Rice polishing ratio 65 Alcohol percentage 15%-16 Sake degree +2.5 Acidity 1.6 Yamahai? It is so beautiful! The lactic acid aroma and acidity are just gentle. Long-lasting, nostalgic sweetness Enshu is the name of the region that used to be called Toomi Province, which is now the western part of Shizuoka Prefecture. Jizenryu (natural flow) It is the yeast, not the people, that makes the sake. People only take care of the yeast and finish the sake. So we don't know what kind of sake we are going to make every year. He says, "We don't make sake like other breweries, where we say, 'This is what we're going to make,' so we leave the fermentation to the yeast and make sake that we think tastes good. After the sake is made, I think about how to sell it." I want people to enjoy drinking it, not just drink it in quantity." Quote

Japan!
I bought it on a trip to Izu Kogen and had it in my room before dinner. It was very gassy and difficult to open, and the local liquor store owner told me I was very brave, but I managed to open it without overflowing. It has a gaseous and doburoku taste that is hard to find.

Sake Rice:Honorifuji Easy to drink♪ Delicious♪ The aroma is soft, the taste is soft, and the aroma is typical of Shizuoka sake, but it goes well with fish! Perfect as a food sake!

I went to a liquor store and asked the owner to recommend a sake that goes well with hot sake. When I drank it before heating it up, I thought it was not clear, but when I heated it up, it was sweet when I drank it, but had a sharp taste. I think it tastes better when heated! #Honorifuji #Morimoto #Hot sake

Drinking out in Shizuoka for the first time in a while. We went to a restaurant with a good selection of Shizuoka sake. The menu only lists the brand name, and they asked us to look in the fridge. They only have honjozo, but some of them are junmai (pure rice). Since the price was the same for all of them, I decided to go for the Junmai. It was a dry yet sweet sake with a clean, clean taste with little clutter, and the snacks went down a treat. It was delicious!

Morimoto Morimoto Junmai Sake "Hatsu-no-Takimikiri 2022". This is my first time to drink this brewery. It was a delicious one 🍶🎶 and served chilled. It is a dark, umami, spicy sake, but as the temperature returns to normal, the sweetness and sourness come through. I think it is a good sake at room temperature or warmed. All of Shizuoka Prefecture's sake is delicious.

The spoils of my trip to Shizuoka. I tried to choose something that Tokyo doesn't seem to have! You have good taste in naming things. Sweet? No. Surprisingly refreshing? And finally, a hefty 18 degrees and high alcohol! This is a busy sake. It's easy to drink, but it's not so easy to get drunk.

The purchase condition for Hanayo-Yoku was to purchase sake over 1700 yen, but the sake I wanted was either under 1700 yen or over 2000 yen, so I chose this one. The rice is from Honefuji. It is dry and has a smoky impression. It has a strong impression of acidity. There is no freshness at all. Would it be better to warm it up?

I heard that this is the smallest brewery in Shizuoka. In fact, I've never seen it outside of this liquor store.

When I drink it again, it is spicy, but I can feel a trace of sweetness. But overall, it has a unique atmosphere. I think it should be heated rather than cold.

It is easier to drink at room temperature. The pungency is less pronounced than with cold sake.

The name is intriguing. After the mild and mellow flavor in the mouth, the aftertaste and the feeling of a kick in the throat are just bursting with dryness. Truly delicious!
