I bought this new green Harimaji today while I went to buy some raw sake for Umeshu (plum wine).
Pale yellow in color, it has a strong taste in the mouth but does not stay in the mouth. Slightly dry.
Easy to drink and good.

Yes, I pickle with sake. I always buy Tomikunishiki's sake for plum wine. It is 20 degrees. How many years have I been making it with this? It is delicious.

I hope the liquor store carries it, but I'm going directly to the brewery, so fingers crossed I can find it at ......! I did a little searching and found Naebayama for plum wine, though it wasn't junmai sake.
Oh, and Tomikunishiki's sake for ume-shu is junmai-shu.
