Fish and Grass
The Inoue Sake Brewery in Oita, located on the border with Fukuoka Prefecture, is a brewery with a long history. Named after Ms. Yuri Inoue, the only female toji in the prefecture, this sake is made with the utmost care, starting from the rice cultivation process at the company.
The taste is melon-like sweetness. It has a richness and fruity flavor that is typical of unfiltered, unpasteurized sake. It is a modern bottle.
I didn't know there was such a sake in Oita, so I guess sake is very deep. Incidentally, this sake is said to be limited to 1,000 bottles. Perhaps it is a seasonal version of the Yuriai brewing series.
I was curious about this sake since Nemuchi-san drank it at the event.
Maru-san drank it first and was looking forward to opening it.
The name "Yuri Shizukuri" comes from the name of the president and chief brewer, Mr. Yuri Inoue.
The lees are submerged, and when mixed, it turns light and cloudy. It has a fresh, melon-like flavor. The acidity is quite strong, and the sweetness fades out with a slight bitterness at the end.
Leading sake stores in the Kansai region have started to handle it one after another.
