A brewery that specializes in aged sake serves sake made for aged sake as undiluted sake. It's been about two years since it was made, so maybe it's been sleeping in the shop? It doesn't have a nigori feeling at all. It has a certain aged feeling, but it's clearly different from the old one. It's not fruity, but it's sweet. It is not fruity but sweet. The sourness is strong and it is like a thick honey. It is sweet, but some people may feel the alcohol in the latter half is pungent.

Tonight, I opened this bottle because I wanted to drink Shinshu sake for the first time in a while since I felt like the first bottle of Kisupa was going to run out soon 💁. Iraka Gin-Mori Yamahai Junmai Unfiltered Unrefined Harajuku 2024BY🌳✨ It's been a little while since I've had an Iraka. The 4th edition has a dazzling dark green etching, and since it's Yamahai Junmai, my expectations are high. ⤴️ The opening of the bottle was a nice gas release sound 😊. The aroma has a refreshing pleasantness of green herb 🌿, green apple 🍏, and muscat, which is typical of Shinshu sake 👍 The taste has a light acidity and the sweetness of rice, while the aftertaste has a nice sharpness that is typical of Yamahai junmai. Overall, it has a light and modern sake quality with a spodoli-ish flavor, and this was one of my favorite bottles of the first half of the year, so delicious and so high on my list 😋🐴🎠💮.

Silver/Kuro Unfiltered Nama Sake Rice：Matsugawa-mura, Nagano Prefecture, specially cultivated rice "Hitogochi Alcohol content: 15%. I bought a lot of things at Tokyu Hands Hokkaido Fair. I was so excited that I bought a lot of things such as Ika-meshi (squid rice), Ichigen's shrimp shio ramen, Hori's walnut rice cake, and Hanabatake's karintou. Mitsurensei 15th Anniversary Special Sake 5 Years Aged Shiga Watabune Rokugou ✨ H29BY=2017BY and from 2022.7 when shipped, it's aged 5 years, but it's now aged 6 years with +1 year in our house😅. I'll try it as an after-dinner drink after dinner 🍶. It's colorless and clear when you pour it into the cup. The aroma is completely old and matured, with hints of dried grapes, brandy, chocolate, and cacao...it's just mellow. The taste is also bitter with bitter chocolate sweetness, followed by alcohol 😋. Six years of aging is no joke 😎.
