OSAKA SAKE & FOOD EXPO 2024⑧ This is another unknown sake brewery, Yukijaku Sake Brewery. It is made from Yamada-Nishiki with a 38% rice polishing ratio and unfiltered. According to the official website, there are two types of sake: hi-ire and nama, but the one I drank was probably hi-ire. I think it was fruity and quite sweet 🤔. Forgot to take notes💦.

I thought it was Hibari, but it was Yukijaku. My first sake from Ehime. It's a delicious sake with a fluffy sweetness that spreads to the mouth, and no harshness. I think it's a good sake that will become a rare and delicious sake once its name becomes known. At home. Sake tasting party with friends after a long time. We brought our own sake. First up was a local sake from Echigo-Yuzawa, a gem bearing the name of the first head of the Shirataki Sake Brewery. The aroma is gorgeous, and in the mouth you can taste the acidity and umami, with a slight lingering alcohol taste. It leaves a slightly bitter or rough feeling in the back of the throat. The Shirotaki Shuzo is known for its Kouzen Nyosui, which has a fuller aroma and taste compared to the Kouzen Nyosui. The bottle was also unusual, with an innovative volume of 630 ml. This is the first brand I've seen and the taste is great. ‼️

I saw Sanad and Nemuchi rave about this brand a long time ago, and it was on my list of things to drink. The sweet and gentle aroma is pleasant. It has a pleasant sweetness in the mouth and a long, lingering spiciness after swallowing. It has a strong alcoholic taste and a rather robust flavor. This is one of my favorite types 😋. It is good with simmered dishes in Japanese cuisine. It has a wide range of dishes that can be matched with western food as well👍.

GW in Kanazawa! At the Kanazawa Sake Brewery in Kanazawa Station, we came across a dream machine that allowed us to sample sake for 100 or 300 yen (P.S.) Naturally, we took the challenge. The description said it was dry, but I prefer raw sake, so I chose this one. I tasted it thinking it might be a fruity type, but it was a clear dry sake that would go well with sashimi and other dishes. I appreciate free tastings, but I feel somewhat guilty about it, so this kind of reasonably priced tasting is very helpful and encourages me to try different kinds. I tasted three other types of sake here, and all of them seemed dry to me. I have an image that Ishikawa's sake is basically dry.

This is KIYOMIZU from the same hanpukai. The difference is that Maikaze from Gunma Prefecture is used instead of Gohyakumangoku. The aroma is the same as SAKAEMASU, but milder. The taste is surprisingly less cloying than SAKAEMASU. There are not many rice varieties that have a cleaner sake quality than Gohyakumangoku. The sweetness is also relatively strong and full-bodied.

I went to a liquor store near Niigata Station and asked the clerk, "Do you have any Yamama?" The clerk replied cheerfully, "We are out of Yamama, but we have Koshinoshiratori now. What is it? Koshino Jakucho...?" The clerk explained that the sake is made in the same tanks as Yamama, and that the middle sake is Yamama, while the aggressive and rough-run sake is Koshino-Shiratori.
