Aged. The color is like Daruma Masamune. It has an aroma of maturity, but it goes down the throat cleanly and clear. It is said to go well with miso, and it certainly does. Best marriage with shiitake mushrooms pickled in miso 💍. I wish I could have tried heating it up.
