Honjozo
A clear, crisp ginjo-style sake that goes well with sashimi. The toji-san created this sake with the image of the sea in mind. I forgot to take a picture...
Junmai Daiginjo Yuyamanishiki Shizukusyu
Sold only once in October. It has a sharp, clean mouthfeel with an even more delicious flavor. The cost is good at around 3,500 yen for the Shizukutori. I prefer this one.
◉Junmai Daiginjo Yamadanishiki Shizukusake
This sake is also sold only once in October. This is a refreshingly tasty water. This one also has a nice breadth. The price is less than 4,000 yen for a Shizukutori Yamadanishiki, which is also very cost-effective.
I did not drink Toyama sake very often because it has a light and refreshing taste, but I thought that you need to drink a variety of sake to understand the taste.
I am "Iwase Sake Brewery". The brewery was founded a long time ago, and it is not certain when the brewery was born. It used to be called "Iwase Sake Brewery" after the founder, but the name was changed to the current "Koukoku-haru" during the Meiji period (1868-1912). The origin of the name "Phantom Waterfall" is said to be "Ken-Otaki" located in the upper reaches of the Kurobe River, at the very end of the Kurobe Gorge, which is called "Phantom Waterfall" because it is hard to reach due to its steep terrain, even though the sound can be heard.
When I first put it in my mouth, I thought, "Oh, it's a beautiful sake," but as soon as I swallowed it, the aftertaste that came up came out, and I wondered how peculiar it was! A bottle purchased at a supermarket. It is a local sake from Kurobe.
We had it with kama-age shirasu (dried young sardines) and shishamo (dried shrimps). It was a sake that goes well with seafood, which is typical of Toyama sake.
Really refreshing and light
The acidity is quite strong.
I think it has some sweetness, but the acidity prevails and makes it taste clean and refreshing

It was brewed using deep-sea marine yeast isolated from the deep waters of Toyama Bay.
It surely goes well with seafood!
