[One with a different hair color. First time, Aru Soe Genmai 🎉. All of the Genmai I've had so far have been junmai, and they all tasted similar in their own way, but this bottle with aluzome is clearly different 😊. The ripe fruit sweetness that is typical of Genmai is subdued, and the taste is rather refreshing. It has a bitter aftertaste. The aroma is somewhat nutty. I felt the depth of nostalgia that this kind of expression is also possible 👍.

[Grandma's liquor in a candy store😁] The bottle is too energetic, so I had to stop a few times to open the bottle. I had a hard time opening the bottle when I drank it 2 years ago, come to think of it 😅. It's quite strongly carbonated and has a slight sweetness, but basically dry and sour. It's perfect for this time of year when it's getting hot and best drunk with one ice cube floating on top 😆. (I think it's a bit dangerous in the middle of summer because you'll want to guzzle it down... 😄)

[Juicy Crane Age 🧃] This bottle of Tsururei is a juicy, sweet-and-sour sake made from raw sake O Omachi. It has a very distinct flavor, and the sweet and sour taste is accompanied by a solid alcohol content of 17%, which makes it very drinkable, even if you are not a fan of sweet and sour sake. It can be served with Japanese food, but it is also strong enough to be served with spaghetti meat sauce 🍝, so it has a wide range of uses 😄.

OLIVE des MUSCATS It's been quite a while since I've had a Kagawa sake. ☺️ The label on the back of the bottle and the store's POP were both pushing muscat in the front, but both the top and the hint of aroma were just like muscat 😄. It's not my favorite sweet and sour sake, but this bottle is quite good thanks to the slight effervescence and high alcohol content 😁. It's especially easy to drink in the hot summer (although it's dangerous because of its high alcohol content 😅). I finished it on the second night of opening the bottle because it seemed to get a little harder to drink for me once the fizziness was gone 👍.

[Full specs of Japan's oldest sake brewery 😉 ] Junmai Daiginjo, ice cold aged, unfiltered raw - all my favorite words in a row, a bottle that is impossible to pass up 😁. I didn't know this, but it was founded in 1141 and seems to be the oldest existing sake brewery in Japan... Σ 883 years ago❗❗❗ The alcohol aroma is strong, though the strength is not strong. It is quite dry, and the most impressive thing is the bitterness of the aftertaste. I didn't notice much acidity and it was probably the most bitter sake I've ever had 😳. It is said to be aged for one year, so I honestly wish it had more umami and a sense of maturity with hints of incense, but I learned a lot about it, including its history. Also, it was a very unexpected but good match with sweet and tasty chicken liver stew 😋.

[You have a good insect system too! 😁] I tried it at a pub I know and it was so good I bought it at the liquor store for home drinking 😄. It's an 18% alcohol content, spicy and robust, but the moment you take a sip, you can feel a more rounded umami flavor, which quickly gives way to an interesting acidic and spicy quality. It was very easy to pair with sashimi, but the best match was cold chilled Chinese noodles with sesame sauce. I really enjoyed this unique drinking combination at home. ✌️ I've had a lot of sake with insect motifs that I didn't like, but this one was quite good: ☺️

You're No. 1. I was blown away by the taste of this bottle when I drank it for the first time the year before last. Since then, it's a must-buy bottle for me every year. ✌️✌️ It has a fruity aroma, just a little bit of chili, and a nice mouthfeel. The sweetness is felt for a moment, and then the umami that spreads afterwards is thick. At the end of drinking, the spiciness and rum raisin-like aroma that is typical of matured sake remain. Everything I look for in a sake at a high level 😆💯.

Designated as a priority purchase for the second half of the year. This is my third bottle of Manjusen this year. The previous two bottles were LIMITED EDITION, but this time I got Jungin Nama Sake ✌️ It is easy to drink with a fresh muscat-like aroma and a perfect chirichiri-ness: ☺️ The sweetness is moderately refreshing and the bitterness in the aftertaste is delicious. Matches well with rich egg dishes😋. The grapefruit aftertaste gets stronger as the day goes on, but I prefer it right after opening the bottle😄. Last year I liked Chokyu and bought it a lot, but I think I will drink a lot of Manjusen in the second half of this year 🥰.

This is the flagship 🚢. Although it is a brand in my Hall of Fame, I have not enjoyed drinking Oroku for a while due to its high price, but I still want to drink it regularly 😍. This time it's the Jogi named after the brewer ❗ It is R04BY, but the long low temperature aging of Ohroku is still a wonderful thing 🥰. It has concentrated umami flavor without losing the freshness of the unpasteurized sake, and the balance between the firm spiciness in the aftertaste and the mature aroma in the hints is perfect 💯. I will buy this sake more often and more often 😁.

[Voluntary aging in store! 😳] This nigori nama sake touts its freshness, but the production date is November 2023... 🤔. I don't know if they aged it on purpose or if it was just unsold until now, but I'm interested in the taste after aging it in the store for about 6 months 😁. The gasiness that the label says on the back has almost disappeared and my first impression was that it was somewhat lacking, but after the second day my impression changed completely and I found the contrast between the rich umami and the solid bitterness to be an interesting sake 😊. It has a very deep flavor, and if this is what the store was aiming for, it's just amazing... 🙇.

