Masumi Yamahai Junmai Ginjo Hiyahoroshi 720ml Sera Masumi Limited Rice polishing ratio 55 Alcohol content 15%. We opened a bottle of Hiyaoroshi over two summers, which we purchased at the brewery's store last year, as well as Hiyaoroshi over one summer and three summers in our refrigerator at home. It has a nice roundness with a bitter matured taste. It started to get a little bit of color and on the second day it opened up even more and the flavor increased. Aged sake is delicious 😋. I wonder if it will be available again this year in September after two summers?

Hello Harry 😃. The proprietress of Masumi once told me that sake tastes better when it is matured, but that it is difficult to control the temperature and if the temperature is too low, the sake will not mature well. She said that they have a storage place for maturing sake.

Kangiku Silver Lining Unfiltered Nama-shu Junmai Daiginjo So no Mai 29 720ml Rice : So no Mai Rice polishing ratio : 29 Alcohol content : 15%. Pulled from Lemacom. The price is 2,750 yen for a bottle reduced to 29%! It is too cosy. But I guess the price will go up significantly next year. I dread the new sake at the end of the year 😢. By the way, the sake is quintessentially highly refined! It was clear, refreshing, slightly sweet and great 😊.

KUROUEMON XVI KUROUEMON KINMON-NISHIKI Nama yeast Go-go Yeast Nama-nazake 720ml Rice used: 100% Kanamonishiki produced in Nagano Prefecture Rice polishing ratio: 60 Alcohol content: 15%, produced in March and shipped in July It is said to be 3K5 with a raw yeast, Kanamonishiki, and a 5th yeast 😄. It tastes different from the Hitogokochi of the previous day. You can feel the acidity as well as the spread of umami. Of course both are delicious 😋. It looks like the hi-ire is laid down for a few years. Next time I would like to have the aged hi-ire 😉.

KUROUEMON XVI Junmai Summer Sake 720ml Rice used: 100% Hitogochi from Yaebaru (100% Nagano rice used) Rice polishing ratio: 60 Alcohol content: 15%. Made in April and shipped in August, it is targeted for the summer. The bottle has a mosquito coil sticker, and the back label reads "Juwajuwa Juicy! and 😀 You can feel the playful spirit. The bottle was opened with a light swig. It is a refreshing sake with a slight acidity. It's the perfect sake for hot days 😊.

Yamazan Aizan Junmai Daiginjo 40%5% Unfiltered Nama-shu Sake rice: Aizan, Hyogo Prefecture Rice polishing ratio 45 Alcohol percentage 16 We opened the bottle of Aizan, which was delivered by Shimizuya in May. The first sip is sweet, but it has an elegant sweetness that does not linger. It is not flashy, but it is a clear and luxurious sake. I'm going to open a lot of bottles, conveniently telling myself that I'll recharge my power with delicious sake to get through the hot day😅.

Kake rice 60 Ingredient Rice : 100% Akita Sake Komachi (harvested in 2020, produced in Akita) Yeast :Kyokai No.6 Fermentation vessel :Wooden vat (No.26.27) Brewing year : 2021-2022 Volume :720ml Shipment date: Jan. 2022 After three and a half years in our house, Flax Cat 2020 has been opened. Out of respect, I will write down all the specs. It has a little bit of color but is high acidity and delicious 😋. I am looking forward to the second day...is there one for me?

Obuse Winery Sogapere Ephis Saké Erotique Numérosis 2024 Normal lot Ingredients : Rice (domestic), Rice Koji (domestic), 100% Miyamanishiki from Nagano Prefecture Rice Polishing Ratio : 59 Alcohol content : 15%. This year, we decided to serve it early instead of letting it sit. On a hot day, you would not even know it was a white wine. When I dropped by Ikusakaya in March, there were many other wines, but I am sure those who like them will complete the season. It was pouring today and the train 🚆 was in disarray, but I think I will make it home😇.

Shangiku OCEAN99 Kukai inflight Nama-shu 1800ml Ingredients: 100% sake brewing rice Rice polishing ratio: 55 Alcohol content: 15%. It was delivered by Sake Sento Horiichi in spring. The regular version was fire-aged, right? It is an early summer sake, so it is a little sweet and tasty. Of course it is delicious 😋. But it's hot every day 🫠.

Ryoseki Junmai-shu "Hanamai" Rikuwada 720m Rice:Rikuwada Rice polishing ratio: 55 Alcohol content: 16 We opened the first bottle of Hanamup after a long time since we just brought it to you. We have two bottles of it in stock, but we thought it would be good to ship it once in a while. I remember it was light and fruity. It's not light, it's a rich umakuchi type 😄. I think it's time to open a bottle of the stock 😅

Okunoto Shirakiku Hyakumangoku No Shiro Junmai Ginjo 720ml Grape variety used: Hyakumangoku No Shiro (produced in Ishikawa Prefecture) Rice polishing ratio 55 Alcohol 15% R5.12 Manufactured This bottle was shipped before the Noto Peninsula earthquake. On Thursday, our client, who had come from Sapporo to support us, returned to Sapporo for the last time in July. It has been a year and a half since the disaster, and we thank them for their hard work. This sake was also stocked but we opened a bottle. This sake is also very mild and gentle. By the way, I see that the brewery is featured in the dancyu summer sake special. It will be delivered to my house today, but the magazine has become more expensive 😅. I'm looking forward to its arrival.

