Sake and Sake vol.3 ⑤. We joined Higu and Nanoha and had a great time 😚. It is a fruity, gorgeous and sweet sake made with soft water! They recommended it to me... 🙄 ...

Fukui Sake 🍶. While waiting for the Thunderbird on a business trip to Fukui, I went to a bar and compared three different kinds of sake. I had three kinds of sake selected on my own. All were delicious and it was hard to choose one over the other, but the Manazuru sake was my favorite! I wish I could have had more!

Ikebukuro with friends on Wednesday. It was not an all-you-can-drink party. Sake was my friend's choice as we sunk into the sake swamp. It was my first Hakuba Nishiki. Nice choice. It tasted like it would be ranked high in the Nigorin picks. It was fresh, fruity, sweet and refreshing. The upper half of the label is European and the lower half is Japanese, which gives it a Showa-era feel.

Have you heard of YATSUDOKI? It seems to be a high-end version of Chateraise, but I happened to stop by and found some fresh sake! I got it anyway! It's relatively light, and you can drink it nice and smooth!

I bought it because of the cute bunny label - ⤴️😊 Light, clean, fruity🌸🍶✨ Slightly lactic acidic 🐮🐮‼️ I'm not sure if this is a good idea or not, but I'm sure it's a good idea. I enjoy it very much.

Shikoku x Sake Country 2025 Sake Brewery Wonderland On Osaka① Entered the event for the first time in 6 years. The venue was the 9th floor Sky Hall of Kyocera Dome Osaka. Since 52 breweries in Shikoku were participating in the event, we couldn't visit all of them in 2.5 hours, so we decided to focus on the breweries we rarely see. As usual, Dr. Bouken was with us. First, we visited the booths of "Imakomachi" and "Yutaka" in Tokushima. ◉Junmai Ginjo Unfiltered A clean acidity and a full-bodied flavor. ◉Junmai Daiginjo, unfiltered The Junmai Daiginjo Mucho is a pure, polished, full-bodied, rich, and delicious wine. It was so good. The price was about 3300 yen including tax. ◉Yamansho Slightly dry and refreshing. Not too spicy. Imakomachi Daiginjo The most expensive. The standard, excellent quality, with a full-bodied, all-rounded taste. Not very impactful. In the Kansai region, Ohmune in Hyogo Prefecture seems to carry it on a spot basis. They can also send it to individuals by e-mail or phone.

Shikoku x Sake Country 2025 Sake Brewery Wonderland On Osaka - Shikoku's Sake and Food Spectacle - (1) Nemuchi and I participated in the Shikoku Sake event held at Kyocera Dome! The venue was 5 minutes before the event, so we arrived in time to get in, but the line was too long to get in in 5 minutes 😳 We lost about 10 minutes 💦. We lost about 10 minutes 💦. There was no sake list like at Japanese Sake Fest or Sake-1 Grand Prix 🤔. We decided to focus on the breweries we hadn't seen before. We started with Imakomachi. It seems to be in the same area as Yoshimizu and Miyoshikiku, and Miyoshikiku has the same salad address, so they are neighbors! I referred to the official site for the specs. I drank Junmai Ginjo Unfiltered Harazake Gohyakumangoku, 50% polished rice ratio It has a beautiful taste and is slightly sweet. It is fire-aged, but I also felt a sense of freshness. The sweetness and acidity were well balanced. Junmai Daiginjo Unfiltered Harajuku Yamadanishiki, 40% polished rice Fruity and sweet. I got the impression that Imakomachi is generally sweet. Yamasho Junmai Ginjo Genshu Gohyakumangoku, 60% polished rice ratio Unlike the above two types, it is refreshingly dry as it claims to be super dry. Daiginjo Yamadanishiki 40% polished rice Less sweet than the jun-dai, but delicious.

Smells like caramel, baked apples, ripe. Yellowish liquid. Taste of caramel and a bit of sweetness and acidity. I opened the bottle as soon as I bought it, but the shipment was a year ago.

Ota Sake Brewery in Shiga, which brews Doukan. This is my first time to try this brand 🍶. It is a rich, robust, unadulterated sake. It is easy to drink without any peculiarities. It has a mild sweetness.

At my usual restaurant This week I was full time for five days after the holidays. so I couldn't wait for the weekend to arrive. The first sake was this one! It was freshly cut so it was a bit bubbly. It was freshly cut so it was a little fizzy. ☺️ The side dish was pork belly cartilage with ponzu sauce!

Purchased at a liquor store in Nakazaki-cho after an event at Ogimachi Park with Nemuchi The design looks like something you'd find in a bottle at an izakaya 😅. Normally I wouldn't pass it up, but I thought it looked unusual and bought it. It's been a year since it was made, but I don't feel it's aged too long. It is light, refreshing and easy to drink.

Type: junmai daiginjo, rice polishing rate: 50%, alc.: 16% Floral aroma, vanilla, marshmallow and a little bit of savoury aroma. Flavor feels dry with sharp acidity and bitterness of alcohol. Earthy flavor lingers for a while. Not too good not too bad. Decent price here in Europe.
Drinks consumed at the lunch buffet I had the impression that it had been available in all restaurants for a long time. The taste was "safe". Low alcohol content, no peculiarities Good for lunchtime drinking.

Maruishi Brewing's Chohyo year-end festival, second bottle. This sake is made from Manzai, an edible rice that has been revived in Okazaki. It is a junmai daiginjo, and naturally it has a beautiful, fruity taste, but compared to Nitoshi, it has more robust rice flavor than acidity and sweetness...I think. Am I biased? Is it my imagination?

Heavy rice aroma. It has a fresh, clear flavor with a good thickness, and it disappears smoothly with a green apple-like fruitiness at the end.

Limited brand of Daishinshu: 🇯🇵 Buy it during your pilgrimage to the Holy Land✨. Only about 10 dealers carry this brand. You can find anything in the Holy Land........ 🤣. The ginjo aroma is green apple 🍏. It's been a long time since I've had a Daishinshu, but we share the same aroma 😤. I wonder if the sake rice is Hitogokochi or Miyamanishiki? (→ later I checked and it was Hitogochiki 😳) The balance of sweetness and umami, and then acidity to finish is perfect🤣.

I bought this sake when I was in Kurashiki. I was surprised at how smooth and smooth it tastes... I was also surprised at the dry but full-bodied taste. I was not a fan of Aragashiri, but I found it to be a delicious sake!

The ones that are not on the menu. There is a Chiyoda Kura and a Yukihikoyama, both unopened. I decided to go with Chiyoda Kura because I thought I could buy Yukihikoyama at a liquor store in my neighborhood. The taste is moderately sweet and tasty with a summery, crisp, spicy flavor. The impression is that it is quite sharp and clean.

The aroma is modest for a daiginjo❗️. It has a clean taste, but It has a unique sweetness and aroma 😅 I wonder if it tastes like fukunohana❓ I guess it's good to drink as a food sake. It's a raw sake so I'd like to let it sit for a while and see how it tastes. I'm hoping for a change in taste❗️😊.

At the tasting. It was sweet like a rich ripe fruit. It was good, but the one that was for sale seemed to have different specifications (I think it was a direct brew of special junmai?). No purchase.
