Since it's spring🌸, I think I'll have another bottle of sake with spring in it. I bought a bottle of Shunshin by Nishide Sake Brewery in Komatsu City, Ishikawa Prefecture. I've been curious about this sake for a while but never got around to it. I will have it with boiled flounder 🙏. I thought it might be a bit strong, but it wasn't. It has a nice richness, sweetness, acidity, and a mellow feeling 😆. It's a bit like a lighter version of Tamagawa. As the label says, I preferred it at room temperature rather than chilled 👍

I saw it for the first time at a department store tasting sale, so I bought it. It's not listed on the label, but according to the brewer's description, it's unfiltered undiluted sake. It says "light nigori" but it's not cloudy at all (laughs). It's refreshing and easy to drink. The acidity in the second half is impressive.

From the Tone Nishiki brewery, the second in the dancing series, "Dancer". Low-alcoholic sake with a high koji ratio. Chilled. He politely introduced us and told us that it tastes best chilled in a wine glass! Like Minatoya Toisuke, this is another brand of Murasuke that I bought because I liked it after tasting it at Ponshu-kan in Echigo Yuzawa. There are many liquor stores that sell Murasuke in Tokyo, but I had never seen this brand before. As its name suggests, it's low in alcohol content at 13%, so it's easy to drink 😚. When you drink it cold, it's light and refreshing, with no hint of bitterness. It's delicious in its own right, but when it's chilled at a cooler temperature, it becomes sweeter and more impressive. I liked it best when it was chilled in the wine cellar at about 15 degrees Celsius 😄. It's interesting to see how it changes with the temperature, but in any case, it's a different direction from the sweet and sour fruity Murasuke. I think it's a fine sake that won't go with any snacks 😋
