A gift from my brother at home the other day. It was chilly, so I paired it with pork shabu-shabu. It was a little high at 17%, so I tasted it slowly at first and then served it on the rocks in the latter half of the bottle. I enjoyed the mildness of the wine.

This is another sake that was mentioned in this month's special issue of dancyu on sake that tastes good at "room temperature". Niigata Prefecture has many breweries, and there are still a few that I have yet to try. There are many breweries in Niigata that I have yet to try. I'd like to try it at room temperature or lukewarm.

@sakebar Fukuzo This is the last sake I drank at Fukuzo 🍶. For those of you who think "how much have you had to drink? I think so too😅. The first aroma is sweet with classic acidity. It has a full-bodied sweet flavor with a hint of acidity on the palate. It's also a great costumed honjozo that doesn't make you feel like it's been soaked in alcohol 😋. It was delicious 🍶✨. Thank you for everything, landlady 🙇🙇🙇.

It's quite an austere label, my first time at the brewery 🍶The aroma is mild, light, and balanced slightly dry type without any habits, just right for an evening drink ☺️.

Saitama Pref. Iruma-gun. Asahara Sake Brewery Co. Biwa no Sasanami Junmai Namaisake. I went to buy the pre-sake I wanted, and since that was the only sake I was sorry to buy, I bought Saitama sake, which I rarely have a chance to drink. When I was trying to decide which one to buy, the owner laughed at me at the cash register, wondering why I was looking at the back label so much. I told him I don't like anything too spicy, and we chatted for a bit. I had it cold. When we poured it into the glass, there were quite fine microbubbles adhering to it. It is clear with a faint yellow tinge. The top aroma is slightly malty and slightly apple-like. The mouthfeel is juicy, full, and smooth. The palate has a slight sweetness from the rice on the tongue and a mild acidity that flows gently through the mouth. The juiciness is followed by a refreshing taste. It has a malted rice aroma that spreads when it passes through the nose. The aftertaste is a bitter and bitter taste with a slight spiciness that lingers for a short time. The sake has a sharp taste after passing the throat. Rice polishing ratio: 70%. Alcohol content: 15%. Ingredients: Rice (domestic), Rice Koji (domestic) Sake degree: +4 Amino acidity: 1.2 Acidity: 2.0

Kansai Sake-new year off-line meeting (9) The fun continues ✨ We had a great conversation about the rare sake at the beginning of the party 🍶. Nishibori Tank Gake Shibori. Fruity aroma with a hint of honey, sweetness with no unpleasant taste, and a pleasantly clean aftertaste. This is delicious! I wonder if this is a private brand product of Nishibori Shuzo, a brewery in Tochigi that brews "out of the gate" and a liquor store 🤔. Tochigi love 🥰 even in Kansai offline meeting

Post 1) for skipping it. The grain of the rice was amazing! It's like it's for people who can enjoy the lingering gruel and miscellaneous flavors underneath. Be careful opening the bottle. This was a fun sake 🍶. A rare intoxicating sake for me personally .

Sake...not really sake, but a liqueur made from sake. When you open it, it has a sweet and sour aroma like white wine. When you drink it, the taste of strawberry and the aroma of sake penetrate your nose! Interesting!

Purchased because of the 60% milled rice ratio and 20 alcohol by volume. I wanted to drink it on the rocks on the day the rainy season ended, so I opened the bottle. ☀️ I paired it with frozen Genghis Khan that I brought back from Tono. It's well separated, so I shook it lightly before putting it in ice 🧊. It's less lactic than I thought it would be, and it's very spicy and thick, but it's cold and refreshing and delicious 🤤. I like this kind of sketchy in a good way. My brain feels good🤩. Definitely this for Genghis Khan 😭

Alone, it is quite matured. However, it goes well with everything we served today, such as simmered taro, grilled broccoli, and cold shabu-shabu with hamo (pike conger eel). I was surprised.

At Nihon Shuya Shuroku. H29BY. yellow in color. At room temperature, it has a strong burnt taste. When heated without adding water, it has both umami and sharpness with a burnt taste. Goes well with blue cheese.

I've been sober for a few days, but I've lifted the ban. Is it the limited sake prepared for the Niigata Sake Festival? The usual brand is called "Tenjinbayashi". It has a juicy and rich sweet taste. It has a sweet taste that is not like Niigata sake. It is not fruity and the aroma is a bit quirky. It may be different for each taste. It is sweet, but it has a chunky sweetness...

Gorgeous ginjo aroma. It has a clean, light and beautiful sweetness. Although it is jungin, the taste is so beautiful that you would think it is daiginjo. Is it because it is made by hanging it in a bag? It is delicious, but maybe too elegant. It would have been better if it had a little more umami.

It is brewed by a young brewer who used to work at Kuroryu. From this season, the responsible brewing will be separated from the regular products and will be available only to special distributors. For a moment, you may wonder what's going on. But after a short delay, the concentrated, juicy sweetness and umami taste arrives. I think it is rather refreshing. It may be a unique flavor. It is a very drinkable type of wine.

This sake is limited to two liquor stores, one in Sakai and the other in Kishiwada. Only 12 bottles are in stock, so the next time I come back, there won't be any left, so I was allowed to try a special sample before purchasing. It has a rather gorgeous ginjo aroma. It has a low alcohol content and is sweet with a gentle taste. It is low in alcohol, but you can feel the fullness of the flavor. It has no gaseous feeling, but it is fresh. It can be used by itself or with food. Shimada Special is delicious no matter what you drink.

Hakkeikubiki is a series of the eight blessings of Kakizaki: sun, water, earth, sky, wind, trees, snow, and people. This is wind. Come to think of it, it was windy in Kakizaki. This is the second bottle from the Sake Rice Study Group. The sake rice is locally grown Koshitanrei. The aroma is light, but has the gorgeous flavor of a daiginjo. The taste is very broad. It is delicious.

Oh, the label of Yuki (YUKI) has changed. Like "Kaze" and "Sora" in the Yaeguhiki series, the design is based on white, with a thicker material that gives a softer impression. The name "Yuki" is a summer sake of Yaeguhiki. Snow in summer. Until last year, Snow was a junmai ginjo made from Koshitanrei, but it is now a junmai daiginjo made from Yamada-nishiki. It is said that this is the only year that snow is brewed with Yamadanishiki. We bought it immediately without hesitation. Edamame (green soybeans) season is here! It's too good to be true. The aroma is like white grapes. The aroma is like that of white grapes, and the acidity is firm and smooth, The bitter taste that spreads softly is refreshing, The bitter taste spreads softly and is refreshingly sweet and sour, The clear and calm umami, The bitter aftertaste lingers gently, A junmai daiginjo that makes you want another cup, Delicious! Hachiekubiki is a series of wines that expresses the local Kakizaki's feelings toward its eight blessings: the sun (yang), water, earth, air, wind, forests (trees), snow, and people. It has been quite a while since its release, but still no water, trees, or people. I'm looking forward to it. === Ingredients Ingredients:Rice(domestic),Rice malt(domestic) Rice:Yamadanishiki produced in Kakizaki Rice polishing ratio:40 Alcohol content: 16%. 2,420 yen per 720ml === The name of the brewery is ★★★★☆
