ちゃんまやPFreshness Otter First purchase of the raw version of Otter Festival Sanwari Kubun, which is only released twice a year: ✌️ From the moment the bottle is opened, a fruity aroma like pears spreads out in a whiff. This aroma alone is a definite winner👍. After the slight fizziness that is typical of nama-shu, a gentle bitterness and sweetness spreads in the mouth, and it's absolutely delicious 🥰. It has a sharp, smooth aftertaste that is not too heavy, so it's dangerous to gobble it up 😄. It's a bit expensive, so it's no surprise that it's delicious, but it's more than satisfying beyond its price!

ヤスベェChanmaya P, nice to meet you 😀. I just received this sake yesterday too, so I had to react 😀. This sake was really worth more than the price 😀.

ちゃんまやPThank you, Yasbay ✨. I like the bottle, it looks luxurious and a bit special 😄.

Noguchinaohikokenkyujo観音下 2018 Vintage vol.2原酒無濾過
121
ちゃんまやP[Reading: Kanagaso! Aged sake from Noukuchi is available at Furusato Tax Payment❗ The color is a little dark ivory, as is typical of aged sake, and the aroma is of grain, which is also typical of aged sake. It has a nutty 🥜 flavor and smooth mouthfeel, not at all trendy and modern, but mildly delicious 🥰. The herbaceousness of the hints and the strong astringent bitterness of the aftertaste are also nice and let you know how deep the sake is: ✌️ It is a 2018 vintage, but it is not overripe for a 5 year old sake, a high level bottle that should be called "quintessential Farmouth" 😋.

ちゃんまやPI knew Yamane Keishiki would be like this😄]. Last year I could buy Zenkichi's Hiyayogoshi, but this year I could buy Nakanori's: ✌️ The aroma was not so much when it was just out of the fridge, but as the temperature range rose a bit, it had a banana-like top note. The sweetness on the attack is strong and impactful, but after the sweetness recedes early, the acidity is stronger. The finish is smooth with little cloying taste. I have had Yamae-Nishiki with Shinshu Kamerei and Gokotsuru, and they all had similar impressions 😁.

Mikotsuru山田錦純米吟醸ひやおろし

ちゃんまやP[Mikotsuru, and Beyond] It has been a long time since I uploaded this page after a business trip overseas. I had never drank Gokotsuru Hiyoroshi before. It is rather fresh for a hiyaoroshi, with almost no sense of maturity. It is sweet and sour in its own way, but it has a full-bodied umami flavor on top, so it is not the light sweet and sourness that I dislike. If I had to say something, I'd say the aftertaste could be a little more impactful, but it's easy to drink and that's all that matters 😁. It's good with fatty grilled fish 😋.

ちゃんまやP[Name like a comic duo 🤭] I've always been curious about Abe but couldn't come across it in my area of activity, but I found it in the basement of Marunouchi Building😆. It has a gorgeous top note like grapes 🍇, a slightly stronger effervescence, a clean sweetness and mineral flavor, and a gentle bitterness in the aftertaste one after the other, kind of like Nabeshima 😄. It is very delicious, as it is a brand with a high reputation! It makes me definitely want to buy the different labels👍 I'd love to have a bottle to pair with shao mai, Japanese hamburger steak, or other soy sauce flavored meats 😍.

ちゃんまやPIt may be the most beautiful sake name I know. Rare sake from Shimotsuma that I got from my hometown 😊. The name was apparently chosen from a public contest to evoke the image of a purple loosestrife. Since there is no sake brewing company in Shimotsuma City, Raifuku Sake Brewery in neighboring Chikusei City produces it. Actually, I had never had Raifuku before, but it seems somewhat similar to Morishima, Gokeijo, and Watarabune, which are also made in Ibaraki 😄. It is an easy-drinking, delicious sake with a refreshing sweetness and a gentle spiciness in the aftertaste that makes the drink go down a treat 😋.

