasakunohana Dry Ginjo Unfiltered Straight Kettle 720ml Rice used: Hitogokochi Rice polishing ratio: 59 Alcohol content: 18%. This bottle arrived from Shimizuya. The main attraction is Honkinbiai active nigori. The next batter of Kitaan Okuni was sold out and arrived with Iyari, two Yamasan, and Kurosawa Natsuo. We thought we could make a one-day trip to Shinshu on Saturday, but we had it delivered by TA-Q-BIN. After the light sweet fruity Shigaizumi, it was a bit dry with a strong alcohol taste. However, after the second glass or so, it was a dangerous sake that I could drink without any resistance. When I finished it, I could clearly see the kanji character for "Sakunohana" in the bottle! and the kanji characters are clearly visible. The label is reversed because it is the backside of the sake brewing process, and because it is a summer sake, it is called "Urasakunohana. I see.

Shigaizumi Ippodo Nitroku Special Junmai Unfiltered Nama-shu 720ml Rice polishing ratio : 58 Alcohol content: 15%. We drank it last year and enjoyed it so much that we brought it back from Ikusakaya for the 2007.4 production. It has a gentle taste and relaxes you when you drink it. It is fresh and fruity, but it is a delicious sake that gently permeates the body. We paired it with Hida's famous chicken 😋.

SAGATA Junmai Daiginjo Unfiltered Nama-shu Flying SUGATA 720ml Rice used: Yamadanishiki Rice polishing ratio: 50 Alcohol content: 16.8%. Flying SUGATA is brewed with Yamada Nishiki made by students of Tochigi Agricultural High School, who will be responsible for Japan's agriculture in the future. The label on the back says "Flying SUGATA". What exactly will this year's sake rice be like? Now for the sake. Oh, it opens gorgeously and spreads out. Elegant and slightly mellow. Considering the specs, I think it has a good cosmetic value🙆. It was a gorgeous and delicious sake.

Yamagata Masamune Junmai Ginjo Sake Mirai Nama 720ml Rice:Yamagata Prefecture Sakemirai Rice Polishing Ratio: 50 Alcohol content: 16%. This is a Shinshu Kamerei tie-in set. Usually when I press the buy button 🔘, it says there are no products available, but this day it went through 😅. I used to be able to just select one bottle of the cuddle set, but recently it's getting more and more egregious, like high spec sake in a 6 bottle set. Still, it's a blink-and-you'll-miss-it 😭 Now, let's open the bottle. A light pop. Hmmm? Light, sweet, juicy and delicious 😋. That's right, it's a future sake 🥹. And it was crisp and sharp, very tasty. By the way, recently I set a thermometer to watch the temperature in the vegetable compartment of the fridge, and today it was 8.5 degrees Celsius. It's 8.5 degrees Celsius today, which means that it's no longer possible to drink sake on its own 🥵.

Chiebijin Junmai-shu 300ml Rice polishing ratio: 70 Alcohol content: 15%. In February, we brought this Chiebijin with Kanji characters from the brewery's store in Kitsuki. It is not limited to the brewery store, but was recommended to us as it is only distributed in Kyushu. Compared to Chiebijin, this one seems to have more flavor. Is it my imagination? I should have at least kept it in a shiawase bottle. I regret it a little (>_<)

Kame no Kai Semishigure Junmai Ginjo Nama 720ml Rice polishing ratio 59 Alcohol content 14%. Since it has suddenly become hot and humid, we decided to serve a summer sake. It is refreshing and delicious. The label of the local ver is different from that of Haru-ura. It makes me want to go on an expedition to Shinshu on Saturday, but the fridge seems to be full, so let's give up: 🤦‍♂️

Iraka Gin Beni Nama-shu 720ml Rice:Matsukawa-mura, Kitaazumi-gun, Nagano Prefecture, contract-grown rice (special rice) Alcohol content: 15%. The last one is Beni. Three months have passed since we decided to compare the four varieties 💦. The second lot of Kuro and Ai is available in two different versions: light nigori (nigori) and hi-ire (hi-ire). Is the second batch of BENI (rouge) fire-brewed? It's hard to catch up with all of them. Now the bottle is opened. Shupon and it is still very healthy. This one is a bit more floral and crisp. My wife thought she would like the black and red, if I may say so. Yesterday, I compared the four remaining wines, and I could tell the difference in taste and color, but a clear expression of how they differ individually? I was even more confused 💦. In conclusion, all four are delicious 😋. The photo shows Kanazawa Maimon Sushi 🍣.

Iraka Gin-Ai unfiltered unpasteurized sake 720ml Rice:Matsukawa-mura, Kitaazumi-gun, Nagano Prefecture, contract-grown rice (special rice) Alcohol content: 15%. The white one is sold in limited quantities, so the Gin-Ai is the second one, which I think came to our house in January. The yeast seems to be different from the black one. Now to open the bottle. The bottle was opened with a "shupon", and it is still very healthy. It is still in good health. It may be the easiest to drink. The second lot seems to be fire-aged,

Iraka White (Sincere Keiai) unfiltered unpasteurized sake 720ml Rice:Matsugawa-mura, Nagano, specially cultivated rice Alcohol content: 15%. The first day of the trip to Tateshina last November. The plan was to go to Ueda, Daisetsuei brewery store, Suwa, and Tateshina. I was the third person to buy at 1:00 p.m. I was the first person to buy 12 bottles, the second person to reserve 2 bottles, and the third person to ask how many bottles I could buy. Cars were arriving one after another after that. I found out that a nearby rice shop also handles it, so I dropped by, but it was closed on Saturday. In hindsight, I should have bought another bottle. So, I opened the bottle. When I asked about it at Hattoya, I was told that the white one was sweeter. Well, it was more bitter than fruity and sweet. I think it was a little out of season. Next time, if I can get a bottle for sale this year, I would like to open it as soon as possible 😆.
