🏠 Drinking ( -̀ -́ )୨⚑︎゛ I didn't care for the aroma. Crisp ‼️ and no bitterness. Maybe a light acidity when paired with veggies😊. For the entrée... Yakitori with sauce made with rice wine 🐓. I'm not sure if it's a good idea to use it with vegetables Rice used, Miyamanishiki Yeast, Kyokai 701 Alcohol 13%. Personal preference among 4 types 4️⃣ I received a bottle of sake that has been stored at room temperature for a wacky long time... I tried to drink it but it was old sake ( ´-̥̥̥̥̥ω̥̥̥̥̥̥`) I got about 7 kinds of sake including Tasake and Jyushiyo... What a waste 😭😭😭 The sauce made with Tasake was delicious though 🥲.

A 1-goupe bottle that I had gotten at Yamada-san, a sake dealer in Ikebukuro Seibu. I check the small refrigerator near the cash register, which is mainly small bottles, every time I go there. It is Kamerei Mannen from Hiroshima🐢. The classical texture gives it a ginjo-shu feel.

Rice used: Akebono from Okayama Prefecture, Gohyakumangoku from Niigata Prefecture, Yamadanishiki from Hyogo Prefecture This is a new product from a local liquor store. I thought it was a Toyama sake, but it turned out to be an Edo sake. The acidity is strong, and there is a refreshing summery flavor. The bitter and spicy aftertaste is also good. This is a unit work of three breweries in Joetsu: Katafune (Takeda Sake Brewery), Koshiji-no-Kenbai (Kubiki Shuzo), and Chiyonomitsu (Chiyonomitsu Sake Brewery). Kura-kept yeast, fresh yeast, and shibari. The proprietor introduced that there is a new trial in Niigata as well. Delicious! It starts with a light sweetness, followed by acidity and a sharp bitterness. This complexity is good. I couldn't take my eyes off of the sake from Joetsu. There is a recommendation from Takeda Shuzo on the back label, which is also interesting.

The third sake of the sake camp is Koshiji no Koubai. In fact, this is a brand that I have been wondering whether to buy or not every year after tasting it. This time, I did buy it (teehee). The mouthfeel is refreshing. The lingering aftertaste after the umami is pleasant. I really think it is a good sake.

Continuing from yesterday, a comparison of the tops of the median that was given to me by Princess Sabori: ‼️ First, the blue label ‼️ This is R3BY It's a Tokushun but with 50% polished rice 🤣. Followed by Origami: ‼️ I took the supernatant before mixing it, and it was not so different from the supernatant before 🤣. No wonder 😆. When I mix it, the flavor is so much better 😋 I would like to repeat this 👍! It's also cosmetically good to buy only the "ogara-mi" and enjoy it twice 😆.
