Nagano famous sake Yamadanishiki Unfiltered Nama-shu (1) I had a similar impression of Genshu Mai and Mikotsuru, and I was able to get almost the same specs at the same time, so I compared them 😄. First of all, Genshu Mai: ✌️ The aroma and attack are very fruity, and there is a strong sweetness with a honey-like impact. However, the sweetness does not last long and fades away, and after swallowing, the flavor is refreshing, like grapefruit. I haven't had it in a while because it's hard to find, but it's still good 😁. The best match for me has always been pork cutlet stew, but the cheese hamburger steak I tried this time was pretty good too 😋. It's a good match with something hearty.

A love that has lasted over two years has been fulfilled. I had a bottle in Ito izakaya two summers ago and enjoyed it so much that I was looking for a bottle to buy someday. I finally met the devil maiden in love😄. It is slightly effervescent and has a rather firm, juicy sweetness, but the mouthfeel is light and cuts through easily. The aroma is greenish, like unripe bananas🍌. Fresh and easy to drink, it goes well with oily fish 🐟.

[Favorite registration inevitable 😁]. I got the Omachi version of Mansyuusen LE Nama Sake which was amazingly delicious when I had it for the first time at the beginning of the year😙. Like the Yamadanishiki we had at the beginning of the year, it has a pleasant minty aroma and a slight effervescence 😊. The sweetness that comes from both sides of the mouth and the clean finish are similarly delicious and do not disappoint 🥰. The Yamadanishiki had a more crisp acidity in the aftertaste, but this one has a more robust umami, as is typical of Omachi. The overtone is somewhat grape-like. After two bottles in a row of such high quality, I'm going to put this one in my favorites list 😄. Now I want to buy the one that is not LIMITED 😍.

[Taste and aroma come from deep inside 😁]. Gentle but fruity🥭 with a core fruity 🥭 upper aroma. The attack is soft with a light acidity, but the complex sweetness and flavor overflows from the back of the bottle. The end of the drink has a grapefruit-like citrus coolness 🍋. I don't like sake that is too light, but this bottle has an excellent juicy sweetness behind the seemingly light impression, with a three-dimensional flavor that is delicious 😆.

The spoils of my trip to Uonuma. We got a bottle of Hakkaisan in our hometown that we had never seen before in Tokyo😄. It is an aged sake that has been fire-aged and stored in a snow cellar for 4 years. I can't stop smiling just at that description 🤭. Aka Echigo is quite punchy with a rich aftertaste, but this one has a surprisingly smooth aftertaste that cuts through without changing the juicy impression of the attack. The roughness of Aka-Echigo has been calmed down through fire-work and aging. The sweetness, firm sake flavor, and refreshing aftertaste are perfectly balanced and very tasty.

Warmed up, it really comes into its own. All the noukuchi I've had so far have had brewing alcohol in them, but this is the first time I've bought a raw version of a standard junmai sake: ✌️ It looks like it's been aged for at least a year, but you can't really taste the maturity😅. It was hard and acidic right after opening the bottle, but after the third day, the umami took over and it became a little mellower. When warmed up, the balance between acidity and richness improved and it was more enjoyable than cold sake👍.

[dry rabbit 🐰 Not much of a top note, but a refreshing aroma like mint🌿. The fizziness is reasonably strong, and the mouthfeel is dry with not much sweetness. A refreshing sake with a fizzy, sour, and spicy character. The label on the back says "sweet and spicy" for the Yamadanishiki sake I had before, and "acid and delicious" for this Omachi sake 😄.

Comparison of nigori sake (Wakayama's favorite nigori sake) Following Minakata, Chokyu ✌️ This is the fire-brewed version of the nigori sake we drank in February. I buy every bottle of Chokyu I see that I have never had before 😆. The first thing that surprised me when I drank it was that there was no fizziness at all 😲. The aroma is somewhat almond-like, and it's cloudy with a lot of orioles, so it's like diluted almond milk. But it also has a sourness to it, so I felt a bit unbalanced 🤔. I prefer nigori sake with a fizzy taste 😄.

Comparison of nigori sake from Wakayama's favorite brands (1) We compared nigori sake from two of our favorite brands, Minakata and Chokyu. First, let's start with Minakata 😄. The first one has a fresh and fruity aroma like apples and a strong fizzy feeling. It has a full, sweet flavor and a crisp, refreshing taste, and is just as delicious as one would imagine 😍. It's been quite a while since I've had Nanpo, but I don't remember it ever being out of place and I think it's a good brand with a high level of quality 😁.

[Power spots for good fortune: ⛩️] The first Kaiun to be drunk in a long time. All Yamada Nishiki, unfiltered raw only at this time of the year. ✌️ It is sweet from the top aroma, and is actually more fruity and sweet-tasting than one might imagine. It has a fresh, slightly effervescent feel typical of nama-shu, and the sweetness and powerful umami in the attack, combined with the smooth acidity in the finish, make it easy to drink and simply delicious😍. I first encountered Kaiun about 10 years ago when I was not yet hooked on sake, when I paired it with sushi at a sushi restaurant in Ito and it was amazingly delicious 😁. It's a brand I remember and I still want to drink it regularly 😊.

