@水橋Kurosawa Junmai 80 Light Nigori Nama Sake 100% Hitogochi rice from Shirakura Farm in Tomi City, Nagano Prefecture Rice polishing ratio: 80 Alcohol content: 15%. We bought this the week before last on Mr. Miyajima's recommendation. When I poured it into a glass, it was as shwashy as champagne, if not more so. ‼️ When I was talking about how tasty it was with muscat dryness, the TV program "Tokoro George Goes! Darts trip, and he was visiting a brewery! I see they are trying various things. I'd like to visit there 😀.

@水橋Kame no Kai Haruura Junmai Ginjo Light Nigori Nama 720ml Rice: 100% Hitogochiki grown in Nagano Prefecture Rice polishing ratio: 59 Alcohol percentage: 16 It's a new year and the cherry blossoms have started to bloom, so we opened a bottle of Haru-ura. Although it is more of a mellow sweet sake in terms of specifications, it has a pleasant, refreshing sweetness. Well, I'm going on a trip to Shinshu for two nights and three days starting tomorrow. The cherry blossoms have started to bloom, so I'm looking forward to it 😌.

@水橋Sono Kangiku Junmai Daiginjo Aiyama 50 Red Diamond Unfiltered Nama-shu 1,800ml Rice used: 100% ASK Aiyama from Hyogo Prefecture Rice polishing ratio: 50 Alcohol content: 15%. The next bottle of Kangiku's Aizan was opened. This sake is also elegant, delicately sweet, and beautiful. Yesterday we had it with roast ham. I think we can enjoy it for two more days 😀.

@水橋Genmai Aizan Junmai Ginjo Unfiltered Nama-shu 1,800ml Rice polishing ratio 55 Alcohol content: 16%. We purchased this bottle last September and kept it in our refrigerator. Yesterday was the second day after opening the bottle. It has a refined sweetness, clear and fresh. It must be delicious. We have 3 bottles left, so let's enjoy it with yaki-sai from Kakiyoken today.

@水橋Kaiun Unfiltered Junmai Akaban Omachi Nigori Sake 720ml Alcohol content: 17%. Rice used: 100% Akaban Omachi Rice polishing ratio: 55 This is the first Kaiun in quite a while. When I lived in Numazu, I drank this, Isoban, Kikusake, Hana-no-Mai, Shoyuki, and so on. By the way, this sake is very delicious. When I opened the bottle, it started to bubble up like a white cloud, so I closed it once and let it settle down before opening the bottle. The sweetness of Omachi? It is a slightly sweet adult Mitsuya Cider 😄.

@水橋Kabishin Fuyutsu no Tsuki - Kizuki - Junmai Daiginjyo Unfiltered Nama-shu 720ml Rice used: Akebono Rice polishing ratio: 50 Alcohol content: 16.5 This may be the first time for me to drink Kabishin Sake Brewery. It was a New Year's sake. We enjoyed it as a food sake. I thought it would be a more glamorous image as a daiginjo, but it was a good sake that did not interfere with the food and complemented it.

@水橋Sasaki Shuzo Junmai Ginjo Kyo-Seikyu 720ml Alcohol percentage: 15 Rice polishing ratio: 60 We received this sake as a gift from Kyoto last year. Cold days continue. We first had it cold. The rest of the time it was served lukewarm. It is said to have a mild flavor, but it is a traditional flavor. I like it lukewarm to slightly cooled.

@水橋KOUEIGIKU OMACHI Nama Shu 1,800ml Alcohol 14%. It arrived in the February hanpukai. On the first day, the sourness was stronger than the sweetness of Omachi. However, the sweetness gradually opened up on the second and third days. Today is the third day and the fourth day is gone 👀.

@水橋Shinshu Kamerei Junmai Ginjo Hitogokochi Hi-ire 720ml Rice polishing ratio 55 Alcohol 15%. I opened a bottle that I bought last year. This day was the release day of Shinshu Kamerei Hitogochi from the terraced rice fields of Inakura, an unfiltered unpasteurized sake. I went to Yanagimachi. with "Tsuya Gozen" (2,500 yen) and a sake set (7,150 yen) with sake cups collaborated with Mr. Haruya Abe. Lunch was vegetable tempura soba. At the supermarket in Bessho Onsen, there was no Shinshu Kamerei, but I bought some o-hagi (rice cakes). I bought Toyoga and Kurosawa at Miyajima-san, amazake at Hara-san, and went shopping at Tsuruya before returning home in a snowstorm. I am getting numb to the fact that Ueda is within a day trip range😅. I'm staying in Tateshina the week after next 😀.

@水橋2024 Spring Evening - Tasting New Sake - 18Last. Yoshinotomo Junmai Ginjyo Nama Nama Sake Tominokou As I recall, it is a current sake with apple blossom yeast. I heard that there were 40 kinds of sake at this banquet, but only 18 made it to the end. Each brewer's brewing water was also offered as a Wakarimizu. We were fully entertained, thank you very much to the secretariat 😊.

The fee for the party was 8,500 yen and included one glass artist's sake cup. It was held at a hotel banquet hall, but I think the food was better than last year's.

It was fresh and medium! I didn't know it tasted this good. I was lucky to take it home.
