We used Go To to Echigo Yuzawa. So_1F3D4 brand and Naebayama brand that I don't remember seeing in Tokyo to match the local cuisine of the hotel. Junmai-Ginjo sake with Junmai-Ginjo specifications. The gentle aroma, the sweetness, and the refreshing finish give me the impression that this is a "Niigata's local sake" as I have always imagined it to be. In terms of Niigata brands that you can buy in Tokyo, I'd say it's similar to the Junmai Ginjo specs of Tsurueri or Kubota. If I tasted it, I'd never be able to understand it myself... After all, coming on a trip and pairing it with local food is the best part of local sake 👍.

The rice used is Gohyakumangoku and Koshibuki. My first impression was "It's sweet. ❣️ I felt that "Kosu-Mori" was also quite sweet for me, but it seemed more profound than "Kosu-Mori". It is like licking a muscat candy. The finish, however, is crisp with just the right amount of bitterness, so the sweetness doesn't linger and it feels refreshing. It is a delicious drink, but I think it is suitable for different situations.

Here's the last GW drink we had It was a sake brewery I knew nothing about. This sake was sold as a summer draft sake by the Japan Meimon Shukai. It seems it was the first sake from this year to be released as a Meimon Sake Kai sake. Miyamanishiki from Akita Prefecture, Sake meter value +3, No. 9 yeast Citrusy aroma. The impression is that it is quite sweet and has a rich umami flavor, making it very drinkable. It is not a modern type of sake, but it is quite drinkable. A little acidic? It's hard to drink by itself... It's hard to drink if you don't drink it while eating. Tonight's sake is a Shiraito Brewer's Nigori sake from the famous Shiraito Shuzo, which I had the pleasure of meeting at the brewery during my trip to Fukuoka in late May. When we visited the brewery, the proprietress and her little son were very attentive to us, and we were very grateful for the free tasting, which they usually don't do 😊 We bought a bottle of one of our favorites, so we're going to open it now 🙌! The rice polishing ratio is not stated, but I think it is more than 70% polished. The aroma has a soft lactic acid nuance that is not typical of sake. The taste is easy to drink with a slight sweetness of rice in the supernatant and umami flavor 😋 It becomes completely cloudy when mixed with a significant amount of lees, but it has a smooth mouthfeel and is more delicious 😋😋😋😋😋.

Tonight, I feel like I've been shvitzing at the gym for two days, but drinking this is a negative rebound, but when it comes to horse mackerel and monkfish sashimi, it's a MUST 🍶. I bought this 💁 at a brewery when I was in Fukuoka. It's Shiraito Sillite 70 ✨. Unlike Tanaka Rokujugo, this sake seems to be distributed within the prefecture, but it is a 100% Yamadanishiki Junmai sake from Itoshima, and when I tasted it, I enjoyed this lowest-purity sake 😋. The sake has a very clear and clean structure, with a hint of sourness from the ginjo aroma of the cucumber, and the rice is sweet and full. The finish is very crisp and very excellent. ☺️ It is best when it returns to room temperature from chilled. ⭕️

Jun Dai is in the 1500 yen range and very cosy👍 When it comes to Niigata, I love Kafuda-shu, it's very similar to the acidity of that Kafuda-shu 😋. I love Niigata, but I can't tell if it's sweet or spicy 😅I found myself drinking 3 gou of it, so it's good 😋. But I think it's the winner 😆. I'd like to try the other ones though👍

I stopped by the brewery for the first time in a while. I used to have a special fire-brewed junmai and a sake called "Mariko no shu" which is named after the female toji (master brewer?). Both were quite dry, classical sake. Both were quite dry classical sake, and I had the impression, for better or worse, that this is what local sake is supposed to be like. This was probably my first nigori sake, but it looked delicious, so I bought some! I wondered if the beautiful woman at the sales counter was Mariko herself? It has a classical aroma with a banana feel. It is more of a hint than a standing aroma. It has a classical taste and is dry, but you can drink it by itself if you want! It is very easy to drink because it has a lot of turbidity, which gives it a strong umami flavor and makes it easy to taste the sweetness. I drank it with kimchi nabe (kimchi stew), and I think it goes well with strong flavors and nabe dishes! It also seems to go well with meat, and I am sure it would go well with ginger-grilled pork or chicken steak. I imagine it is like Kikuhime nigori or Tamagawa nigori! To be honest, I think it's one of the best in the Koshu Plum Grove, so I'd be happy to buy a bottle and drink it slowly. It can probably be stored at room temperature until early spring.

Masterpiece is a sake with the theme of technical study and a retrospective and return to classic ginjo, I tasted it at last year's sake brewery tour and enjoyed it so much that I left without buying it, which I regretted a lot 💧. This year, I was determined to bring it back! This year, I decided to bring it back! Masterpiece has A (Yamadanishiki) and Un (Watabune), and I decided to bring back A this time. It's my first time to drink Hiraizumi❗️ I've never had a Junmai Daiginjo from Yamahai 🤔. It doesn't have a fruity aroma❗️ Somewhat spicy aroma and taste😅 It's very unusual. I've tasted it somewhere before but can't remember where 😥. It's a daiginjo so it has a clean aftertaste. But to be honest, it wasn't my favorite taste 😥. I wonder what other Hiraizumi tastes like❓
