YOMOYAMA NAGANO in Osaka ⑫ The Honro-no-Matsu booth. An interesting sake brewery with three siblings as toji (master brewers). This was also my first tasting. I asked, "Which should I drink first? I asked, "Well, in order...". This question is good when you want to drink all kinds of sake, but when you want to drink only a little, you need to be careful. Honro-no-Matsu Junmai-Shu Tsuyoshi Clear and tasteless with a good acidity. Honro-no-Matsu Nama-zake (Nama-zake) Rich and full-bodied, with a slight nutty flavor. Honro-no-Matsu Junmai Ginjo Sumi Fruity, slightly sweet and delicious, my favorite type. HONORO NO MATSU Yamahai Koi Sweet and sour with a refreshing acidity. A 50% polished Junmai Daiginjo, Meguro Gorosuke, from Tama Flavor in Uonuma City (formerly Morimon Village), Niigata Prefecture. As is typical of Uonuma sake, it is a ginjo-shu that is not overly aromatic. I remember drinking it once at Tatsuya, a yakiton (grilled pork dumpling) restaurant in Numabukuro on the Seibu Shinjuku Line.

Jun Dai is in the 1500 yen range and very cosy👍 When it comes to Niigata, I love Kafuda-shu, it's very similar to the acidity of that Kafuda-shu 😋. I love Niigata, but I can't tell if it's sweet or spicy 😅I found myself drinking 3 gou of it, so it's good 😋. But I think it's the winner 😆. I'd like to try the other ones though👍

I'm at my new place today! We had a glass of local sake at the busi-hotel to pray for a new start👍. The mouthfeel is surprisingly soft and the flavor in the mouth is like custard cream or banana au lait! The texture is also soft on the tongue. I think I may have never tasted such a soft sake! And there is a mushroom-like taste in the aftertaste. There was also a sake from my new job, but I didn't dare to drink it. I'll leave it for the future 😌.
