Herman MokClean and elegantly smell. Slight fruity aroma of pear and apple - then comes the sweetness of rice powder and raw rice and also cream and milk. On palate it is complex yet elegant - silky smooth with fruity, rice and fresh cheese taste. You can expect it has a much aging potential. Love how the balance between sweetness, sourness and umami works. Never disappoint!

Herman MokIt is an easy drinking sake and good to be paired with most dishes. Slight hint of apple & pear aroma, but it is the smell of raw rice & yogurt being more prominent. On palate the sweetness mainly comes as rice like with fresh cheese. Also slight umami, medium body with some minty and quite long after taste.

Herman MokIt has been a while since I last drank an Ohmine properly. This 3 grains with 出羽燦々 is actually not bad - with pear like fruity aroma. Also grapes and banana taste are spotted on palate. It is not only sweet, but balanced by a bit of acidity and bitterness - milk and cream. Some pleasant aftertaste.
Dassai二割三分 遠心分離純米大吟醸

Herman MokFinally the last one and the most expensive one 遠心分離. Surprisingly most of my friends prefer the standard Dassai 23 more. I think the 遠心分離 version is a bit too clean - standard melon and pineapple taste, a bit of rice powder, and nothing more. Perhaps it is too clean.

Herman MokThird time for me to drink Dassai Blue 50. Rather than the clean and transparent standard Dassai, the blue 50 obviously have more taste and drier than the normal ones.

Herman MokFun to do a blind tasting to classify Dassai 39 and Dassai 39 Namazake. The Namazake one has more lactic acid feel for sure - like milk and yogurt taste. Also can sense the smell of ripe banana - clear characteristic of Namazake.
DassaiBlue 23純米大吟醸

Herman MokNot yet available in Japan and Hong Kong. Thanks for my friend to have taken it all the way from USA! I think it has to be tasted with the normal Dassai 23. When comparing to the Japan one, Dassai Blue is also clean and transparent, but with some more hints of mineral taste. It adds a little bit of complexity to the sake, also the lactic acid feel is stronger in Dassai Blue 23 with slight creamy taste.
Dassai登龍門純米大吟醸

Herman MokSpecial Dassai which is seldomly found in Hong Kong. Only available when Dassai takes some of these to the Sake Festival in Hong Kong. This Dassai is manufactured by the two young dassai craftworkers from end to end. When placing it against other Dassai, on nose it gives fruity and sweety smell, but on palate it feels much dryer and plainer. Still could spot the fruity and honey taste - but weaker than normal Dassai. Still interesting to try.

Herman MokSeason limited Dassai which needs to be stored at -18 degree celsius. Need some time for the ice to melt to be a bit of smoothie feel. Overall it is crispier and drier than the normal Dassai 39 you would drink. Very fresh and good to be served at start.

Herman MokI must admit that I did not pay much attention to this as I am a bit tipsy already. But no unpleasant smell or taste for sure. Must be elegant and smooth. More for recording purpose.

Herman MokAs you expect from Kaze no Mori, it always comes with carbonic acid feel and bubbles, so need to be careful when opening the bottle. I would say it is much smoother than the standard ones you could get - likely due to the 22% rice polishing ratio which you dont normally find for this brand and the innovative pressing method used. Quite smooth and elegant with fruity taste and aroma. Long after taste as well.

Herman MokA bit sour than expected. Overall still good balance of acidity and sweetness, easy to match with food. Can feel some cream taste and bitterness at the end.

Herman MokA very interesting sake. Initially on nose it is mushroom, soy sauce and seaweed coming out. But then you will get a small hint of honey, also with some cream cheese smell. On palate it is a bit sweeter which makes people think of dried grapes. Though it is being labelled as chocolate, i don’t think it is that prominent. Most interesting part comes when it has been aired for 2-3 hours - aroma of sugar cane, honey and caramel comes out. Sake becomes smoother as well, good to go with dessert!

Herman MokCompared with the Standard Masumi Kuro, Sanka JDG comes with a more noticeable fruity aroma like banana. The cream and fresh cheese aroma is also more prominent. On palate it is richer and sweeter than Kuro - taste basically same as nose.

Herman MokA very standard sake that does its job well. Clean fruity aroma and hint of cream and fresh cheese. Generally the same on palate - a little bit dry and light bodied. Goes good with most dishes.

Herman MokVery elegantly served with fine and smooth bubbles. Perfectly balanced sparkling sake as a start to the meal. On nose you could catch the slightly acidic lemon smell - believe it is from the white koji used. Same acidity is spot on palate, with also some elegant grapes and pears taste. Love the yeasty feel like bread in the middle, plus soft milk and yogurt taste. Also sweetness of raw rice is spot - great balance and would always love to drink more.

Herman MokClean and elegant. Surprisingly on nose I do not only discover the fruity melon like aroma, but also yogurt and milk acidity. On palate it is more fruity, a little bit if sourness. Quite fresh with elegant bubbles. Nice finish.
