Well, there is no "Iraka" that can be served in the "Meishu" course. It has to be the best course. Then, let's try Daishinshu. I wanted to try the Jungin of Autumn, so it was perfect. The umami rides on it and it is delicious 😋. We had another 😊.

Yamazan Junmai Daiginjo Hitogochi Gowari Unfiltered Unrefined Harajiru 720ml Rice: Hitogochi 100% grown in Takeishi, Ueda City, Nagano Prefecture Rice polishing ratio: 50 Alcohol content: 15%. Were there more varieties released this year than last year? I feel that I have more opportunities to receive Yamazan. Yes, it is still a delicious sake 😋. Toji: Yukari Iwase, First Shiboritate of the Season 720ml Rice polishing ratio 60 Alcohol content 15%. So this is already the fourth season since the proprietress became the toji 👀. Oh, what? It's really delicious. It has a combination of umami and acidity, and is fresh. Maybe this is the kind of sake she originally wanted to make, given the yuzu sparkling trend. I can't wait to see how the other sakes this season will change 😋.

Daishinshu Hana-ochu 2024 720ml Ingredient rice: 100% Kanamon-Nishiki contract-grown rice from Nagano Prefecture Alcohol content: 16%. When we visited Za-kura in GW, we were told that this sake had just arrived. I was told that this sake had just arrived and I said I would buy it! I will buy it! I was in no hurry to drink it because it was not a draft sake, but I opened the bottle somehow. I found out that it is a collaboration between Chihiro Koshi, a painter from Nagano Prefecture, and Daishinshu Brewery, which started in 2015 (brewed in 2014)." The brewery is also using Nagano Prefecture's rice. The sake rice is also from Nagano Prefecture, so it's an all-Shinshu sake 🫨. And the sake? Of course it was delicious 😋.

KUROUEMON XVI Yamahai Junmai Akaban Omachi Rice Unfiltered Nama 720ml Rice:100% Akaban Omachi (100% Omachi rice produced in Akaban, Okayama Prefecture) Rice polishing ratio: 60 Alcohol content: 16%. Manufactured in April 2025 and shipped in November. The sweetness of Omachi is arranged by the acidity of Yamahai, and although it is sweet and acidic, it is a very delicious sake that is delicately intertwined. Recently, we try to bring it to you when we see it, but there were only three bottles left. By the way, I went to the Goldwyn family sale on the first day of the holiday weekend. Tents ⛺️ and down sleeping bags, less than half price. But I don't do that much on liquor store expeditions. There were no bargains this time. The fourth one is Kanazawa Miso Ramen Shinzen for lunch.

Manrei Winter Sake - All Yamadanishiki 720ml Rice used: 100% Yamadanishiki produced in Saga/Sochi Rice polishing ratio: 65 Alcohol content: 15%. This sake is made from Yamada-Nishiki, which is a non-polished rice. The price is lower because of this. It has been cold all of a sudden this past week, and the daikon radishes in our vegetable garden have grown large. I thought it would be a good match for oden. Hokian Okuni Yukiroku Yukinaka-aged Junmai Ginjyo Unfiltered Nama-shu 720ml Rice polishing ratio 55 Alcohol content 16 This was served at Hakuba Roadside Station. As commented on the back label, it is fruity among Kitayasu's products. I think this one is more popular with everyone. This year, I got hooked on Kitayasu-san's sweet and delicious taste and had a variety of them. At first, it was very strange that there was such a difference between sweet and dry, even though they are neighboring prefectures and Omachi is the nearest Shinshu across the Kuroshi Dam. After this, I am looking forward to various new sake until the end of the year 😋.

Maryo Yamahai Junmai GON Rice:Gohyakumangoku, etc. Rice Polishing Ratio: 65 Alcohol content: 15 We were lured by the comment of the brewer's challenge hidden sake and brought it to you. What is it? It has a light smoky aroma, just like Kenpachi. We ended up drinking it cold, but it was recommended to be served lukewarm. It suddenly got cold yesterday. But I think daikon radish tastes best around this time of year. Starting with cold sake and warming a glass to lukewarm seems like a good idea 🍶. Sake from Sado is never a miss 😋.

Aged old sake] Gorin Junmai Namaishu 720ml 100% Yamadanishiki Rice polishing ratio 60 Alcohol content 16%. Manufactured in 2012.01 We found this aged old sake at Tajiri last month. We opened the bottle after it had been stored for 13 years at a liquor store. I imagined it would be amber-colored and look like a dead leaf, but it is not at all like that 😯 It is light amber-colored and light, with a slight aroma of aging. The year 2012 was the year of the London Olympics and the opening of the Tokyo Sky Tree. It was something like, I drank up the precious sake in two days, and I am grateful to the liquor store for aging it.

When we visited the brewery before, we were told that Yamada-Nishiki could not be grown well at first. Yamada-Nishiki is a rice originally from a warmer region. He said that the recent success in growing it was probably due to global warming. By the way, when I dropped by Kasuga the week before last, I saw the NEW ENGI. Nabeshima Classic Harvest Moon Hiyakioroshi Junmai-shu 720ml Rice polishing ratio: 60 Alcohol content: 15%. Harvest Moon 🌙 has been opened. I bought it on Yahoo shopping in September for 3,000 yen including shipping. I had 1,000 yen in points that will soon disappear, so I actually paid 2,000 yen. I thought it was OK, since shipping was included, so I bought it. However, it was sent to me in a very inappropriate package 😭. I'm not sure if it's a problem or not, but I'm not sure. I'm not guilty of drinking sake, so yes, of course I enjoyed it 🌕. It's a very ripe and tasty sake! The fourth picture is Friday at Kanazawa station. It is said to be 3K5 with a sake yeast, Kanamon-Nishiki, and No.5 yeast. The light sweetness is intertwined with a moderate acidity, making it a sake that you can drink as much as you want. I finished it in no time with oden (oden). No second day 😅. Today is Friday, one more day to go 😤.
