I was caught off guard and it blew up in seconds 🤣.
It's dry and sharp.

I went to buy sake directly from the brewery, using the excuse that it was the Bon Festival. It takes less than an hour to go one way. I had seen +17 at a sake store and was curious about it. The label was blue and fresh.
When I opened the bottle, the aroma was fruity, with a slight smell of cemedine. There is an air bubble at the bottom rim of the glass. The color is slightly yellowish.
The taste is fruity, then spicy, and lingers for a long time. But I don't think it is as spicy as it is described as "super spicy", though it is delicious.
It has been a long time since I have had Okutanba, but I would like to buy this again.
The top aroma is unique.
Unique flavor that is difficult to describe in the mouth.
The impression is that sweetness, bitterness, and spiciness change frequently in the mouth. Freshness peeks out in places.
Dry and minerally mouthfeel
Nutty taste at the back of the mouth when it gets close to room temperature.
And I don't think it's a wooden vat, but it's a little woody atmosphere.
The overall impression is spicy and the spiciness lingers in the mouth for a long time, just like koge2's review.
On the second day, the sweetness seems to increase, but the smokiness seems to be stronger.
I definitely prefer this series to the Kijoshu, Sherry Cask, and Sparkling that I had last year.
I think I've had a lot of Okutanba in total, but I can't seem to get into it 🤔.
Chitose was pretty impressive though.
I wish they'd serve the wooden ticket in four-packs...
It's been almost a week now, and it's getting a bit peculiar, but it's getting sweeter and juicier...
Attracted by the label design, of which it has 3 different bottles. I chose the one called 陽酒.
Appearance: Very subtly light yellow
Aroma: Fruity aroma with a hint of apple
Taste: Elegant sweetness and slight acidity with thick and clean body
Finish: Medium and still maintain umami for a while
Overall: This sake is as elegant as its label
design, suitable for tasting in a quiet and focused environment. ❤️

I left it for half a year, but I guess it is because I left it at room temperature for a couple of months out of that time.
The aroma is a little matured. The only thing that made me feel uncomfortable was the aroma, but the taste is sweet, refreshing, and delicious as usual. The sake here is fairly strong, so I have stored it in the same way in the past, but only this year, why?
The aroma becomes more familiar as you drink it, and it tastes so good that it keeps you coming back for more. For the first time in a while, I felt like I drank too much at home. But I didn't get a hangover😅.

Aroma: Subdued ginjo aroma, with a fruity note that is understated, with hints of apples and pears.
Mouth: Slightly dry, but with a full and mild flavor

The aroma is quiet and calm, and a rich umami flavor spreads slowly in the mouth. The soft outline of the aroma is accompanied by a sense of the simplicity of the rice and the careful craftsmanship, which makes for a gentle drinking experience that will stay in your mind. In the latter half of the bottle, a refreshing sharpness appears, and it has a good balance that goes well with meals without dragging down the sweetness.
The natural strength of the organic rice combined with the brewer's handiwork makes for a quiet but strong bottle. It can be served chilled, at room temperature, or lukewarm.
