I remember the last time I drank Miyaganbai, it was delicious 🤔. I knew there was a sake collaboration between my neighborhood liquor store and the Kanmei Brewery, but I put it off thinking I could always buy it. But it's plum season and I finally bought it (almost, coyly). Oyusaki Quartet I heard that the name "Uguisaki" is a play on Osaki, where the cold plum trees are located, or plum blossoms and bush warblers (Uguisu), and many other things! At first, you can taste a little sourness. It's just a little bit sour, but it's not too much. The sweetness is soft and lingers on the tongue. Maybe a little more refreshing than the Miyakanume I had before (not sure I remember that 😆). Fresh, fruity and a little different from the gentle sweetness of rice. It is also beautiful and delicious 😋. On the second day, it seems a little more sour. And sweetness too. As an added bonus, here's a picture of the plums

Hakata Hyakunenkura Shiboritate Junmai-shu Namaishu 17% 70%. Purchased at a brewery in Hakata. It was a beautiful facility with a lot of attention to detail for tourism. Many foreigners visit the brewery. This Shiboritate Junmai sake has a strong raw sake flavor. When you put it in your mouth, you will feel lactic acidity, astringency like grape skin, and spiciness in that order. The body is strong and very drinkable. It has a strong body and is very satisfying to drink. The sake brewery was more solid than I expected. If I visit Fukuoka again, I will stop by. Rating 4.0 (out of 5.0) 20231119

Purchased at the sake department of Ropia in Hirosaki. Surprisingly, there are no liquor stores or supermarkets around Hirosaki Station, which is a problem if you want to buy local sake as a souvenir. The aroma is wonderful. The taste is light, with a soft, unrefined sweetness, a bit of bitterness, and a touch of sourness. It is not too strong in character, so it can be drunk as a mid-meal sake and will not interfere with a meal. It is a good match with light snacks such as yakko, since it was completely defeated when drunk with Akita's Iburi Gakko.

It's Adohadari in Kamekichi 🐢. Please ask chika what "Ado Hadari" means 😊 lol The top aroma is slightly fruity. In the mouth it has a rich, juicy sweetness and a full-bodied flavor for an Aomori sake. A must have for those who love Nama sake 😋. Second stop on the Takayama sake brewery tour. We visited Funasaka Sake Brewery. As usual, the tasting machine took care of us. I chose a junmai ginjo that seemed to suit me from the description. It was described as sweet, but I got the impression that it was medium sweet with no fruity taste. I wonder if it would be a sweet sake in this brewery's lineup? It tasted crisp.

I found my favorite Satochi at an Izakaya and couldn't resist ordering it😍. The smell of pears. It smells so good. It has a caramel-like sweetness and then a light sourness. After that, the bitterness comes through quickly. It's a beautiful sake. It's really delicious. It's been a long time since I've had it😊. The taste itself is refreshing, but even with a strong oily taste like mackerel, there is a flavor that somehow does not lose at all ️.

@Osawa of Sake Rice used is unknown Not fruity at all. It is not light and dry, and has aged well. The taste is a mellow type with a strong umami. The aftertaste is surprisingly refreshing for a Daiginjo. It is what is called "the sake of sake.

I stopped by Hashimoto Sake Brewery on my way to Yamanaka Onsen last year. The store is a bit like a museum, and you can learn a lot from the easy-to-understand explanations about the rice polishing ratio and the process of making sake. I was not able to taste the sake because I was the handle keeper, but the president recommended a lot of sake and my family was getting drunk (sweat). I drank it cold, but it was still dry. When I heated it up, it became soft, mellow, and easy to drink. The color is quite amber, so the polish may be shallow. Personally, I think drinking it at room temperature or hot is the right way to go. I like to drink sweet sake cold, but I'm starting to think it would be nice to drink dry sake hot ( ˘ω˘ ).
