Aurochs This year it is an unfiltered unpasteurized sake that has been aged in ice temperature for one year. Mature and robust flavor. Fresh and nutty. Heitaro Ishihara, the third-generation brewer, learned that "in ancient China, sake was called 'Heaven's Biroku,'" and named the sake "Wangroku" to express his strong desire to make it a sake with a kingly character among the "Biroku" (= abundant blessings given from the heavens). The name "Oroku" was given to the sake.

Sharaku MIYAIZUMI In Aizu, there is a famous sake brewing family that has been in business for 400 years, from which the Miyaisumi and Higashiyama families split off. When the Higashiyama brewery, which made Sharaku (classic Sharaku), went out of business, Yoshihiro Miyamori, the current president of his relative Miyazumi Meizumi Brewery, took over the brand name "Collage" and created a completely new concept, which is now highly acclaimed. The label of classic Sharaku was Ichikawa Ebizo by Toshusai Sharaku, but now it is only letters. As a side note, I personally believe that the name "Sharaku" comes from the Japanese word "pun" (pun).

kachikoma Kiyoto Kachikoma Kiyoto is a very small brewery, producing only a few hundred koku per year. The brewery is a "handmade" brewery where the brewer himself is involved in all processes. The text on the label is by Mitsuo Ikeda, an artist who is a fan of Katsuma. The origin of the name "Katsikoma" comes from Keisuke Seito, the first brewery owner, who returned from the Russo-Japanese War in 1906 (the year after the war ended) and opened a sake brewery in his hometown, Takaoka City, and named it "Katsikoma" to commemorate his victory in the war. The intent of the piece is not known.

try rocker The label keeps saying "lizard". I rather like it. It is actually a giant salamander that grows on Mount Iwaki in Aomori. Incidentally, the yamori is a gecko. This brand was officially put on sale in September 2023, followed by full-scale distribution as new sake brewed in a new brewery from October onward. Previously, it was called "jyobari."

rockmelon pine cricket This sake was purchased on the occasion of Schwach's homecoming. More modern and floral than the previous Matsumidori, easy to drink and delicious. Slightly dry. From the Buddhist term The name comes from the Buddhist term "Rokkonshoshou (purification of the six roots). Rokkonshō refers to the six sense organs (eye, ear, nose, tongue, body, and will) and means to purify the body and mind. The brewer's wish is that the drinker enjoy it with all five senses plus the mind.

Eikouji era (1113.7.13-1118.4.3) It was just before Tanabata, the day of the summer solstice, and I was eating an octopus. The name comes from the fact that the character for "Eiko" was added to the original sake name "Fuji" when the brewery was first founded to express the wish for prosperity. It is also said that the symmetrical character "Eiko-Fuji" represents the brewery's philosophy of "sake brewing without backs and sides.