[It's been a while since I've been to Haneya, but it's an odd one 🪶] Haneya has been my favorite brand since I first got into the sake swamp, but there are many stores that carry it within my living area, and I have been buying it less and less lately, probably because it is not so special. 🙇‍♂ This time, for the first time in about 2 years, I bought a limited edition sake with an elaborate label 😁. I thought it was quite sweet at the moment I drank it, but it disappeared in an instant and was followed by a mineral acidity. It's been a while since I've had it, but I still get excited when I drink Haneya 🔼. This time, hokki-gai sashimi was the best marriage 😋.

Nagano famous sake Yamadanishiki Unfiltered Unrefined Nama-shu (2) This is Mikotsuru following Genmai. This one is more highly polished, but otherwise has the same specs as Genmai 😙. Genshu Mai had a sweet aroma like pear, while Mikotsuru had a refreshing aroma like apple, and Mikotsuru had a slightly stronger effervescence. The taste was as fresh as the aroma, and the sweetness was milder than that of Genshuu. Overall, Mikotsuru is more refreshing and both are high quality, but Mikotsuru is more to my taste 😆. Although the two brands seem relatively similar, you can recognize the difference when you compare them 😄. Both are delicious, so it was a very enjoyable drinking comparison 🥰.

Nagano famous sake Yamadanishiki Unfiltered Nama-shu (1) I had a similar impression of Genshu Mai and Mikotsuru, and I was able to get almost the same specs at the same time, so I compared them 😄. First of all, Genshu Mai: ✌️ The aroma and attack are very fruity, and there is a strong sweetness with a honey-like impact. However, the sweetness does not last long and fades away, and after swallowing, the flavor is refreshing, like grapefruit. I haven't had it in a while because it's hard to find, but it's still good 😁. The best match for me has always been pork cutlet stew, but the cheese hamburger steak I tried this time was pretty good too 😋. It's a good match with something hearty.

A love that has lasted over two years has been fulfilled. I had a bottle in Ito izakaya two summers ago and enjoyed it so much that I was looking for a bottle to buy someday. I finally met the devil maiden in love😄. It is slightly effervescent and has a rather firm, juicy sweetness, but the mouthfeel is light and cuts through easily. The aroma is greenish, like unripe bananas🍌. Fresh and easy to drink, it goes well with oily fish 🐟.

[Favorite registration inevitable 😁]. I got the Omachi version of Mansyuusen LE Nama Sake which was amazingly delicious when I had it for the first time at the beginning of the year😙. Like the Yamadanishiki we had at the beginning of the year, it has a pleasant minty aroma and a slight effervescence 😊. The sweetness that comes from both sides of the mouth and the clean finish are similarly delicious and do not disappoint 🥰. The Yamadanishiki had a more crisp acidity in the aftertaste, but this one has a more robust umami, as is typical of Omachi. The overtone is somewhat grape-like. After two bottles in a row of such high quality, I'm going to put this one in my favorites list 😄. Now I want to buy the one that is not LIMITED 😍.

[Taste and aroma come from deep inside 😁]. Gentle but fruity🥭 with a core fruity 🥭 upper aroma. The attack is soft with a light acidity, but the complex sweetness and flavor overflows from the back of the bottle. The end of the drink has a grapefruit-like citrus coolness 🍋. I don't like sake that is too light, but this bottle has an excellent juicy sweetness behind the seemingly light impression, with a three-dimensional flavor that is delicious 😆.

The spoils of my trip to Uonuma. We got a bottle of Hakkaisan in our hometown that we had never seen before in Tokyo😄. It is an aged sake that has been fire-aged and stored in a snow cellar for 4 years. I can't stop smiling just at that description 🤭. Aka Echigo is quite punchy with a rich aftertaste, but this one has a surprisingly smooth aftertaste that cuts through without changing the juicy impression of the attack. The roughness of Aka-Echigo has been calmed down through fire-work and aging. The sweetness, firm sake flavor, and refreshing aftertaste are perfectly balanced and very tasty.

Warmed up, it really comes into its own. All the noukuchi I've had so far have had brewing alcohol in them, but this is the first time I've bought a raw version of a standard junmai sake: ✌️ It looks like it's been aged for at least a year, but you can't really taste the maturity😅. It was hard and acidic right after opening the bottle, but after the third day, the umami took over and it became a little mellower. When warmed up, the balance between acidity and richness improved and it was more enjoyable than cold sake👍.

[dry rabbit 🐰 Not much of a top note, but a refreshing aroma like mint🌿. The fizziness is reasonably strong, and the mouthfeel is dry with not much sweetness. A refreshing sake with a fizzy, sour, and spicy character. The label on the back says "sweet and spicy" for the Yamadanishiki sake I had before, and "acid and delicious" for this Omachi sake 😄.

Comparison of nigori sake (Wakayama's favorite nigori sake) Following Minakata, Chokyu ✌️ This is the fire-brewed version of the nigori sake we drank in February. I buy every bottle of Chokyu I see that I have never had before 😆. The first thing that surprised me when I drank it was that there was no fizziness at all 😲. The aroma is somewhat almond-like, and it's cloudy with a lot of orioles, so it's like diluted almond milk. But it also has a sourness to it, so I felt a bit unbalanced 🤔. I prefer nigori sake with a fizzy taste 😄.
