A birthday present from my son
He found a warehouse in Nasu-Karasuyama city where he went for work and bought it for me.
I wondered if I should drink a 20-year-old bottle or if I should let it sit longer, but I decided to take my son's feelings into consideration and opened the bottle.
I thought it was corked with a cork, but it had a cap inside a hollowed out piece of wood.
The beautiful golden color gave off an aroma like aged Shaoxing wine or whiskey.
It also tasted a little like Shaoxing wine. It tasted mild and sweet, with a hint of spiciness and bitterness at the end.
This is the taste of maturity!
I was happy to have a bottle that I would not have chosen for myself.

I visited Shimazaki Sake Brewery in early autumn last year.
It only takes a few minutes walk from Karasuyama station.
It takes only a few minutes to get to the brewery from Karasuyama station.
But to get to the cave, we borrowed a bicycle and took our time for about 20 minutes.
It is located on the side of a small mountain, and it is too far to climb up by bicycle.
We paid an admission fee of 200 yen and went inside.
It was a hot day, but it felt nice and cool at first.
After a while, I felt cold 🥶 😀.

There is a little bit of umami, but it is mostly water.

Not much difference in the sense of maturity.
There seems to be a little bit of a tangy taste due to the junmai nature of the sake, but it's only a slight difference.
Daiginjo 10 years
The aroma suddenly has a different sense of maturity.
It is quite habitual and I personally dislike it

Comparison of one year, three years and ten years aged sake
One year old -> Fruity ginjo aroma, deep sweetness and sharpness in balance.
Three years old -> Tastes and smells like honey! I want to drink it in small sips.
Ten year old -> Mellower and less peculiar, with a slight saltiness or astringency? Astringency?
I don't think I would know what kind of sake it is if I drank 10 years old without being told anything about it.
It was a valuable experience for me!
