Daiginjo 1 year
Almost no sense of maturity
There is a little bit of umami, but it is mostly water.
Fruity taste comes out as the temperature rises.
Junmai Ginjo 5 years
Not much difference in the sense of maturity.
There seems to be a little bit of a tangy taste due to the junmai nature of the sake, but it's only a slight difference.
Daiginjo 10 years
The aroma suddenly has a different sense of maturity.
It is quite habitual and I personally dislike it

The owner told me that although recently the sake boom has made the sales of non-brewed sake more popular, there are still many breweries that want their customers to know the taste of brewed sake 😁.
I drank it at room temperature and it's really good ‼️
It is different from the 2025 sake from Yamagata and Wakayama! It is a well-balanced sake with sweetness and sharpness, a little different from the sake of Yamagata and Wakayama regions.

Comparison of one year, three years and ten years aged sake
One year old -> Fruity ginjo aroma, deep sweetness and sharpness in balance.
Three years old -> Tastes and smells like honey! I want to drink it in small sips.
Ten year old -> Mellower and less peculiar, with a slight saltiness or astringency? Astringency?
I don't think I would know what kind of sake it is if I drank 10 years old without being told anything about it.
It was a valuable experience for me!

It has a unique aroma, like a smoked fish. It's so addictive that I want to keep smelling it.
The rich, mellow, brandy-like flavor seems to go well with peculiar snacks. It is also good on the rocks.
Sake is a drink for adults, and even among such drinks, this one seems to be an adult's drink.
Pineapple, banana, syrup and rice cake. The flavor is a beautiful combination of tropical fruit aroma and rice flavor. The attack is fresh, the taste is edgy and moderately bitter, and the aftertaste has a slight sense of maturity like an old wine. The flavor changes with each passing step, from a sweet aroma, to a dry taste, to a mature aftertaste.
