I bought it because a liquor store in my neighborhood started handling Tajima. I was surprised at how fruity it was. It is fresh, moderately sweet, and delicious. It is a more modern sake than I expected. After drinking this after the first time, it feels more like a sake 🤔.

This sake was tasted at the Kobe Hankyu event and made a good impression, and was highly praised by Nemuchi-san. A liquor store in my neighborhood became a special distributor, but I was wondering why they didn't carry this sake. Rice used is unknown There is a bunch! It has a very "Yamahaku" feeling. The sense of maturity is also there. The taste is dry, but the sweetness is spreading on the tongue. The sharpness is not bad either. As the temperature rises, it becomes milder. This type of sake tastes better when it is not too cold.

I went on a one-day trip to a hot spring in Wakayama. Since I was there, I had a drink at an izakaya (Japanese style bar) near the station. The bonito in Wakayama is delicious! Mochi bonito in early spring is also good, but the fat from the returning bonito goes well with sake. Taiheiyo is a big-boned sake that goes well with heated sake. The Yamahai was wonderful. I think it's been a while since I've had a Yamahai. It's good to go out for a drink once in a while.

The rice used is Gohyakumangoku. I bought it at the end of last year at an antenna store in Toyama. I didn't know about this brand. The color is a light amber. The color is pale amber, and the flavor is just as it should be. It's relatively easy to drink because it's crisp and not overpowering, but it didn't seem to suit my partner who likes floral and sweet flavors. It didn't match well with the grilled chicken, but I think it will swell up with time, so I'll leave it for a while. It's quite a unique sake, and I don't dislike it!

I have had Taitozan before, but I don't remember much about it, so I bought it for the first time in a while. It has a slightly astringent white wine-like aftertaste with almost no sweetness. I think it is best to drink it with fish dishes, which is a standard white wine. Since it is winter from now on, yellowtail and radish would be delicious. I, of course, drink it only with sake.

This is the first bottle of Akita Shun Ginjo. I've never met this brewery before, but it's a good omen❗. The second day, the aroma of the nama-moto has receded into the background, and the taste becomes light and clean, but the nama-moto structure gives it a moderate depth, as if it is producing the flavor from a step back. This sake has become my 💓.

National Sake Fair 2025 in Osaka_63 Akita Prefecture booth 4 Naba Shoten Co., Ltd. is located in Akita City. The current sake brewery was built in 1927-3, the first reinforced concrete structure in Tohoku. Ginrin Kurukuru A refreshing sourness, but with a hint of umami. It has a slightly modern feel, with a slightly yogurt-like sourness. Drunken Garden in Azumino, Shinshu. I was curious to buy it because it is 59% Hitogokochi, a Nagano Prefecture sake. As the label says, it is a refreshing sake with a delicious flavor. It is not at the top level of popular Nagano sake, but it has a glimpse of Nagano's sake character.
