Suehiro Shuzo's Genzai. They also won a gold medal at the New Sake Competition for their Genzai daiginjo, but this is not that award-winning sake, but an affordable special junmai. It starts off with a piquant and refreshing sweet and sour taste! The taste is powerful with a strong sense of presence, but the alcohol content of 15 degrees makes it easy to drink and enjoy 👌. We are looking forward to adding this sake to our lineup next year and beyond 😊.

Sake brewed at Suehiro Shuzo's Kaei warehouse. When I hear the name "Genzai," I think of the daiginjo that was entered in the sake competition. I hesitate to buy it because it is a bit expensive, but this special junmai sake (nama-shu, hi-iru) is reasonably priced and easy to pick up. I am looking forward to the next year, when there will be more varieties of sake. As for the sake, the aroma is like apples. When I drank it, I smelled cemedine😅. The sake is fresh and has a tangy, gaseous taste. The sweetness is moderate and the acidity is strong. I thought maybe I don't like cemedine, but I drank more than half of it in no time and regretted it. It is easy to drink. The second day, the cemedine is also good. If this is the case, it's a special pure Cemedine.

Absolutely one of my favorite sake. It is robust but easy to drink, smooth but interesting, rice like but with a great deal of umami. I love this one and will be searching for it in bottle before I leave Fukushima.

A sake store in Joetsu, Niigata that I have wanted to visit for a long time. Kiraku. First of all, I would like to pay my respects to my hometown, Joetsu. Tsukifumi-no-ike pond is a famous place in Itoigawa, and is said to be located in a dense forest, making it difficult for the moon to be reflected in the pond. Local Takananishiki grown by the brewer. It is said to be full-bodied and sharp, but it is very sharp. This is the mainstream of Niigata-Joetsu sake.

Purchased at Takashimaya event😆👍 Out of the three types, I️ started with the Tsukiyomi no Ike. The aroma is nothing but semedyne smell💦. The taste is like a matured sake, but not fully matured so it's easy to drink for a matured sake😅💦. I just don't like it on the web. I'll try to warm it up next time and enjoy it!

I bought this at Mori Sake Brewery on my last trip to Hirado! The president of the company was in charge of the cash register that day😆. He politely introduced us and told us that it tastes best chilled in a wine glass! Sweet and sour from the aroma Tastes like plum wine Slightly sticky texture A little sweet but not too sweet Slightly rice bran-like, but you can sense the grains and nuts that only low-polished rice can provide But still sweet 😃. Sweet and delicious as a dessert wine I had it with Nagasaki Fukusado sponge cake a few days ago Champagne split today 🤣. Half and half Pour in a 1:1 ratio Marriage of Philando and Champagne 😉. Makes it less sweet. Maybe just the right amount of sweet 🤔.

It's my first time to drink Hiraizumi❗️ I've never had a Junmai Daiginjo from Yamahai 🤔. It doesn't have a fruity aroma❗️ Somewhat spicy aroma and taste😅 It's very unusual. I've tasted it somewhere before but can't remember where 😥. It's a daiginjo so it has a clean aftertaste. But to be honest, it wasn't my favorite taste 😥. I wonder what other Hiraizumi tastes like❓

Japanese Sake Fest @ Osaka Bay Tower (・ω・`) The effect of oak barrels, or something quite close to whiskey, but the mellowness and acidity of sake is also alive! I know it's just my imagination, but I feel it's similar to the whiskey akashi. Of course, if I didn't know any better, I wouldn't have thought so. I also had a bottle of Junmai Namae in the heated sake corner, but my memory is a little fuzzy on whether or not my brain was getting the alcohol when I got here! I do remember that it was meant to be heated, but that's about it.

The wooden vat pressing seems to be a very careful and labor-intensive process. Aroma of maturity, like brown sugar, fills the nose. It makes you salivate a little. It has a nuance of matured sake, a soft mouthfeel with a rich umami flavor, and a sourness that makes the tongue feel tight. Yasui Sake Brewery's Ikuhashidataro, a sake brewed using the raw yeast method. The sake shop recommended this limited-edition sake made with the finest Shiga Prefecture Ginbukietsu. It had a fruity aroma, umami, acidity, and was refreshing. It was delicious and gone in no time.

Since it's spring🌸, I think I'll have another bottle of sake with spring in it. I bought a bottle of Shunshin by Nishide Sake Brewery in Komatsu City, Ishikawa Prefecture. I've been curious about this sake for a while but never got around to it. I will have it with boiled flounder 🙏. I thought it might be a bit strong, but it wasn't. It has a nice richness, sweetness, acidity, and a mellow feeling 😆. It's a bit like a lighter version of Tamagawa. As the label says, I preferred it at room temperature rather than chilled 👍

I saw it for the first time at a department store tasting sale, so I bought it. It's not listed on the label, but according to the brewer's description, it's unfiltered undiluted sake. It says "light nigori" but it's not cloudy at all (laughs). It's refreshing and easy to drink. The acidity in the second half is impressive.
