I bought this Wakaba unfiltered sake in the summer and felt it was still young, so I let it sleep in the closet. It has a good balance of flavor, with the punch of unfiltered sake, but without losing the simple country feel of Wakaba. I put it in the closet again, but it was good enough. It's an Ibaraki sake bar, but they also sell a lot of small bottles 😆. So I bought a small bottle as a souvenir 🤣. I wanted to drink hot sake, so I chose this one that looks good for hot sake. This is Tsuki no I of Oarai ❗️ Yumbe Yokocho is the best place to drink, just stick the bottle in ❤️. I'll have it at 50°C 😋😋. Nice caramel color. And the aged aroma that smells powwow. It has a gentle, light, sweet mouthfeel and a moderate acidity. It has a gentle, light, sweet mouthfeel with just the right amount of acidity and a nice, sweet taste. I paired it with shime saba (mackerel) and it's great ☺️. The vinegariness that is unique to shime saba is refreshingly clean, yet the sweetness and umami of the sake is still there 😋. I thought it would be a bit more dry, but it wasn't as dry as I thought it would be 😉. Ibaraki sake review rate is going up because of the Ibaraki sake bar 😂.