Okunoto Shirakiku Junmai Ginjo (Brewed on behalf of Yukawa Shuzo Brewery) 720ml Rice used: 64% Gohyakumangoku, 36% Yamadanishiki Rice polishing ratio 55 Alcohol 15%. Sake brewing rice that survived the Noto Peninsula earthquake is used. It was brewed at the Yukawa Sake Brewery under the supervision of the Shirafuji Sake Brewery. Last year, we were able to find and bring this sake to a sake shop in Nanao. It seems that they have now resumed sake brewing in Wajima, so we decided to open a bottle. It has been over a year since I bought it. It is a mild and soft sake. The rice was milled before the disaster and escaped the difficulties that awaited sake brewing. We received a little bit of the power that survived. I pray that no water disasters will occur this year 🙏.

SHICHIDA ORIGARUMI - Activated Junmai Unfiltered Nama 720ml Koji Yamadanishiki Kake Reiho Rice polishing ratio 65 Alcohol content 17 We got it bundled with 4 kinds of Kangiku Discovery Series and Sake Mirai😄. Active, settled. I opened the bottle with a push. I still want to drink this in spring 😭. It's a dry, slightly sparkling wine with a hint of orikara. It is a good summer sake if you make it on the rocks. This is delicious enough, but I think I had it last year in the spring and it was delicious, so I tried it again in the summer and it had calmed down. Well, I guess it's a matter of taste. ☹️

Narumi Light Nigori SPARKLING 720ml Raw material rice: Akita Sake Komachi Rice polishing ratio: 66 Alcohol percentage: 11% (undiluted) On Saturday, we went to Machinuka in Nanao for a bowl of Bean-curd soup with Bean-curd soup but it was closed for some reason😭. We decided to go to a nearby restaurant, Harureruya, for the Kaisen-don set meal 🍣. After that, we stopped by Mizukami-san and thought about having Yamasan, Daisetsukei, and another bottle of Koshi Roadster, but there were 4 kinds of sake next to them that we didn't see. I asked the owner about a brewery in Katsuura that has a distinctive acidity. I decided to go for the schwashy type. Opening the bottle was difficult. I opened and closed the bottle 20 times😅Now it is finally opened. It's a schwashy, low alcohol. Perfect for a hot day!

Daishinshu Yaebaru Junmai Daiginjo [Oorigarami Nama Shu] 720ml Rice type: Tomi-city, Nagano      Hitogokochi produced in Yaehara Rice polishing ratio: 49 Alcohol content: 16%. This was served at Za Kura, a sake shop in Yaebaru during GW. You can drink it only now! When I was told, "You can only drink it now! I said, "Yes! After about 3 months of storage in the refrigerator at home, I opened the bottle. It's delicious! That's all I can say. Fresh and fruity, but packed with richness. It's too good 😋.

Asahi Shuzo Yobitomo Junmai Ginjo 720ml Rice:Gohyakumangoku Rice polishing ratio: 55 Alcohol content: 15%. More than 20 years ago, when I was in Numazu, there was a blind sake tasting of Kubota at Nagashima Sake Brewery, and I remember that many of the regulars mistook Manju for Hyakusyu. Kubota and Koshinokanbai were very popular at that time. It brings back memories.

Shinshu Kamerei Junmai Ginjo Yamae Nishiki Unfiltered Nama-shu 720ml Rice used: 100% Yamae-Nishiki from Nagano Prefecture Rice polishing ratio 55 Alcohol 15% 25.01% Manufactured Shinshu Kamerei has been on the top of the list of recommendations for a while now, so we opened a bottle. It is a set of a certain store. It was probably kept in the refrigerator at an icy temperature. I was worried about the aroma of the six-month-old nama-shu, but there was no problem at all. Fresh and fruity, it's still going strong. Full of bliss? It is 🥰.

Abe Junmai Daiginjo Gold Label Hi-iri 720ml Rice polishing ratio 45 Alcohol 14%. Purchased last year and waiting in the refrigerator at home. More than a year had passed 😅. I never had a chance to open the bottle because it was a waste and not for aging purpose. So I brought it to a drinking party at an old private house in Yao. This was the third bottle I opened after Otter Blue and Keida. The bottle was light and sweet because the Keida was quite heavy, so I screwed up the order a little. It was a waste of Abegold 😭. But it's hot from this morning too 🥵.

Chiyotsuru Eda (Nama Sake) Rice variety Tominokou (organically grown in Namekawa) Rice polishing ratio 60 Alcohol content 18%. This is one of the limited edition of 1,100 bottles, which was brought to us in December of the year before last and aged for a year and a half in the refrigerator at home. The last time we aged it for a year, it had a strong hiney aroma and we felt it was a failure. At one and a half years, I didn't feel the twangy aroma at first, but as it got closer to room temperature, the twangy aroma started to appear. I think it would be better to let it age more.

Otter Blue DASSAI BLUE Type 50 720ml Rice:Yamadanishiki Rice polishing ratio: 50 Alcohol content: 14%. I brought this to a drinking party at a friend's house from NY, I bought it last year and it has been waiting in my fridge for more than a year. I haven't had a chance to open the bottle 😅. It is a very expensive sake, over 4,000 yen for a 4-pack. It was also a hot day, but we had grilled chicken on a shichirin (a Japanese charcoal grill). The Otter Blue was refreshing and delicious 😊.

Hi Gyve 😃 I believe there was a liquor store in Nanao that was offering PayPay 20% point reduction, Noto Peninsula only 😀. There are other aged sake as well, as a result 😅.
