I wanted a dry, dry drink. There are days when I'm in that mood. You might say don't choose raw, but I realized it after the sake bottle came. I enjoyed it with yudofu. It fits my mood today. When I think of dry, dry sake, I think of Niigata, Hiroshima, and Kochi. I admit to disagreeing.

This Sake paired well with the home made bacon we had with dinner. The flavor profile is bright with the flavor of banana and has a dry, clean finish. The dryness is mild and not overly strong.
I've never been a big fan of dry sake, but this is delicious! It is crisp and refreshing, but also has a deep umami/sweetness. I like it!

I decided to go with Chiyoda Kura because I thought I could buy Yukihikoyama at a liquor store in my neighborhood. The taste is moderately sweet and tasty with a summery, crisp, spicy flavor. The impression is that it is quite sharp and clean.

The aroma is modest for a daiginjo❗️. It has a clean taste, but It has a unique sweetness and aroma 😅 I wonder if it tastes like fukunohana❓ I guess it's good to drink as a food sake. It's a raw sake so I'd like to let it sit for a while and see how it tastes. I'm hoping for a change in taste❗️😊.

Dokure Hiyoshi Oroshi Junmai Ginjo Shimanto River Headwaters Cave Enclosure. The aroma is a mild iso-type aroma that is a bit hard, but it seems to spread with air. The pleasantly smooth nose is followed by a strong acidity and umami, which leaves a strong impact in the mouth. The hints of bitterness and calmness in the back of the aroma are also to my liking. It is also good with a hint of sweetness in the background and a beautiful sharpness along with the sourness and bitterness in the aftertaste. Dokurei, which I always drink every year, is very good.

I asked the lady at the store to recommend a new arrival, and since Hayashi was not yet available, I bought a bottle of Kurobe Pincer from the same brewery 😚. The aroma is not so much but a little peachy 🍑? It is fresh on the palate with a gentle sweetness and rice flavor 🌾😋 It is a delicious sake that finishes with a bit of an alkali aftertaste 😆👍✨.

I look forward to Toyama hiyaoroshi every year 😊. I chose Kurobe Gorge this year as well 😆. This year may be different from previous years⁉️. The aroma is sweet and rummy. Japanese Sake Festival @ Osaka Bay Tower (¡Ω) Very yellow. Delicious and mellow as expected! Although from the Fushimi brewery, this sake would definitely be better suited to those who prefer San-in sake!
