The rice used is Senbonishiki from Kumano in Hiroshima Prefecture. This brand is probably the first. To be honest, I didn't know about it. The person of the shop said "It comes in after two years". Is it a very limited product? This one is fresh and fruity, just like freshly pressed sake itself. The aftertaste is also crisp and tight with a citrus bitterness❗️. It is a modern sake that is refreshing and easy to drink overall. It seems that there are still some great Hiroshima sake hidden away!

Store Drinking. 100% Senbon-Nishiki produced in Hiroshima Prefecture The color is clear. The aroma has a Calpis-like flavor. The taste is sweet and umami of rice. Almost no aroma 🤔In the mouth, it is fire-brewed but the sensation of freshness fills the mouth. It's a good combination of matured and fresh 😚😊Mellow and calm with a good umami and a crisp acidity 😋. I don't know if it is suitable for today's suddenly cooler weather, but it was delicious . I don't know, but it was delicious 🥳.

The first Toyoshu in a long time is a pure rice sake brewed with the Yamanokami yeast derived from sasayuri (a kind of lily of the valley) that blooms in the sacred grounds of the Ogami Shrine, a sacred place for sake. If you are a sake drinker in Nara, you must try this 😁. Perhaps it was because I was used to light and fruity junmai sake, but it was alcoholic, not too sweet, and had a firm mouthfeel. But it has a modern feel and is easy to drink. Yamano kami yeast was surprisingly not peculiar 🤔. Thank you for the food 🙏. I think I'll go visit Ookami shrine ⛩ again.

I had wanted to drink it for a long time, but the timing was never quite right... The manager said it was his favorite drink in the restaurant! It is a pale yellow color with silver tints and a hint of green. It has a spicy top note with a hint of alcohol, but the aroma is very refreshing, perhaps because of the acidity. When you drink it, the slightly carbonated texture on the tongue is pleasant. There is not much noticeable aroma, but the acidity gives it a refreshing mouthfeel. It may not have much sweetness to begin with, but the acidity helps to make it dry. Despite its dryness, it has a strong flavor, which is probably due to the strong umami that can be tasted from start to finish. Dry sake is usually considered "spicy," but perhaps because of the strong umami, it does not feel too spicy. Interestingly, it is a sake that does not have much bitterness, which may be why it is so light and easy to drink despite its 17% alcohol content. This is seriously very, very good! I wouldn't say it's for everyone, but I think it's a must-try for sake drinkers who like umami!
