Takatsugawa" Junmai-shu from Fusozuru's brewery We ordered this sake from Kotobukiya in Atsugi in January 2023, and it was commented on Kotobukiya's website as "a hidden gem for home drinking". It has been stored at room temperature for 2 years and 9 months since it came to our house, and it has further changed color and has some ooze. At room temperature, it has a matured, savory, and peculiar taste (this peculiarity is also its charm). It is still not hot enough at lukewarm temperature, but when the temperature is raised to 50℃ or higher, it is nice and full-bodied, The caramel-like sweetness spreads and attracts the taste buds. It is a great everyday evening sake, and can be kept at room temperature after opening, and is also suitable for aging.

This is an apparently hard-to-find Akizuka sake. Since I had already had a draft of this sake before, I had to unlock the results of a terribly maniacal drinking comparison. I chilled it. It has a sweet aroma that harmonizes graininess and a sense of maturity. The modest mouthfeel reveals the clean acidity and caramel flavors typical of the sake's origins, and the full-bodied sweetness and rich umami slowly permeate the taste buds. It is delicious both lukewarm and hot.

This sake was a gift from a junior colleague (son of a liquor store owner). It has been a long time since I've had a classic, THE old man's dry sake. There is a sweetness of rice in the back, and it is refreshing. Not bad. After the sweet and juicy sake, we had a glass of So-no-Sato. Not bad. I've only been at work for a little while after the new year, but the three-day weekend is wearing on me. Sake heals me 😄.

The rice used is Yamadanishiki. The rice polishing ratio is 35%, is it the flagship sake of the brewery? It has a solid ginjo aroma, and while it is basically light and dry, it also has a mild sweetness. There is little miscellaneous taste and the mouthfeel is good. The aftertaste has a good accent of alcohol and a solid flavor. Overall, it is a good sake with a cohesive taste that makes you realize again that the alcoholic version is better for the Daiginjo class.

This will be my first time in Sanin Togo🍶. The first aroma is sweet, with a hint of grain rather than rice. In the mouth, there is a moderate acidity and a sweet umami taste of rice. It has a slight peculiarity similar to that of Ten Asahi or Benten Musume, but this is acceptable. I enjoyed it with oysters in oil 🦪. San-in region's heated sake has its own peculiar taste 🤔. Rice used is unknown. According to the owner of the sake shop, the sake is aged for three years, but there is no strong sense of aging, and it is a dry junmai-shu with a good acidity. It is a dry junmai-shu with a lot of acidity. The sweetness that spreads fluently and the spicy astringency in the latter half are very unique. After a few days, it becomes more crisp and easy to drink. For my taste, I'd like to have more of a woody or smoky flavor. Either way, it's not a type that will appeal to everyone. The mainstay of this brewery is Yamahai brewing, so it will be interesting to see how peculiar it is.
