Since it's spring🌸, I think I'll have another bottle of sake with spring in it. I bought a bottle of Shunshin by Nishide Sake Brewery in Komatsu City, Ishikawa Prefecture. I've been curious about this sake for a while but never got around to it. I will have it with boiled flounder 🙏. I thought it might be a bit strong, but it wasn't. It has a nice richness, sweetness, acidity, and a mellow feeling 😆. It's a bit like a lighter version of Tamagawa. As the label says, I preferred it at room temperature rather than chilled 👍

I saw it for the first time at a department store tasting sale, so I bought it. It's not listed on the label, but according to the brewer's description, it's unfiltered undiluted sake. It says "light nigori" but it's not cloudy at all (laughs). It's refreshing and easy to drink. The acidity in the second half is impressive.

It is more suitable as a mid-meal drink than as a stand-alone sake. I thought I had to ask for it when Yoohee-san came back home to get it 😅. It was available at a liquor store in Osaka city😳 At the store where I bought Saeki Hisho the other day. This sake is made with Abelia yeast. Fruity and sweet like a flower yeast, but the second half is quite spicy. I'd like to try it if they have fresh sake. I wondered what "Hanegi Shibori" means. I was wondering what "Hanegi Shibori" was, and it turns out that it's the same as the Tenbin Shibori process used by Furozumi, Miyako Bijin, and Shirasagi-no Shiro in the Kansai region 🤔.

At home. I bought this as a souvenir when I enjoyed lunchtime drinking at Changlong Brewpark and had it at home. I guess it is a slightly different version of the one I had at lunch. The aroma may be influenced by the name of bamboo ⁉️.... Unlike the lunchtime drink, it was fresh, sweet, sour, and refreshing. The fact that I was able to bring back a good one as a souvenir made my day more enjoyable and memorable... ‼️ The fourth picture is of Kaguya-chan, the mascot of Hiroryo Town.

At Changlong Brewpark. The second drink was Shikisaki. We were told that it is recommended as a food sake, so we had it with our bento. It is a dry sake with a strong umami flavor that can be savored slowly. Dry with a hint of flavor. Almost room temperature at the beginning of the drink. No sweetness whatsoever! But it's not hard to drink. I don't know if this is a good analogy, but I drink it as a very light shochu. It's meant to be a sipping drink, but it goes into your body quickly! The second day starts with a cold sake. On the back of the label, it says it's a little dry. Perhaps because it is an unpasteurized sake, it doesn't have a strong alcoholic flavor, but it does have a bitter aftertaste and a tongue-tickling sensation. Purchased at the new "Haneda Airport Garden" at Haneda Airport, an antenna store for the Yamakoshi area in Nagaoka City, Niigata Prefecture. It may look like you are not allowed to enter the premises of the brewery, but you can enter without any problem. The sake we tried this time.
