This is the first bottle of Akita Shun Ginjo. I've never met this brewery before, but it's a good omen❗. The second day, the aroma of the nama-moto has receded into the background, and the taste becomes light and clean, but the nama-moto structure gives it a moderate depth, as if it is producing the flavor from a step back. This sake has become my 💓.

National Sake Fair 2025 in Osaka_63 Akita Prefecture booth 4 Naba Shoten Co., Ltd. is located in Akita City. The current sake brewery was built in 1927-3, the first reinforced concrete structure in Tohoku. Ginrin Kurukuru A refreshing sourness, but with a hint of umami. It has a slightly modern feel, with a slightly yogurt-like sourness. OSAKA SAKE & FOOD EXPO 2024 (2) Gindagawa, which I have had a cup of special honjozo or something before. Was Gintagawa sold in Niigata? I thought it was a classic type, but unlike the image on the label, the acidity was noticeable and it was a bit modern? It looks like it would go well with Western food 🍴.

It is too strong by itself, but it becomes delicious when combined with snacks. This is a brewery that I had never heard of, as Tsugaru's local sake is relatively rare in other prefectures. Representative brands are Kamekichi and Tamadare. ◉Kamekichi Special Junmai Dry Sake The standard, mildly umami taste, with a clean finish that is not too assertive. Buy at the warehouse 1635 yen / 720ml My first Aomori sake. The brewery is located in the old town of Kuroishi City, which we reached after visiting Lake Towada and Oirase. The brewery is a magnificent structure and was the location for the historical drama "Inochi" (Life), with pictures of a young Yoshiko Mita and the late Toru Watanabe. The taste is soft and gentle. I'm sorry, I don't know this brewery...but they have hiyaoroshi and yamahai. So he shared his favorite hiyaoroshi with me! It's easy to drink, has a nice mouthfeel, and is dry with a nice flavor and sharpness. It's also delicious and reminds me of a white wine! The Nouveau chosen by the owner this year was expensive... but he said he had no choice because of the weak yen and the international situation.