Sogen八反錦純米ひやおろし
125
ちゃんまやPThe one I've been waiting for 😘. When I traveled to Noto Peninsula last year, a seller of Suzu ware said that Sogen's hiyaoroshi is the best sake in Japan, so I definitely wanted to buy some this year: ✌️ The moment you take a sip, you feel the sweetness, but the umami that spreads afterwards is accompanied by a unique richness and bitterness, somewhat like cocoa 🍫. The aftertaste has a strong alcohol feeling and a stimulation that makes your tongue tingle, which may not be to everyone's taste buds, but I like it a lot because of its robust taste 😋. I heard that they also have hiyaoroshi with different sake rice, so I would definitely buy it next time when I find it👍.

ちゃんまやP[First brand I've been able to drink in about 10 years👍] I got a bottle of Kiri-Tsukuba's light nigori nama-zake (unpasteurized sake) from a hometown tax payment. It is a popular brand that is consumed almost exclusively locally, but it appears that there was some new sake left from last year that will be shipped in December 2022. ✌️ Although it has been over a year, it has not lost much of its freshness with a slight effervescence, and on the other hand, it has a moderate calmness that is quite nice 😋. It has a sweetness, but the refreshing alcohol taste and crispness are the result of the aluzochu liqueur. Like last month's Onra, it's nice to be able to get a brand that is hard to find through hometown tax payment 😆.

Banshuikkon愛山純米吟醸

ちゃんまやP[Where does love come from? Answer: Banshu 😁. It's been a long time since I've had Aisan sake. Gentle green apple aroma. Not so sweet, with a slight chilliness and berry🍓 type acidity. I can't explain it well, but I regret that I felt a little chemical aftertaste like artificial sweetener 🤔. The aroma was also a bit alcohol-like. I am wondering what is the gravity system on the back label. Does it mean "drop-capture? 😄

ちゃんまやPThe first hiyaoroshi of the season. Eiko-Fuji for the first time in a long time. First purchase of the label I had been thinking about buying every year but hadn't. ✌️ The aroma is sweet like mango 🥭. The sweetness spreads for a moment, but it is less pronounced than the aroma suggests, followed by a firm, well-defined umami spiciness that is very good. I like it better after it has been left in the fridge for a little while than freshly out of the fridge 😆. I think it is a good harmony between the calm and matured taste that I like and the juiciness of Eiko-Fuji-like taste 😋.

ちゃんまやP[Four Hundred] I have almost no connection to basketball, but I'm in the middle of the Slam Dunk generation, so I watched TV every day with a hot heart 🏀. I'm a member of the Slam Dunk generation, so I've been watching TV every day with a hot heart 🏀. The top aroma is just so fruity 🍐! It has a slightly effervescent feel, with a fluffy, understated sweetness followed by a clear and quite sharp bitterness. Not sour, but the aftertaste is grapefruit-like😊. It's drinkable and delicious 😋. But of course today's games against Cape Verde and Finland were both very hot, but I was most moved by the real Mitsui Kotobuki like Shin Hiejima in the Venezuela game: ⛹‍♂🥹. I think my favorite scene in Slam Dunk is the three by Megane-kun in the Ryonan game! 😁

ma-ki-Good evening, Chanmaya P. Congratulations on your 400 check-ins 🎉. I too am in the middle of a slam dunk, the guts of Hanamichi in the battle of Sanno makes me cry no matter how many times I see it ✨. I haven't drunk my favorite Jikin Hakutsuru Nishiki, so I hope to someday 🍶.

ちゃんまやPThank you very much, Tsubu! We have small kids and open the fridge a lot, so we can't do home-aging (it would be degradation, not aging...), but I'm sure it would taste even better if we could age it well! 😆

ちゃんまやPComparison of Onra drinks (2) We compared two types of Ura sake ordered by Furusato tax payment. This time, we compared two types of Ura sake, one raw and the other fired. This is a very minor brand, but it is a private brand of a liquor store in Okayama Prefecture called "Sake-no-mimura" (酒のみむら). The attack is light, just like the nama-shu. Like the nama-shu, it has a light attack, but the hi-irushu has a sharp acidity and bitterness, giving it a sharper impression. It was fun to feel the subtle differences that one would not be able to tell without comparing the two 😁.

