February, the coldest month in the north: ☃️ This item was recommended to us during the season when heated sake is delicious! This heated sake was really delicious. Yamahai Junmai Sake Sake aged in a cave at low temperature🍶. Polishing ratio 65 Acidity 1.9 Sake degree +4

Purchase of a warehouse A birthday present from my son He found a warehouse in Nasu-Karasuyama city where he went for work and bought it for me. I wondered if I should drink a 20-year-old bottle or if I should let it sit longer, but I decided to take my son's feelings into consideration and opened the bottle. I thought it was corked with a cork, but it had a cap inside a hollowed out piece of wood. The beautiful golden color gave off an aroma like aged Shaoxing wine or whiskey. It also tasted a little like Shaoxing wine. It tasted mild and sweet, with a hint of spiciness and bitterness at the end. This is the taste of maturity! I was happy to have a bottle that I would not have chosen for myself. Thank you, my son. ‼︎

MA-KI-. Thank you very much. The good thing about old wine is that you can drink it while thinking about what you and your family were doing back then.

Mature dewdrops ~ Uroko~. I visited Shimazaki Sake Brewery in early autumn last year. It only takes a few minutes walk from Karasuyama station. It takes only a few minutes to get to the brewery from Karasuyama station. But to get to the cave, we borrowed a bicycle and took our time for about 20 minutes. It is located on the side of a small mountain, and it is too far to climb up by bicycle. We paid an admission fee of 200 yen and went inside. It was a hot day, but it felt nice and cool at first. After a while, I felt cold 🥶 😀. A blessing from nature, no matter what the season. Almost constant low-temperature-controlled (stored and matured) sake It's so fascinating! I only bought one bottle because I had plans for later, and it was a bit of a disappointment! There was also a tasting at the brewery! My impression of this sake The color is a pale gold with a sense of maturity. Acidity on the tongue The umami spreading gently. I liked it a lot! Alcohol 17%. Rice polishing ratio 65 Acidity 1.9 Sake meter degree +4 Yeast AZ-5 Taste 4.0

Hello Jay & Nobby 😃 The way to the cave is sweaty on a hot day. Shimazaki Sake Brewery, you could do quite a bit of tasting by yourself! Also, I highly recommend the delicious pastry shop SHIMADAYA 🐱 Please do!

☆☆☆☆☆ In a short time waiting for a friend. This is the first brand name I've seen, Mature Roukare, a low-temperature aged sake. The color is a very matured type of sake. From the first glass, it is a sake that sinks in. Delicious.

It's Sake Day, so we opened a set of aged sake we received. Daiginjo 1 year Almost no sense of maturity There is a little bit of umami, but it is mostly water. Fruity taste comes out as the temperature rises. Junmai Ginjo 5 years Not much difference in the sense of maturity. There seems to be a little bit of a tangy taste due to the junmai nature of the sake, but it's only a slight difference. Daiginjo 10 years The aroma suddenly has a different sense of maturity. It is quite habitual and I personally dislike it It tastes like Shaoxing sake 3.00

3 year old sake 🍶. Umaa‼️ The owner told me that although recently the sake boom has made the sales of non-brewed sake more popular, there are still many breweries that want their customers to know the taste of brewed sake 😁. I drank it at room temperature and it's really good ‼️

It is different from the 2025 sake from Yamagata and Wakayama! It is a well-balanced sake with sweetness and sharpness, a little different from the sake of Yamagata and Wakayama regions.

At Shimazaki Sake Brewery in Nasukarasuyama City, Tochigi Prefecture Comparison of one year, three years and ten years aged sake One year old -> Fruity ginjo aroma, deep sweetness and sharpness in balance. Three years old -> Tastes and smells like honey! I want to drink it in small sips. Ten year old -> Mellower and less peculiar, with a slight saltiness or astringency? Astringency? I don't think I would know what kind of sake it is if I drank 10 years old without being told anything about it. It was a valuable experience for me!
