I opened a bottle of "Hokuto Zuisho", a souvenir from my recent business trip to Hokkaido, which I purchased at a liquor store in Kitami called "Mayanagi Sake Shop"! My business trip was via Sapporo, Obihiro, Kushiro, Nemuro, Abashiri, and Kitami (Memanbetsu Airport) on my way home. Naturally, I went to an izakaya (Japanese-style pub) on the way, but I decided to limit myself to sake from Hokkaido, so I had a bottle of Nemuro's "Kita no Katsu Shiboritate" in Kushiro. I asked for a recommendation for sake from Hokkaido and was recommended "Kaminokawa Taisetsu". However, I had drunk it some time ago, and after much deliberation, I chose "Hokuto Zuisho," which I had never heard of, and it turned out to be the right choice. It is a beautiful, well-balanced sake with a slightly sweet, fragrant, and crisp taste. It is made from Hokkaido rice, with a rice polishing ratio of 45% and an alcohol content of 16%. Delicious!

It is a versatile sake that also makes it delicious! I once thought that Kichiemon Nakamura was a great sake because my brother is a Kabuki fanatic, and this sake may have the same weight. If it's a regular sake, I imagine it would be a Junmai sake, and it would be a very bad one at that! I would definitely like to try the junmai sake! Mr. Ota is in Shinjuku! Mr. Ota went to a sake bar in Shinjuku, where the sake was delicious, and to Robeliya, a very deep bar in Shinjuku's Golden Gai. A 30-minute broadcast in two bars is too short!

Today is the annual New Year's Day visit to Kawagoe Naritasan Naritasan, and then to celebrate the golden wedding of my wife's parents. Dinner. Yamatsuru is the closest sake brewery to my house, but I haven't had much of it lately. The last time I drank it I got the impression that it was peculiar and not really my cup of tea, but not this Junmai Daiginjo! Clear and fruity, good balance of flavors. It's also gorgeous😋. The price is reasonable for a Junmai Daiginjo, but I think it's worth it🧐 I can't underestimate local sake 😚

Low-polished Junmai-shu from Yamatsuru, a local sake brewery in Ikoma, Nara. The name is Choyao. It was a gift, but it looks like it will cost a fortune💧. I heard it was brewed using a method described in a wooden letter from the Nara period. I wonder if it is true. Anyway, let's try it. Wow! It is indeed as rich and sweet as I had heard! The sake level is a whopping -40❗️ But the aftertaste is refreshing. Surprisingly easy to drink and delicious 😋. It's pretty good 👍I'll have to try this one too 😙. The sake is brewed by "Toroki Shouten", a sake brewer who was involved in growing the rice and brewing it together with Wakatakeya Sake Brewery. I got it as a sign of support 😊 Is it what's called a light, dry taste? It had a faintly sweet aroma, but the sip was refreshingly watery! The flavor and bitterness come out on the palate. I was drinking it with cream cheese as an entrée, but it doesn't get in the way, so it's probably just right for a mid-meal drink 😊.
