This sake came out when I asked for one more to go with salted squid.
The resolution is a bit fuzzy after 2 gou (about 2 cups), but it's a umami type with a hint of apricot jelly.
It is similar to the Gaijin I drank earlier, but this one is gentler and less spicy.
I was somewhat attracted by the label and bought it.
As the label says, it is a junmai ginjo, with little bitterness. It was not enough for me, and it was getting cold, so I warmed it up. The aroma and acidity became more pronounced and tasty.

The 8th SAKE festival in Yurakucho.
All the breweries here were yamahai. Yamahai has an image of "heavy", "thick", and "lumpy" 😫.
However, I heard it won the "Best Sake in a Wine Glass Award 🍷" 👀.
I was skeptical and decided to give it a try.
Light flavor despite being Yamahai.
It has an honest sweetness and a refreshing taste.
This would go well with a glass of wine 🍷.
It has a thick core and a thick throat, creating a presence that is typical of Japanese sake.

The "tangy, juicy, and mild" taste described on the label is irresistible. The acidity and umami of the Yamahai are well balanced with the sweetness of the rice.

This is Takasago's Yamahai Hiyoroshi, which I bought on my trip to Hamamatsu last week. I have heard that Shizuoka sake has less fruitiness, but this one has a much stronger muscat flavor. As the label says, when you put it in your mouth, the muscat flavor spreads after the tangy sake flavor. It is a seasonal sake, so you can't drink it after the season is over, but if you are interested, please buy it while it is still available!
