There is clearly more lees than the previous Yamadanishiki. When you take the supernatant first, the taste opens up from the beginning, with a thick umami and sweetness spreading. The Yamadanishiki Junmai Ginjo reached this state at room temperature, but this one's flavor comes through even at low temperatures. When the lees are stirred, a crisp acidity is added and the aftertaste becomes clear. The full-bodied aroma comes out of the nose, and the taste becomes highly complete at once. This one is also insanely delicious! I've been drinking a lot of Omachi sake lately, and I wonder if this complex and thick sweet flavor is a characteristic of Omachi.

Yamadanishiki ver. Compared to Omachi's lees sake, it is slightly more lees and has a 1% lower alcohol content (17%). The bottle size is also changed from 500ml for Omachi to No. 4. The aroma is like rice itself and rice malt. The pure sweetness that is typical of Yamadanishiki passes through the nostrils with a slightly thick texture, and there is a slight bitterness that seeps into the tongue. A slight bitterness seeps into the tongue and a tangy sourness on the tip of the tongue. The taste that spreads in multiple directions in the mouth is like a rocket firework. As the day goes by, the acidity will become more rounded and a sense of unity will emerge.

平成29年の九州北部豪雨で被災し、復活を遂げた井上酒造さん。そして専業主婦から50歳で杜氏へと転身された井上百合杜氏の渾身の一本。 飲む方も身が引き締まる思いです。 生酒らしいフレッシュな香り、酸度のおかげかマイナスに振れた日本酒度の割に旨口で、爽やかな後口でした。 初日はやや酸味が強い感じがしましたが、2日目は酸味が落ち着き、食事ともよく合いました。

I bought it at a sake shop in Kintetsu Department Store. I can't read "mother-of-pearl" 🤣I heard it is read as "Uzume", but if you type "den" for mother-of-pearl in your phone, it will come up 😁. If I lived a normal life, I would never use this kanji 😅. I got the impression it's a pineapple with a bit of bitterness 🍍. It was sweeter when I tasted it, so maybe it's sweeter after some time, but it's 500ml and I can't wait that long 🤣. Maybe the aroma is a bit peculiar.

Purchased at Kintetsu Department Store's Sake Tour. The label is a sheep kept at the brewery. It has a slight sweetness, and is full, rich, and powerful. It has a strong richness. It might be good if it is laid down. There are graininess and nutty nuances. I guess it's normal for a good price. I didn't buy Yamahai because I didn't want the similar taste to continue, but Yamahai might have been better... It's the third day, but I think it's getting sweeter and tastier than the first day.

Rice used is something from Mie Prefecture Aged for 4 years, pale amber in color. Smoky and graininess with the color as it is. The sweetness is elegant, and the spiciness in the aftertaste has an impact on the throat and nose. It is a little peculiar, but I personally like it! I don't know what the original flavor was, but it has a nice aged feel. ❣️

The sake is brewed by "Toroki Shouten", a sake brewer who was involved in growing the rice and brewing it together with Wakatakeya Sake Brewery. I got it as a sign of support 😊 Is it what's called a light, dry taste? It had a faintly sweet aroma, but the sip was refreshingly watery! The flavor and bitterness come out on the palate. I was drinking it with cream cheese as an entrée, but it doesn't get in the way, so it's probably just right for a mid-meal drink 😊.

The sundubu jjigae was I kept the spiciness low so that my family could also enjoy it. I made the best use of the soup stock of shijimi clam. The sake does not have much rice flavor 🤔. Maybe because it is a ginjo sake. It is quite light.

Morimoto Morimoto Junmai Sake "Hatsu-no-Takimikiri 2022". This is my first time to drink this brewery. It was a delicious one 🍶🎶 and served chilled. It is a dark, umami, spicy sake, but as the temperature returns to normal, the sweetness and sourness come through. I think it is a good sake at room temperature or warmed. All of Shizuoka Prefecture's sake is delicious.

This is KIYOMIZU from the same hanpukai. The difference is that Maikaze from Gunma Prefecture is used instead of Gohyakumangoku. The aroma is the same as SAKAEMASU, but milder. The taste is surprisingly less cloying than SAKAEMASU. There are not many rice varieties that have a cleaner sake quality than Gohyakumangoku. The sweetness is also relatively strong and full-bodied.

Our annual sake party 😁 today with three of us 🌸. My friend brought me this sake from Naito Brewery in Sobue, Aichi👍. It's very light and easy to drink. It has a dry throat, but not too much acidity, and you can taste the flavor😋. It's a great sake to drink with two great drinkers and it's easy to drink like water😝.

First Nagoya Night of the Year First sakayu at the hotel after a long time meeting for dinner The rice used was Yumesansui produced in Aichi Prefecture. An orthodox junmai sake with a strong sweetness. It is best to drink it chilled after a meal. It is not too heavy, but I felt it was a little heavy.
