Miyamanishiki m310 The name "Nanbu Bijin" refers to the culture and beautiful nature of the former Nanbu domain in Iwate Prefecture. The Nanbu region, which straddles what is now northern Iwate Prefecture and part of Aomori Prefecture, has long been blessed with high-quality rice and water. The name "Bijin" expresses the beautiful quality of sake produced by the region's pure water and cold climate, and also signifies that the sake is the culmination of the Nanbu Toji (Southern Toji) technique handed down in the Nanbu region.
