Although it's not stated on the label, the rice polishing ratio is 65%, the sake level is -13, and the rice is Hatsushimo. It is very sour. It is very sour, and has a strong personality even among sake made with white koji. This sourness is like Niwa-shu or Bodai-gan. I heard that there was a limited edition of this sake, but I'm curious.

The 22nd sake brewery in Gifu Prefecture. The main brand of Chiyogiku K.K. located in Hashima City. Purchased at a supercenter in Seki City. The aroma is a weak ginjo aroma. It is a light and dry type with little acidity. It is easy to drink with a clean aftertaste.

Yesterday we went to Bicchu Matsuyama and Kibi Tsu! We were worried about rain, but it was really fortuitous that it shifted and we saw some sunshine. The view over the magnificent stone walls and town at the top of the mountain was exceptional ✨. Then we visited the Kibitsu Shrine, with its long corridor and historic appearance. The long corridor and historic appearance of the Kibitsu Shrine that we visited afterwards was truly heartwarming 🍑. After exploring, we crossed the Seto Inland Sea and drank a glass of Kibi-shu 🍶. When you open the bottle, you will find a deep aroma of nuts and chestnuts. The mouthfeel is slippery and dry. It is full-bodied with a punch of acidity and astringency, as well as a full-bodied rice flavor. It has a presence like nuts and bitter chocolate. However, the stimulation of the hot, acidic, and astringent taste tightens it up like a whip, and it has a good salty taste with a firm edge!

Yesterday, I went to my favorite izakaya "我" ♡♡♡. I drank a variety of drinks in the all-you-can-drink 1 hour 1500 yen (*^^*) It was crowded, so I couldn't order at a high pitch, so I could only drink 9 kinds out of the 20 or so available...(-_-...) The 6th drink was "Miho". Oroku" and "Gassan" are the most famous sake from Shimane, so I haven't had many of the others. It has a strong sense of rice, but it's not mellow or fruity. I'm sure you'll love it. *I love it!

"Believing in something is a responsibility. Even if the result of believing is not as you expected, it is your responsibility. "I don't recommend it as a liquor store. But if you're buying it for yourself, you might want to keep it at room temperature before drinking it, even though it's raw sake. Even if it fails, it is my responsibility to make the right choice, so don't worry. It's been one month since I stored it. The color is yellowish and reminds me of a strong taste. The aroma is fermented and ripe. In the mouth... the taste is juicy and complex, a true taste of rice! The initial specs are that it is a little dry, but as it ages, the sweetness is brought out and it is very Tsuchida-like. It has the flavor of a dense, rich, umami flavor that brings out so much of the rice flavor, and the flavor deepens more and more to the point that it cannot be described in a single word." This flavor!" The taste develops further from the point where the tongue catches it. On the other hand, if you put it in your mouth and drink it right away, you will be surprised at how easy it is to drink. This is too good to be true... I'm glad the drinker believes in the drinker... Next year, I'm going to try drinking it refrigerated. I wonder what it will taste like. PS...After another month of opening the bottle, a nice fermented aroma comes out. This one's good too!

Then the middle one, "Senryo Otokoyama. Honey-like aroma. The mouthfeel is silky, but the flavor is similar to a juku-shu type. It has a honey and syrupy feel with a touch of pettiness. However, it is easy to drink, with no harshness or bitterness, perhaps because the overall assertiveness is modest! It is crisp but dense. It is a deep taste that is hard to describe!

GW 4 days 3 nights with wife, 1,500km round trip🤣 We went on a Sanriku car trip 🙂. We stayed one night near Sendai and went to Sanriku. We had an ume (sea urchin) lunch box at Kuji station, and spent the second night in Miyako. Miyako's sake brewery, Hishiya Sake Brewery, Senryo Otokoyama. Seafood Cuisine at Murekou, a long-established bar that has been in business for over 45 years. My wife has a slight taste disorder, but since she couldn't spend time at her parents' house 😊, we treated her to another New Year's meal 🎍. The wine to go with it was "Kyo no Hana" purchased at our favorite liquor store in Kushiro, Sagajo Shoten. I was torn between this and "Tatsusen" brewed by the same brewery, neither of which I had ever tasted before, but I chose this one because of the "fantastic rice" description 😊. Kyo no Hana No.1! There really are a lot of different sake rice varieties available: ‼️ It has a sharpness that is typical of Fukushima sake, but at the same time, it has a moist and gradually delicious flavor 😋.

2021/06/28 ⭐️⭐️⭐️⭐️ The design and color of the bottle is very stylish. When you open the bottle, the aroma is like muscat. It's light and fresh in the mouth. You can feel the sweetness of the roundness of the aroma. The more you drink, the more fruity it becomes. This may be a sake for women.

I was drinking it on 7/1. It is aromatic, fruity, sweet from the rice, and refreshingly delicious. Niigata is a great place after all! My daughter had it with her lunch of seared nodoguro (northern bluefin tuna) 😊My daughter had it with her lunch of hegisoba (buckwheat noodles) and tarekatsu (pork cutlet with sauce) and drank it with takachiyou. Yum! She mumbled like Mr. Purgatory and only gave me a small bite 🤣.