ちゃんまやPComparison of Onra drinks (1) Minor sake not registered as a sake crocodile brand 🫥. There have only been 12 submissions so far 😂. The word "Ura" is written in Japanese and reads "Ura". I found the most memorable brand among the dozen or so I drank at the Sakenowa off-line meeting @ Yotsuya Sanchome a few months ago in Furusato, so I ordered it. It's a set of both a draft and a fire-aged sake of the same specs, so we opened them at the same time and compared the drinks: ✌️ The Nama-shu has an aroma like white bean flour, and the attack is thinner than I imagined. After a moment of delay, a moderate wildness with rice flavor and acidity emerges, and the impression at the end of the drink is rather strong😄. I think the sake I had at the offline meeting was an aged Asahi rice sake, so my impression is a little different, but it's a delicious gutsy 😙.

ちゃんまやP[Newly inducted into the Hall of Fame😍]. I've been buying and drinking every time I find a new label lately, Chokyuu ✌️ This is a jungin nama-shu that has not been aged. It's a little chirpy and the aroma is mildly minty🌿ish but not nearly as fruity. The mouthfeel is fresh and juicy, but not too sweet, and has a nice sharpness with a decent amount of bitterness. I've had a lot of Chokyu and all of them have been a winner, so I've designated this one for the Hall of Fame 😆. If you ask me "What is your favorite brand? I used to answer "Tasake" when asked "what is your favorite brand", but from now on I might as well answer "Chokyu" 😂. I don't think they would understand me since it's a pretty minor brand 😅...
Japanese>English
ゆかちんGood evening, Chanmaya P! What a delicious looking post ✨I'll look for it next time 😊.
Japanese>English
boukenGood evening, Chanmaya P. 😃 I was wondering how often you drink Chokyu and I see you are in the Hall of Fame 😀 Nakano BC makes a lot of money from other things besides sake so their prices are quite reasonable even for long aged sake 😊I'd like to try a Chokyu that hasn't been aged yet 😋.
Japanese>English
ちゃんまやPYucachin, I've only seen it at Liquors Hasegawa in Tokyo Station within my radius of activity 😄. If you see it, please buy it!

ちゃんまやPOverripeness indeed... This is a 6-year-aged raw sake with an alcohol content of 17 to 18 degrees Celsius. Since the shipment was made last November, about 1 year of it was aged in stores (or was it unsold...?). 😅) It took a bit of courage, but I had to try this one as a raw ripened sake lover 😊. The top aroma smells quite alcoholic and the color is a light golden color. In the mouth, it has a nutty, caramel-like ripeness and a dry astringency. When heated, it becomes softer, and it is best served lukewarm. It is best served lukewarm. It is enjoyable in winter with nabe (hot pot) dishes. I like the sense of maturity that it has, even when served cold, but I think it's a bit too much for me if I let it sit this long 🤔. I can't say I liked it, but it was very informative for me to gauge my taste scale. I need to try different types of wines!
Japanese>English
ひるぺこGood evening, Chanmaya P. I had a bottle of Miyama Jizuki last year, which was aged for maybe 2 years, and although it didn't seem that matured, it was a delicious sake and I was hoping to have it again someday 😊 Glad to see this label 😆.

ちゃんまやPHirupeko, if it's 2 years old or something, it seems to have more mellowness left in it! If you find a label a little younger, I'd love to buy it 😄.

ちゃんまやP[SEXY Perfectly Mature Sake 2023🧜] SEXY Fully Mature Sake👙 is an annual event at Kagataya. The sake is bottled in winter, matured in a refrigerator, and shipped in August when the sweetness has set in, making it quite elaborate. This year, there were three varieties: Hanaizumi, Chokaizan, and Yuho, and I bought the Chokaizan, which I had never had a regular label for before😄. The top aroma reminds me of sweet pear 🍐. The top nose reminds me of sweet pear 🍐, but it doesn't have the roughness of unfiltered raw sake, which may be an effect of aging. However, despite its gentle taste, it is quite acidic and a bit too sour for my taste 😅... I think people who are into this kind of taste will like it a lot 😁.

