This time, I was attracted to this one because of its beautiful name, Bito.
The aroma is classic with a sour taste.
The taste is also acidic and has a slightly peculiar old-fashioned taste.
The middle part of the bottle is full of umami, and the last part finishes with a sour and bitter taste.
Delicious, but not my favorite.
I don't think I will repeat it.

I wonder if Gohyakumangoku can be this mellow. It is +4, so the mouthfeel is certainly tangy, but it feels much sweeter. It also has a slightly bubbly taste. The second half, when the ori comes in, is much thicker...

Composed mainly of sweet and sour flavors. It tastes like apple and apricot 🍎.
The flavor slowly starts to develop and then slowly fades away 🤗.
It is a sake that makes you calm 🍶.
