The sake is brewed by "Toroki Shouten", a sake brewer who was involved in growing the rice and brewing it together with Wakatakeya Sake Brewery. I got it as a sign of support ๐ Is it what's called a light, dry taste? It had a faintly sweet aroma, but the sip was refreshingly watery! The flavor and bitterness come out on the palate. I was drinking it with cream cheese as an entrรฉe, but it doesn't get in the way, so it's probably just right for a mid-meal drink ๐.

Yamatsuru is the closest sake brewery to my house, but I haven't had much of it lately. The last time I drank it I got the impression that it was peculiar and not really my cup of tea, but not this Junmai Daiginjo! Clear and fruity, good balance of flavors. It's also gorgeous๐. The price is reasonable for a Junmai Daiginjo, but I think it's worth it๐ง I can't underestimate local sake ๐

Low-polished Junmai-shu from Yamatsuru, a local sake brewery in Ikoma, Nara. The name is Choyao. It was a gift, but it looks like it will cost a fortune๐ง.
