I'm at my new place today! We had a glass of local sake at the busi-hotel to pray for a new start👍. The mouthfeel is surprisingly soft and the flavor in the mouth is like custard cream or banana au lait! The texture is also soft on the tongue. I think I may have never tasted such a soft sake! And there is a mushroom-like taste in the aftertaste. There was also a sake from my new job, but I didn't dare to drink it. I'll leave it for the future 😌.

At home. My first Kamo Nishikishu. Almost no aroma. Slightly carbonated and alcoholic in the mouth. It has acidity and umami, but the bitterness is strong at the end. I'll try to warm it up a little and see if the taste changes after tomorrow.

The aroma is subdued. ❗️ The taste is very umami 👍. The aftertaste is clean and you won't get tired of drinking it. It's a sake that you can keep drinking 😅. It's not a modern taste, but it's a perfect food sake type 😅❗️ I paired it with my favorite mackerel sushi from Kyoto. It went great with my favorite mackerel sushi from Kyoto 👍. No wonder it is popular in restaurants in Tokyo these days. ❗️

A friend of mine said that if he had come all the way to Toyama, he would have had a variety of both Katsikoma and Haneya, but Hayashi had never had them. We compared two types of sake rice, Gohyakumangoku and Dewanosato. Both were to his liking, but the Dewa-no-sato was more acidic and better. I recommended it to him and told him that Koyama Shoten also sold it 😄.

Purchased at Yokohama Takashimaya Rice used is Kame-no-o type Koshihikari produced in Kasama City The alcohol is a little strong, but the taste is smooth and not like an unfiltered draft. It has a good balance of sweetness and bitterness and is refreshingly clean❣️. I used only ayu (sweetfish) for this dish. I also served bonito and Spanish mackerel tataki with a lot of myoga. It has a slightly high alcohol content and sweetness for a Niigata sake, so it went well with the ayu fish, bonito and Spanish mackerel. It was a good evening drink.

This is the fifth brewery in Saku's sake brewery series. This is a rare bottle as it has recently met with a fire and is closed. We happened to find it at a one-day spa and secured it. It has a strong bitterness and acidity, with a tangy mouthfeel. It also has a sweetness, so it is not harsh. It is the best sake from Saku so far. It's a shame that we won't be able to taste it for a while. I hope they will do their best to bring it back.