I've brought Mr. Super Rare with me. Outside of my hometown, this rare sake is only available by reservation at Kagataya Sake Brewery in Tokyo and Kadoya Sake Brewery in Osaka 😲. I had been through a few years since I knew it existed, but when I saw Rafa's rave reviews last year, I decided to buy it this year 😁. The aroma is mild but sweet, reminiscent of honeyed apples 🍎. The soft sweetness is felt first, followed by the richness and umami that overflows. The aftertaste is slightly spicy and very drinkable and very tasty 🥰. I'll be buying this again next year 😄.

No.1 popular bottle of Murayu 😆]. Murayu Kameguchiri is only available at this time of the year. It has a mild fruity aroma 🥭 and a fresh, slightly effervescent feel, with a soft mouthfeel that makes it very easy to drink. It has a juicy sweetness on the attack, but the aftertaste is clean and spicy with a strong alcohol taste. A gorgeous bottle with a great drinking experience 😁. I paired it with yellowtail teriyaki, and it matched very well because this sake has the strength to go head to head and not be defeated 😋.

[INTENTIONAL FOUL 😝] Sorry for the old terminology... I'm from the slam dunk generation. This is my third foul drink in a row (©T-Kaji). Foul but medal-worthy taste 🏅 (but still foul) A little less Ori this year? (Or maybe it's just my imagination) The taste is the same as always, with a fruity aroma like pear🍐, strong fizziness, and a good sweetness. It's wine yeast, but without the weird sweet and sourness that I don't like, so I can gobble it up 😊. After crab cream croquettes the year before last and soup curry last year, this year's foul marriage is an omelette with rice 🥚. Well, there is no reason why they don't go well together 😋.

[Last year's No. 1 is already back 😍] We got another bottle of the most memorable bottle of 2023 at the end of the year👍. It has a higher alcohol content than the Gorin we had one year ago, and the rich, mature taste is even stronger and richer. It is not very sweet, but it is full of a thick, honey-like flavor, and is still one of my favorites. I have been avoiding Nouguchi because of its high price, but if I can get this much satisfaction, I will have to buy it outside of my hometown 😅... 😅.

Already this year's No.1 candidate appears❗❗❗ I saw the sticker on the back of the bottle and decided to buy it immediately. I love sake that has been aged in ice temperature for almost a year 😍. The top aroma is mild and white ball type. It has a fairly robust umami and a slight matured taste that lingers in the aftertaste that is right up my alley ⚾. Mild and easy to drink with a sense of maturity, it's a real treat 😄. It seems to go well with all kinds of Japanese food, but I loved it with scallops grilled in butter and soy sauce, which is full of flavor 😋. It's only February, but I'm already happy to have found a bottle that will be my personal No.1 this year 🥰🥰.

Red Beko✕Red Echigo🐂] Aka Echigo was purchased for the first time in three years. It has a fresh, apple-like aroma on the nose. The attack is full of umami, followed by a firm spiciness. The overall impression is mellow, and the alcohol taste that spreads after finishing the bottle makes it very satisfying to drink 😆. This is addictive flavor 😄. I paired it with sukiyaki, which is a very punchy sake, so it matched well without being overpowered 😋.

Nigori Sake (Japanese rice wine) First time drinking Chokyu's nigori 😊. I always buy Chokyu when I see the new label ✌. The ori is quite a bit more and has a strong fizzy feel to it. It has a lot of umami and a hint of sweetness that is typical of Chokyu, and yet it has a clean dryness that makes it a dangerous sake that you can drink with gusto 🤭. The impression is quite similar to Hirotogawa's nigori👍 It goes well with western food, and the omelette was a nice match 😋.

It's different from the impression I had on my own, but it's good 😆. I have never had a chance to drink Kitajima until now. Limited edition unfiltered raw sake directly pumped ✌️ The top aroma is mild but sweet. It is as fresh and crisp as the specs, with a moderate sweetness but very clean acidity and a clean finish 😄. I had imagined it to be a bit more robust, but it is juicier than I expected 🥤. However, the sweetness is not outstanding, and the flavor and acidity are strong and well balanced 🥰.

Sour cream 寫楽] 寫楽's seasonal, unfiltered, unpasteurized sake: ✌️ The aroma is like a mixture of white eggs and banana🍌, with a reasonably strong effervescence. It has a somewhat creamy flavor that cuts through with acidity. The hint of aroma is also banana-like🍌. The sweetness increases from the third day after opening the bottle, giving it a more rounded impression 😄. It has been a while since I drank 寫樂 at home, but it is a popular brand and is easy to understand 🥰.

[White triple star 😁] Fully made-to-order, medium-order version of the triple star. It has a sweet aroma like ripe melon🍈 with a slight effervescence and is very fresh. The mellow flavor with soft sweetness fills the mouth, and the aftertaste is sharp with sourness and spiciness. Very well-balanced flavor, very drinkable and very tasty😍😍. I paired it with chicken nanban this time, but I think fried foods with a slight sourness would go well with it 😋😋.
