The difficult-to-read brand name "Uzume" has become a frequent visitor to department store events in the Kansai region.
You always let me sample a lot of sake.
◯ Junmai Ginjyo, freshly pressed, unblended sake
It has a full flavor, but with complexity and alcohol.
◯For Relaxation Level 3 Junmai Daiginjo
It has a considerable acidity, not as sweet as a dessert wine, but sweet and sour.
◯Junmai Daiginjo Fukuro Shibori Shizuku Nama Shu
Clear, clean, sweet and sour, with a sweet taste followed by a sharp taste.
Daiginjo Fukuro Shibori Shizuku Nama Sake
It has a bitter taste on the tongue at first, but the acidity is felt in the middle of the taste and it is well balanced.
◯For Relaxation Level 2 Junmai Ginjo
It is sweet and sour, but the sweetness is well defined in the acidity. It is like a dessert wine.
Fatty active nigori
Creamy and tastes like doburoku with a sharp aftertaste. It tastes a little bit like the second day after opening the bottle.
I'm a little concerned about the cost...
The Winter Nigorinpik is safely over and today we start Sumisake, and the first sake we opened was this one, Hadeshume-san 😀.
The name "Uzume" is derived from "Amenouzume" 😀.
I bought this sake when I visited the brewer, Ito Shuzo, when I was in Mie Prefecture a while ago 😀.
The brewery also had a sparkling four-pack type, but I was told by the brewer that the four-pack type is the fire-aged type that is also shipped to special distributors, but this smaller type is a limited raw type that can only be purchased at the brewery😇.
But I was told to open the bottle as soon as possible, so I opened it today, right after the Nigorinpik was over😇.
Taste.
It was a champagne with a beautiful rice flavor 😀.
Kaorin said that this is not sake after a long time 😅.
It tastes like champagne even though it has the rice flavor of sake 😀.
It was worth the trip to Mie just to be able to buy this sake.

I was a little disappointed because I made a mistake in opening the active nigori at the wrong time, so I followed the brewer's instructions and opened this one right away 😀.
It was very tasty and had a ricey feel to it😇
Brewery tour on foot 22
Last night we enjoyed a Mie sake drinking contest at a hotel in Tsu, but first thing this morning we will visit Atsuta Shrine in Nagoya and then tour the sake breweries in Mie😇.
The first brewery is Ito Sake Brewery, which brews Madenjo 😀.
The paid tasting of 4 sakes was a great deal, but they offered us an additional 3 sake tasting after we had talked with them 😇.
Kaorin seemed to like the sake here very much and said it was her favorite out of all the Mie sake she has had since yesterday 😀.
We got a little excited and bought a bottle of fresh sparkling sake called Denjo, which is only available at the brewery 🤣.

Raden Junmai Ginjo Unfiltered Unrefined Nama Shuzake
Ito Shuzo is a sake brewery in Yokkaichi City, Mie Prefecture.
It is made from 60% polished rice of "Kami no Ho" grown in Mie Prefecture.
The sake is slowly matured in bottle storage for six months after going into the vat.
The aroma is fresh and fresh.