ちゃんまやP[Bubbly rice wine is a dangerous one 😝]. With such hot days continuing, this is a very Dangerous Sake that makes you want to drink it gulp it down 🚨. It's not low alcohol, so be careful not to run wild 🚧. No, seriously 😂. The carbon dioxide is added afterwards, so it's as strong and effervescent as Wilkinson ⚡. It's supposedly made with white malted rice, so it should be more sour than regular sake, but the strong carbonation makes it feel just right. Basically, I don't need any snacks, but if I had to choose one, I'd probably go with some cheese 🧀 which is not too strong... But why is it called Micro Bubble if it's so highly carbonated...? 🤔 Maybe it's a play on the name Michael Bublé❓❓
Japanese>English
ジェイ&ノビィHi Chanmaya P 😃. This is a dangerous ⚠️ that I would kill in a blink of an eye! I know it's a dangerous drink 🚨but I killed it in an instant 😁.

ちゃんまやPJay & Nobby, I'm going to try my best to stick with it until the carbonation is gone 😁. I would like to know the difference in taste from regular rice wine. But I wonder if it will be difficult...? 😂.

ちゃんまやP[My personal No. 1 brand last year 🏆]. A bottle of 100% Bizen Omachi 100% raw sake that is matured for about a year and a half at -5℃ in the company's ice-cooled storage facility before shipping 😆. The most memorable bottle we drank last year is available again this year 😍😍😍😍. The aroma is gentle but pear-like, and the palate is full of sweetness and thick umami. It has a round but firm drinking experience, and the subtle hint of maturity is irresistible 💯💯. The dish is better with something umami than something salty, and the non-sweet dashimaki egg is a surprisingly good match 😋. A satisfying work of art that is enough to be No.1 for two years in a row❗
Japanese>English
ma-ki-Good evening, Chanmaya P. I am interested in your personal No.1 sake 🎵 In addition to being a fan of Omachi, I've only had Kido sake from Wakayama, so I'd like to try it someday 😊.

ちゃんまやPma-ki, this label is especially recommended among Chokyu, so if you find it, please buy it 😆. If you're looking for a Wakayama brand, I think Minamikata is also delicious👍.

ちゃんまやP[Favorite words on parade 🤣] "Arabashiri bottled in a light cloudy state and aged for six months in ice storage." I bought it without hesitation when I saw the POP description "Aged for six months in ice-cold storage", which is irresistible to those who love nama-juku and 100% Dewa Sanzu, which is Yamagata sake 🥳. All the words hit me with rare specs 😂. The top aroma is a little subdued and citrusy 🍋, with a strong effervescence even after 6 months of aging, and fresh on the palate 😊. Strong acidity and spiciness in the aftertaste. I would have liked to see more of a rounded, mature taste for my taste, but it is a delicious sake that can be enjoyed in hot weather 😋. If I could keep it in the fridge for about 6 months to enhance the matured taste, it might become more to my liking, but I think that's a bit too hard 😅. By the way, the updated app for Android is so hard to use... 😮‍💨 It's heavy and the inability to search for maps from my page is fatal, so I decided to uninstall the app and use it from the web. Am I the only one with this symptom...? 🤔

のちをGood evening, Chanyama P! I like "raw ripe" is a power word. I was wondering how to read it. Seijujuku? Nama-juku? Which one? Either way, it sounds like Chanyama P. 😁 Come to our world!

ちゃんまやPTurtle-ling Kirei ✨] A brand that used to be easy to buy just a few years ago, but has suddenly become hard to find in the last few years💦. For sake breweries, there's nothing better than selling a lot of sake, and it's no wonder that good sake is hard to find😅. It has a gorgeous apple aroma and a rather strong fizzy taste. The sweet and delicious taste of modern sake spreads sizzlingly, and the sourness and bitterness you feel on the sides and back of your tongue gently linger in the middle of the taste buds. A beautiful sake that lives up to its name 🌟. I had a junmai sake of the same Shinshu Kamerei Hitogokochi a while ago, but to be honest, the junmai one was not very satisfying, so I think the junmai ginjo is more complete and delicious. (Hey, maybe I'm stating the obvious...? 😂)
