Don't stop #Noto's sake! Takeba #Tetorikawa Set Takeba #Tetorikawa collaboration brew Ingredient rice: 100% Ishikawa-mon Alcohol content 13% (Unblended) Polishing ratio 60 The first one is Noto rice, Junmai sake brewed by Yoshida Shuzo. The taste is so robust that it is hard to believe it is low-alcohol.

Taisetsukei Nagano R yeast Junmai-shu 720ml Ingredients: rice, rice koji (all Hitogochi produced in Nagano) Rice polishing ratio: 65 Alcohol content: 13 The last one at the sake shop, where the owner said it would be more popular if the label was more refined. Indeed, when you drink it, you'll be surprised ‼️ that it's a freshly harvested apple. It became my wife's favorite. By the way, there was no trace of Hexagon 😭.

#Don't Stop Sake in Noto Project Okunoto Shirakiku Original Recipe Reproduced Sake Special Junmai Alcohol: 15%. Polishing ratio: 73% Yamadanishiki, 27% Gohyakumangoku This is Mr. Shirafuji. This is Mr. Shirafuji, and although the place where it was made is different, it is somehow the same Shirakiku as usual. I think I understand, but I don't know. #Noto Sake Don't Stop Project Okunoto Shirakiku Eiheiji Hakuryu Collaboration Brewing Special Junmai Sake Rice: 73% Gohyakumangoku, 23% Yamadanishiki Rice polishing ratio: 55 Alcohol content: 15 I just noticed that when you put the two bottles side by side, the label becomes Noto. Wajima was flooded after festivals resumed in many places after the earthquake. Heartbreaking😣. I opened the first bottle with Fukui yeast. The aroma is so smooth. It seems to enter through the nose before going down the throat. I feel it has become clearer after a bit of laying down 😄.

Wada Ryutosui Yamae Nishiki Junmai Unfiltered Nama-shu 720ml Ingredient rice Yamae-Nishiki Rice polishing ratio 55 Alcohol content 15%. This is my first sake. Well, first impression, it is soft and gentle. There are various kinds of sake rice. I would like to compare them all together. However, all of Ueda's sakes are delicious! Why is it that all of Ueda's sakes are so delicious? Is it the water? Is it the water?

Daishinshu Ai-Thanks Junmai Daiginjo-style 720ml Rice used: Kinmon-Nishiki Alcohol content: 16%. I was curious about this sake at a liquor store and bought it. I was curious about it and bought it. It is very juicy and fruity. It is very juicy and fruity, like an apple or a melon. And when I finished drinking it, I saw that it says "Thank you for your love and appreciation" on the back. I looked it up and found out that it is a sake made at the end of this season's big year. Another must have for next year💦.

Echigo Kenshin SAKE Festival Limited Edition Ayu Masamune Unfiltered Junmai Nama Sake Pressed on October 15, 2024 Rice polishing ratio 65 Alcohol content 16.5 It was the easiest to drink at the tasting. It was very popular with the camouflage at the event. I thought about quitting for a moment, but was told that it was okay for a day or two because it was not summer and I could drink it. We opened the bottle early on Tuesday. It was fresh, but a little different from Saturday. I guess there is a difference between tasting and drinking it slowly.

SAKE Festival Limited Edition Kurumagake 2024 This year's brewer was Kubiki Shuzo. 1,000 bottles were sold exclusively at the venue, and this year we were able to buy one. On Sunday, we went home from Joetsu via Ueda, Ueyamada Onsen ♨️, and Chikuma. Breakfast was at 8:00 a.m., so Kusabue-san was pretty tough at noon. Kurumikazen was opened when I got home. It was clear and refreshing, and my wife said it tasted good too 😄.

Good morning, Gyve 😃. Sorry for the confusion. This sake is brewed in Joetsu City, Niigata Prefecture. Niigata prefecture has the largest number of breweries in Japan. I think the second largest is Nagano Prefecture. From Fukui, it's Shinshu via Takayama, so it's a bit of a long way 💦.

Asahiyama Autumn Agari Junmai Rice polishing ratio: 65 Alcohol content: 16%. After the sake festival, we went to Gun-chan in front of Joetsu station at 6 pm and had Kubota Hyakusyu, Hakkaisan, and Nohtaka, and also had Kubota Asahi Shuzo Hiyoroshi for room drinking. I'm not sure if I'm still going to drink after such a full day of drinking. There were seven of us and it ran out quickly 😆.

Echigo-Kenshin SAKE Festival 2024 20 Joetsu Sake Brewery. Echigo Bijin and Echino Wakatake. I heard that the business was taken over and switched to seasonal brewing. It was more than 10 years ago that we first participated in the Kenshin SAKE Festival. Since then, we have participated every year except when the festival is not held at the Corona Disaster. In the past, there were many more participating breweries. The quality of the sake was mostly sugar-sweetened sake for brewing, and my cup got sticky. That is not the case at all this time. There must have been a lot of changes in the past 10 years. Last year, it was cold and pouring down and it was just a hard tasting, but this time, there were limited edition sake sales and collaboration products, and I really enjoyed it. After returning home, I did some research and learned a lot of things for Sake-no-wa✅ and would definitely like to attend next year🧐.

Echigo-Kenshin SAKE Festival 2024 18 Fukugao Sake Brewery. It is a sake made in Sanjo City. I was completely separated from the people I was with around here and left alone. That's what happens when you're immersed in sake!

Echigo-Kenshin SAKE Festival 2024 17 Northern snow. It's YK35 after all 😋. It's delicious but the price is also 😌. I'm happy to taste these sake 😃. This is the turnaround point and the second tour including the place we forgot to stop after this.

Echigo-Kenshin SAKE Festival 2024 16 Tenryo sake. Last year and the year before there was a long line, but this year was not so long and I was able to taste it slowly. I think I bought a bottle for home. I would like to go to Sado Island slowly.

Echigo-Kenshin SAKE Festival 2024 15 Sanzo from Sado participated in the festival. Tomimikiku from Toyama was next door and there was a long line of people waiting to taste their sake. Thanks to them, we were able to enjoy the tasting at a leisurely pace. It started raining hard around here.

Echigo Kenshin SAKE Festival 2024 14 Echigo Meisho. It is said to be Ichikozo because it is a sake made from scratch in the terraced rice paddies of Tochio. The concept is similar to Shinshu Kamerei's Ueda Tanada Hitogokochi. This is the brewery that sells Yamashiroya.

Echigo Kenshin SAKE Festival 2024 13 Kubiki Shuzo was in charge of this year's SAKE Festival limited edition sake. We were able to get in line a little after noon 😄. The sake we tasted was Hana to Yuki. It was a Junmai Daiginjyo, raw and hi-iru (hi-iri) 😋. Demonstration of dashimaki omelet. There was quite a line for this. Other than that, the limited edition mentshi from the meat shop was delicious. ✌️

Echigo Kenshin SAKE Festival 2024 12 Brewing aroma. It is a sake made mainly from rice that has had its protein removed by a fermentation method. The brewery has taken over the business. I had a bottle of Sake Sake last year, as I recall. I see that they are taking over the old and trying new things.

Echigo-Kenshin SAKE Festival 202410 Yoshikawa Toji no Sato. I heard that this place has just changed from a third sector to privatization. I don't know about the historical background as I am not a local, but I hope it will be a virtuous circle where good sake is supported and good sake is made again🙆.
