Nishibori had never had one before so we decided to order it 💡.
It has a strong rice sweetness, and this one is also sweet like Wasanbon, leaving a bit of a lingering taste on the tongue.
Upon closer inspection, it was a Tochigi sake 👀.
It was like we were all drinking while saying that Tochigi sake is of a high level after all. ⤴️

Many people who are not familiar with "Nishibori" may know the brand name of "Monsai Huzue".
This is my first time drinking Nishibori, and it is delicious.
It is a sake with a good flavor and sharpness.
Short-stalked boat" is the parent of Yamada-Nishiki, a precious rice that has been revived in the modern age. I have not yet fully understood the characteristics of the taste, but I have the impression that it is lighter than Yamada.
There is not much information about Nishibori on the Internet, so it may be that only a small amount is produced.

I was really curious about this one that some people mentioned in the March Kansai Off-line Meeting report (‼️).
I was looking for a liquor store that sold this sake, and I found one in the city of Utsunomiya 👍Kotori-San happened to stop by that liquor store on the Tochigi Citizen's Line and I asked him about Nishibori, and he said they sell it, so I asked Nobby to rush over to the store 😊. So I asked Nobby to come over 😊.
I checked out the sakewa and found out what everyone thought of it 🤔, and they all praised it highly, saying it was "mildly gorgeous and has a nice sweetness😊It left the strongest impression on them😊And everyone was talking about their love for Tochigi🥰, which made me happy again 🥹.

Nishibori, which was sitting in the refrigerator with a label I had never seen before.
After ordering and looking at the label on the back, I realized it was from a brewery that had never been out of the gate.
It's not too floral and has a nice clear sweetness.
This is so good 😋.
Similar impression to Nagano sake.

I went for a walk to Kanda. I popped into Fukuno Tori Kanda just after it opened and greeted the manager.
Looking at the sake menu, I found another interesting item. Nishibori Aimaimaimi Golden Junmai Sake with Ancient Rice and soda tonic. Wow, it really is golden. The soda tonic flavor adds a coolness and a slight sweetness to the sake.
Junmai with a rice polishing ratio of 70%. It was chilled, so there was not much aroma, but once warmed up, it had a slightly sweet fruity taste. As the aroma suggests, it is sweet and delicious. The next day, there is an astringency in the aftertaste, but it disappears after 3 days. Does it depend on what you eat with it? When the sake is lukewarm, the aroma becomes more fruity and pineapple-like. When I remembered that there was a similar sake, I found "TATA" made in the same Tochigi prefecture.
This is the Pancée series, Pucis, from Nishibori Brewery. It seems to be a concept first, not a spec. It is described as "natural as it is," so I guess this is the basic taste. The aroma and taste are both weak when served cold, but it is a dry and elegant sake. The sake is dry, with a slight sourness and astringency, which is hard to believe for a sake level of -2. Try warming it up. The aroma is a little different from the usual aroma of dry sake, but I can't tell what it is. It has a unique flavor. Is it like a very dry white wine?

Fermentation is controlled in clear tanks under green LED light for 24 hours.
Taste】Medium-bodied, with a balance of sweetness and sourness.

Type] Junmai Ginjo (Hiire)
Rice polishing ratio] 55
Alcohol content】16%.
Sake meter] ±0
One of five bottles purchased as part of a recommended set at a sake store in Sakai, Osaka.
It has a light, watery mouthfeel, from which a full, understated sweetness spreads. It has a slightly bitter taste when paired with food, but as a food sake, it is quite high quality. I had it with firefly squid with vinegared miso, and it was delicious!
