Firmly sweet with almost no sourness or bitterness. Melon
Named after a brewery that learned from "Kamotsuru" in Hiroshima, the name "Shinanotsuru" was borrowed from one of the characters for "crane".
Since 2001, the brewery has converted to a pure rice brewery for all of its products. Currently all Ginjo-style brewing (low-temperature, long-term brewing).
The name derives from the nickname and haiku name of the first president, Kujiro Kitahara. He used the character "satsuki" (皐, satsuki, satsuki), which is the same character as the character "sawa" in Tazawa Shuzo, the predecessor of Choseisha, as his haiga name.

Contrary to the refreshing appearance of the label, the grain rice is surprisingly tasty.
The acidity is citrus-like, and the texture is light.
However, the sweetness and umami taste is a bit between the eyes, and I don't like it.

Sweet to the touch. Thick and syrupy texture.
Not juicy, but dense yet fresh.
Dark sweet, but with a slight astringency in the second half,
It does not expand, so there is no clinginess, and the taste converges smoothly.

Eikofuji Issenfusin
I talked with my neighbor about how rare it was, and we talked about somewhat glorious Fuji.
Eikofuji's dry, filtered, fired and watered limited edition sake, which is rare among Eikofuji's limited edition sake.
The name comes from the addition of the character "Eiko" (glory) to the original sake name "Fuji" (Fuji), which was used when the company was first founded, to express the wish for prosperity. It is also said that the symmetrical character "Eiko Fuji" represents the brewery's philosophy of "sake brewing without backs and sides.
