Siebold's wild ginger (Asarum sieboldii) Traveling in Sendai Fruity, refreshing and delicious. It is a combination of "miya," the name of Miyagi Prefecture where the brewery is located, and "kanbai," the first flower to bloom during the harsh winter. Domaine Sake Ms. Iwasaki, the fifth generation brewer and female toji, plays a central role in the brewing of this sake.

Kosai UCHIGASAKI: Traveling to Sendai 100 yen automatic tasting machine Fujiwaraya PB Uchigasaki Shuzo "Houyo" etc. Sweet, fruity, and delicious. The label is nice with "bamboo and sparrow", the most famous of the eight Date family crests. By the way, the sparrow has the mouth of A-Un. Named after the famous monk Toraya Souyotsu, who served as Date Masamune's tutor during his childhood. I paid a visit to the mausoleum of Lord Date Masamune "Zuihouden" and "Hoyo" although they do not seem to be related.

zitting cisticola (Cisticola juncidis) Received at a brewery event. Casual label. Easy to drink. Named for the combination of the founder's family name "Higashi" and "Tsuru", a symbol of longevity and good fortune. The brewery has been in business since the Edo period but temporarily went out of business; in 2011, the 6th generation brewer reestablished the business and has renewed the quality of the sake to be modern and aromatic.

When the trademark was registered in the Meiji period (1868-1912), it is said to have been named with the meaning of "sake as noble as chrysanthemum and representative of the region." It is a long-established sake brewery with the oldest history in Iwate Prefecture (established over 250 years ago).

Kirinzan (brand-name beer) I'm traveling to Sendai and Fukushima tomorrow. I didn't have any open bottles of sake, and since I had some karaoke, I stopped by Kichiike and bought some that I could finish drinking. It's a nice, light, dry sake with a nice mouthfeel, like Niigata sake. It is named after Kirinzan (Mt. Kirin), which is located right behind the brewery.

The name "Eikou Fuji" comes from the fact that the character for "Eikou" was added to the original sake name "Fuji" when the brewery was first founded to express the wish for prosperity. Chinese cabbage (Brassica campestris var. amplexicaulis) shata (unit of land area equal to one-fifth of a tan; ~1950m) I tried it because it was recommended to me by Manager Sasaki, who recommended it to me. It tastes like Tengumai and is delicious. The label is cool too. Named after an old tengu legend in Hakusanroku at the foot of Mt. Famous for re-evaluating and reviving the powerful flavor of Yamahai. Currently, the 8th generation, Mr. Kazunari Kurumata, has taken over the brewery and is focusing on overseas exports and aged sake.

Romantic Hanazumi I forgot I took it a month ago and took it again. My memory is terrible. The name of the sake was derived from the phrase "sake brewing is romantic" and the character "Ichigo," which denotes the number of the brewing process, which could be read as "Hitoroman. In addition to the normal three-stage brewing process, glutinous rice is used for the fourth stage of brewing, which is the glutinous rice four-stage brewing process, in all cases.

From the Buddhist term The name comes from the Buddhist term "Rokkonshoshou (purification of the six roots). Rokkonshō refers to the six sense organs (eye, ear, nose, tongue, body, and will) and means to purify the body and mind. The brewer's wish is that the drinker enjoy it with all five senses plus the mind.

water shield (Brasenia schreberi) Suehiro. Gensai is often drunk these days. Delicious. I had been to Kaegakura on a trip to Fukushima after Corona. Suehiro Shuzo's new brand announced in April 2024. Until then, it was considered a sake for the sake competition. The Kaegura is designated as a national tangible cultural property and is popular as a tourist brewery. It was named after Tanaka Harunaka, a famous retainer of the Aizu domain.

YOKOYAMA Omoya Shigeke Shuzo is a brewery famous for Iki shochu. In 2018, a new sake division, Yokoyama Brewery, was established on Iki Island to produce sake. Mr. Taizo Yokoyama traveled around the country to train at sake breweries and acquired the skills of the Nanbu Touji. Brewing sake on Iki Island has become a hot topic of conversation as it is the first time in about 70 years that sake has been brewed on the island. Ikinoshima is located between Tsushima and Kyushu

Gangi Funade Yaoxing I had heard a lot about it and was glad to drink it. The taste was good, just the way I like it. Gangi is a stair-like structure at a boat landing, and the one in Hiroshima is a zigzag structure like a flock of geese in flight, so I think that is what it is. Since the founding of Yaoshin Shuzo, the brewery has been run by a toji (master brewer) and brewers who come across the sea from the island of Shukujima, so it is a return to the roots of the brewery and a new way of sailing. The name "Yakushin" means "return to the starting point" and "new departure" in Japanese.

cinchona I was at a ryokan construction project in Hakone. After work, I went to Tenya for the first time in about a year due to various reasons. It has been a while since I had tendon, and it was delicious. This Gekkeikan goes well with fried food. Founded in 1597 by founder Jiemon Okura. The company name Gekkeikan was adopted in 1905. The laurel crown was a "symbol of glory" given to the winners of the ancient Olympic Games, and the name was given as a sign of quality and pride. First bottled sake sold in Japan.

Eikohuji Crimson Glory Sake strength -66, acidity 3.4, sweetness like plum wine due to the red yeast. It tasted like it could be served on the rocks or with lemon and soda. Delicious.
