At home. Nara Sake without permission, 12th stage ~‼️ Kubo Honke, a long-established sake brewery in Uda City, Nara Prefecture ~ ‼️ Hatsukasumi and this Soriryu are famous brands. The baseball club team that my sons took care of when they were in junior high school was located in Uda, and this is a nostalgic place where we used to go every weekend. We used to pass by the brewery we visited this time, but this is the first time we visited there. It is called "Sake Brewery Street," but it is really a quiet street. And the taste of the sake.... There is not much aroma, and although you can feel the alcohol in your mouth, the dryness is not so high and the sake is easy to drink. I imagined it would be a dry sake for the experts because it is from a long-established sake brewery, but to my surprise, it is moderately drunk and has a refreshing taste. It is not flashy, but it is a good sake. ‼️

This time we changed things up a bit and bought a bottle of Kuromatsu Kenrishi❣️, which we fell in love with at first sight because of the shape of the bottle and the coolness of the label. I had it lukewarm with my homemade oden🍢🙏. It's also good that you can heat up the whole bottle in a ding-dong! It has a bit of an alcoholic aroma, but I don't mind it too much. Purchased at Yamane Sake Shop in Tanabe City, Wakayama Prefecture, during a trip to Wakayama Prefecture. I was attracted by the sake label (❗️) and bought it! Aroma of mineral and a hint of grape. When you put it in your mouth, there is a strong sourness and stimulation, followed slowly by a feeling of alcohol, and a little bitterness remains. The image was more like a heavy and drinkable sake, but it was like a dark, fruity, strong sake! I heard they use wild yeast collected from the soil of Kumano Kodo. I imagine it has an even more wild flavor! Even though it's dark, it's still relatively easy to drink, so I guess it's one of the more dangerous sake 😁.

I took it out of the fridge and opened the bottle. I'm not sure if this is a good thing or not, but it's a good thing. The flavor of the rice and the pleasant acidity. When the temperature is raised, the flavor and acidity are more assertive than right after opening the bottle. It says that it goes well with Japanese cuisine, and I think this is true. It is a good food sake that does not interfere with food. Sari seems to go well with rice crispy rice 😀.

Back in the day, Niigata's Sanbai was an extremely hard-to-find brand. I often visited Niigata Takata on business and was often presented with it. At the time, I had no interest in sake at all and almost never went through with it. Now, in 2021, Koshino-Kanbai is easily available at Aeon. Mine-no-Hakubai is also often seen as Hishiko at local liquor stores. However, Yukinubai is not so easy to find in my hometown. So, I got it on a business trip to Joetsu. I paired it with a taste of spring, firefly squid and broccoli with olive oil. It has a moderate aroma of cemedine or banana. It is sweet. It harmonizes with the sweetness and bitterness of firefly squid and broccoli. Lastly, there is a final bitter taste that is refreshing and delicious in the mouth!
