The name "Zaruso" comes from the local name of the brewery, "Koaza Zaruso" (小字残草). The name "Zanzou" comes from "Koaza Zanzou," the local name for the small area where the brewery is located, and the prestigious "Yomogi" was added to it.
I was reading an article a little while ago.
The price of processed rice will be raised this fall and the price of rice may double. Agriculture is not going to do well even if a company like Uniqlo does it, and even now it is very hard when the sake drinking population continues to decline. I was wondering if the sake industry is becoming more and more like a domaine, or if they will decide to call even imported rice sake. Speaking of Kanagawa, Izumihashi is now a domaine, isn't it?
