romance I was talking with the person next to me about how good the sake from Fukushima is. The name was derived from the phrase "sake brewing is romantic" and the character "Ichi-go," which indicates the number of brewing, which can be read as "Hitoroman (one romance). In addition to the normal three-stage brewing process, all of our sake is brewed with glutinous rice in a four-stage process, which involves the use of glutinous rice for the fourth stage.

pine cricket This is a local version of the Asakusa fashionable Schwach purchased when he came back to his hometown. It seems to be a local favorite. The initial taste is a little bitter, but the aftertaste is refreshing. The name "Matsumidori" comes from a 300-year-old pine tree in the garden of the brewery, which was landscaped in the Edo period. It was the first brewery in Aomori Prefecture to receive kosher certification, which indicates that the food is safe and of high quality in accordance with Jewish doctrine, and is also suitable for the overseas market. Ubusuna Ninoujou My brother gave me this when I was talking about sake. I am grateful. Sansho" is a new brand created in December 2021 In 2014, Mr. Kanda studied sake brewing at Asahi Shuzo, known for "Otters" in order to rebuild his brewery, which was in financial crisis. The label design is based on the motif of microorganisms that are important for sake brewing and the environment of the soil. The origin of the name comes from the word "ubusuna," which means "the land of birth, the gods of the land. This word expresses our brewing philosophy of "brewing the best sake from the indigenous production climate and the spirit of prayer.

Eurasian scops owl (Otus scops) It was a wine and Japanese restaurant, so I had wine. Derived from the Kuzuryu River that flows through Fukui Prefecture. Icchorai" is a dialect of Fukui. It means "the best thing (for me).

kid Nice color label, summer liquor-like. Coined from a combination of "Kii-no-kuni," the old name of Wakayama, and "land" (dochi) During the chaotic postwar period, sake brewing had to be suspended, but Yasumasa Yamamoto, the second generation brewer, made a petition speech to the Diet and received permission to resume the brewery. The desire at this time to "brew sake in peaceful times" was the origin of the brewery's name, "Heiwa Shuzo" ("Peace Brewery"). At the International Wine Challenge (IWC) in 2020, "Kido Mugyozan Junmai Ginjo" was awarded the top prize in the SAKE category, "Champion Sake". In the same year, it also won the "Sake Brewery of the Year" award, achieving a double crown.

Kinoene Byakya This is my second refill. I talked about how good it was with the person next to me at Asakusa Fashionable. Although I think it tastes better than the usual ones, it has a Koshi-like quality. It tastes like peaches and mangoes. A sense of security like my parents' house. The sake level is undisclosed, about -10. Last year it was -12.4, so there are some likes and dislikes.

Machida Shuzo I heard that it won a gold medal at this year's New Sake Competition. It was named after the brewery's name in the hope that it would be widely known. Currently, the brewery is led by Akiya Machida, the fifth-generation brewer, and his wife Emi Machida, the toji (chief brewer), who are married to each other.

ninja (persons in feudal Japan who used ninjutsu for fighting ninjutsu) Kouga reads "Kouka". Iga is "iga". I didn't know that. The name derives from the fact that Koka City in Shiga Prefecture, where the brewery is located, is known as the home of ninja.

Eikofuji Issenfusin I talked with my neighbor about how rare it was, and we talked about somewhat glorious Fuji. Eikofuji's dry, filtered, fired and watered limited edition sake, which is rare among Eikofuji's limited edition sake. The name comes from the addition of the character "Eiko" (glory) to the original sake name "Fuji" (Fuji), which was used when the company was first founded, to express the wish for prosperity. It is also said that the symmetrical character "Eiko Fuji" represents the brewery's philosophy of "sake brewing without backs and sides.

Nabeshima Akaiwaomachi Label Cool The name "Nabeshima" comes from the Nabeshima family, which ruled the Saga domain for about 300 years during the Edo period. When we decided to create a new brand of sake that would represent Kyushu and be loved and honored by the locals, the people of the prefecture decided on it through a newspaper contest.

Gekka Utashiro (member of a subgroup of the Russian Social Democratic Workers' Party) I drink Gagakuyo because it is often recommended. The location, Kamo Utashiro, means "land in lieu of a poem," and it is said that when an emperor was exiled to Sado, he would read a waka poem and if he liked it, he would receive land as a reward. The current head brewer, Senichi Katoh, became the brewer at the age of 24, and he himself is the toji (master brewer) of the brewery. Evaluation: The sake has received high acclaim both in Japan and abroad, including being selected as JAL first class in-flight sake in 2023.

Takachiyo" is mainly unfiltered, unfiltered, unfiltered sake with a fruity flavor that emphasizes sweetness and juiciness. It was named by the first brewer in the early Meiji period with the wish that "many people will prosper in a thousand and eight thousand years.

common rue (Ruta graveolens) I could not read the calligraphy at all when I went to the Shokokuji exhibition at the Geidai Art Museum. It might be easier to remember it as Nara if I saw the calligraphy. It comes from a mountain called "Shinomine" in Gosho City, Nara Prefecture. The label is seal script (tensho). It is one of the oldest typefaces of Chinese characters and refers to the general name for the typefaces before the clerical script.

Kankiku True Kankiku was killed in a blink of an eye at a bar. So popular. The standard sake for the super-limited Occasional series, which focuses on unfiltered, unfiltered sake brewed only once a year. Mr. Yanagishita, the master brewer, originally worked as an aircraft mechanic for JAL at Narita Airport, but his attachment to his hometown of Chiba and his desire to do a job that only he could do led him to the sake brewing industry. After joining Kangiku Meikozo in the beer brewing department, he was selected to be the toji (master brewer), despite his lack of experience, when the previous master brewer retired. He initially trained under his predecessor and is now in charge of sake brewing as a toji. The name "Kangiku" is said to have come from the appearance of Kangiku (chrysanthemum blooming in winter), which blooms strongly and beautifully even in the coldest season. Bengalese peacock (species of peacock cichlid, Paph. buergeri) I would like to go back because I didn't think they had fried tofu from Mt. Definition. I thought it was Honmaru, a place where one can easily have a drink by oneself. The name was derived from an accidental permission when Tatsugoro Takagi XIV applied to register the trademark, which was later made more widely known by Akitsu Takagi (高木顕統), the 15th generation. Tatsugoro Tatsugoro XV assumed the name Tatsugoro in 2023. Kamimoro Shira A term used to describe a brewery that uses a higher degree of polished rice than moroshiro, which uses polished rice for both koji and kake.

stone centipede (Lithobiomorpha spp.) Summer sake is also delicious. It is derived from "Ishizuchi" located in the southern part of Saijo City, Ehime Prefecture. Ishizuchi Sake Brewery has an unusual brewery family sharing the brewing duties, and the family cooperates together to make sake.
