All Gunma Maifu Drinking Set. This time it's Tonenishiki from Nagai Honke in Numata. I've been a customer here for a long time. The color is pale yellow. The original aroma of the rice stands out. It has a rich taste with a sense of maturity. It has the richness that is typical of pure rice, and has a relatively classic taste.

Sake made from Koshihikari rice, 90% polished rice, and once-fired. I chilled it. Slightly grain-like sweet and sour aroma. It has a moist sweetness and rich acidity, with a juicy umami lingering in the aftertaste, creating a luxurious atmosphere. It looks like it could be aged for a long time.

Tone-Nishiki low-alcohol sake, with a QST (Quantum Science and Technology Agency) seal on it, probably because QC13, an export yeast, is used. Chilled as indicated on the label. The aroma is refreshing and sweet. The taste is mildly sweet and sour, with a hint of sweetness and a lingering richness. A little matured? It is fruity, but it does not feel out of place when paired with fish. Nagai Honke is a small brewery with a small production volume, but they have some interesting sakes that are fun to drink.

Like Minatoya Toisuke, this is another brand of Murasuke that I bought because I liked it after tasting it at Ponshu-kan in Echigo Yuzawa. There are many liquor stores that sell Murasuke in Tokyo, but I had never seen this brand before. As its name suggests, it's low in alcohol content at 13%, so it's easy to drink 😚. When you drink it cold, it's light and refreshing, with no hint of bitterness. It's delicious in its own right, but when it's chilled at a cooler temperature, it becomes sweeter and more impressive. I liked it best when it was chilled in the wine cellar at about 15 degrees Celsius 😄. It's interesting to see how it changes with the temperature, but in any case, it's a different direction from the sweet and sour fruity Murasuke. I think it's a fine sake that won't go with any snacks 😋

Since it's spring🌸, I think I'll have another bottle of sake with spring in it. I bought a bottle of Shunshin by Nishide Sake Brewery in Komatsu City, Ishikawa Prefecture. I've been curious about this sake for a while but never got around to it. I will have it with boiled flounder 🙏. I thought it might be a bit strong, but it wasn't. It has a nice richness, sweetness, acidity, and a mellow feeling 😆. It's a bit like a lighter version of Tamagawa. As the label says, I preferred it at room temperature rather than chilled 👍

I saw it for the first time at a department store tasting sale, so I bought it. It's not listed on the label, but according to the brewer's description, it's unfiltered undiluted sake. It says "light nigori" but it's not cloudy at all (laughs). It's refreshing and easy to drink. The acidity in the second half is impressive.

A sake store in Joetsu, Niigata that I have wanted to visit for a long time. Kiraku. First of all, I would like to pay my respects to my hometown, Joetsu. Tsukifumi-no-ike pond is a famous place in Itoigawa, and is said to be located in a dense forest, making it difficult for the moon to be reflected in the pond. Local Takananishiki grown by the brewer. It is said to be full-bodied and sharp, but it is very sharp. This is the mainstream of Niigata-Joetsu sake.

Purchased at Takashimaya event😆👍 Out of the three types, I️ started with the Tsukiyomi no Ike. The aroma is nothing but semedyne smell💦. The taste is like a matured sake, but not fully matured so it's easy to drink for a matured sake😅💦. I just don't like it on the web. I'll try to warm it up next time and enjoy it!

I bought this at Mori Sake Brewery on my last trip to Hirado! The president of the company was in charge of the cash register that day😆. He politely introduced us and told us that it tastes best chilled in a wine glass! Sweet and sour from the aroma Tastes like plum wine Slightly sticky texture A little sweet but not too sweet Slightly rice bran-like, but you can sense the grains and nuts that only low-polished rice can provide But still sweet 😃. Japanese Sake Fest @ Osaka Bay Tower (・ω・`) The effect of oak barrels, or something quite close to whiskey, but the mellowness and acidity of sake is also alive! I know it's just my imagination, but I feel it's similar to the whiskey akashi. Of course, if I didn't know any better, I wouldn't have thought so. I also had a bottle of Junmai Namae in the heated sake corner, but my memory is a little fuzzy on whether or not my brain was getting the alcohol when I got here! I do remember that it was meant to be heated, but that's about it.

Suehiro Shuzo's Genzai. They also won a gold medal at the New Sake Competition for their Genzai daiginjo, but this is not that award-winning sake, but an affordable special junmai. It starts off with a piquant and refreshing sweet and sour taste! The taste is powerful with a strong sense of presence, but the alcohol content of 15 degrees makes it easy to drink and enjoy 👌. We are looking forward to adding this sake to our lineup next year and beyond 😊.

Sake brewed at Suehiro Shuzo's Kaei warehouse. When I hear the name "Genzai," I think of the daiginjo that was entered in the sake competition. I hesitate to buy it because it is a bit expensive, but this special junmai sake (nama-shu, hi-iru) is reasonably priced and easy to pick up. I am looking forward to the next year, when there will be more varieties of sake. As for the sake, the aroma is like apples. When I drank it, I smelled cemedine😅. The sake is fresh and has a tangy, gaseous taste. The sweetness is moderate and the acidity is strong. I thought maybe I don't like cemedine, but I drank more than half of it in no time and regretted it. It is easy to drink. The second day, the cemedine is also good. If this is the case, it's a special pure Cemedine.
