Special Junmai sake with 60% polished rice ratio I bought the jacket because of the impressive cartoonish, retro Showa-era "Oniotome" illustrations. The illustration was done by Minako Sonobe. It is made with "Homare-Fuji" sake rice developed in Shizuoka Prefecture. It has a calm aroma and an elegant, gentle taste with a well-balanced flavor, and it tastes great on the finish!

I went to Fukuroi Sake House Yamaya for Kaiun Tachiharu Asashimusubori, and I was able to buy it without reservation every year, but not this year 😅I screwed up 😅. Since I went there, I bought another Risshun Asashibori 😊for good luck👍. It's a good omen 📌720ml ¥1,980 Here's a quick rice! A love that has lasted over two years has been fulfilled. I had a bottle in Ito izakaya two summers ago and enjoyed it so much that I was looking for a bottle to buy someday. I finally met the devil maiden in love😄. It is slightly effervescent and has a rather firm, juicy sweetness, but the mouthfeel is light and cuts through easily. The aroma is greenish, like unripe bananas🍌. Fresh and easy to drink, it goes well with oily fish 🐟.

OSAKA SAKE & FOOD EXPO 2024⑧ This is another unknown sake brewery, Yukijaku Sake Brewery. It is made from Yamada-Nishiki with a 38% rice polishing ratio and unfiltered. According to the official website, there are two types of sake: hi-ire and nama, but the one I drank was probably hi-ire. I think it was fruity and quite sweet 🤔. Forgot to take notes💦.

Special sake that I got as a gift when visiting the shuzo. It is new year blended koshu released from the brewery every new year time. It blended the Daiginjo from year 1989, 2001 & 2013. Surprisingly, its still very light body - unlike other koshu which makes you too full. I like the aroma, while soy sauce and umami is significant, you can also feel the raisin, dried grapes inside. On palate it leans more towards coffee, toffee & dark chocolate. Serving hot is a good choice too.

I saw Sanad and Nemuchi rave about this brand a long time ago, and it was on my list of things to drink. The sweet and gentle aroma is pleasant. It has a pleasant sweetness in the mouth and a long, lingering spiciness after swallowing. It has a strong alcoholic taste and a rather robust flavor. This is one of my favorite types 😋. It is good with simmered dishes in Japanese cuisine. It has a wide range of dishes that can be matched with western food as well👍.

#Drinking at home The spiciness, sweet umami, and moderate acidity come quickly, and while enjoying the aftertaste, the bitterness comes unexpectedly. It is similar to the first sake released from the brewery, but I think this one has a clearer outline. I think Doukan is stable in its line of slightly sweet umakuchi at first and finishes with bitterness. Like Okura and Tamagawa, if the direction of the flavor is consistent, we can drink it with peace of mind. Anyway, Shiga sake is generally very tasty.
