At a standing bar in Shinbashi.
Crisp, ginjo-like alcoholic aroma.
It is light and has a nice dry taste with a slight sweetness.
It is fresh because it is freshly pressed.
Goes well with salmon fillets.
Gorgeous aroma
The palate is well-balanced with a light green apple-like sweetness and a mild pungency. The aftertaste is refreshing.
Alcohol 15%.

Touji Iwase Yukari, first freshly pressed this season
Polishing ratio 60

Nearly colorless crystal with a sense of transparency.
The first impression of the aroma is fresh green apple.
First impression of the taste is slightly light
Mild sweetness, refreshing acidity, and moderate bitterness
Light, yet well-balanced with just the right amount of umami.
A beautiful sense of freshness of "Shiboritate" (freshly squeezed).
I guess it's a preconceived notion, but it also has a softness that only a woman can have.
It seems to go well with appetizers because of its fresh and light impression.
Like tofu paste with cheese, fruits with vinegared miso, etc.
Phantom waterfall, always delicious, but this is also quite good.

Half-forgotten Junmai Daiginjo www.
Sushi 🍣 from the supermarket today and it's just right 🤟🏻
It tastes the same as the raw one I drank before and left at room temperature for 6 months.
I don't know if this brewery is like this or not.
I wonder if this brewery is like this⁉️ 🤔

This is the third season since the proprietress became the chief brewer.
The taste this time is quite gentle and nice. We can expect great things from her in the future 😃.
Iwase family's fresh water from the Kurobe River Fan Area Spring Group, one of the 100 best waters in Japan. It is a sake from Toyama, probably because the water is delicious.
