This brewery was closed in April this year due to the effects of Corona and other factors. It is said that there is no reopening schedule, so it is practically closed. The official site has disappeared, and it looks like the company has been sold. It would be nice if the company that bought it would let it reopen... It's a rich, umami type that's different from the general image of Niigata's sake. It has a sweetness from the rice. As it has won a gold medal, I'm sure this sake would be delicious warmed. It also has a creamy sweetness.

Toyosaka -Toyosaka-. This is the first Toyosaka Echigo Den'emon we have had in a year, and it is made with Ginbukiyo (a cross between Yamadanishiki and Tamakoe). Here are the specs for the soft-water Yamahai Yamahai Tank Shiboribori Nama-nazake. It has a grape-like heady aroma and a fresh, rich, apple-like sweetness with a slight dustiness. I bought this at Mori Sake Brewery on my last trip to Hirado! The president of the company was in charge of the cash register that day😆. He politely introduced us and told us that it tastes best chilled in a wine glass! Sweet and sour from the aroma Tastes like plum wine Slightly sticky texture A little sweet but not too sweet Slightly rice bran-like, but you can sense the grains and nuts that only low-polished rice can provide But still sweet 😃. Sweet and delicious as a dessert wine I had it with Nagasaki Fukusado sponge cake a few days ago Champagne split today 🤣. Half and half Pour in a 1:1 ratio Marriage of Philando and Champagne 😉. Again, no rice used or major specs. It is a very low alcohol sake at 5%. Oh❗️It's really red! is my first impression. I remember drinking red sake before, but once again I thought rice is amazing. It's hard to recognize this as sake when it's served without saying anything. It's almost like a rosé wine, with a strawberry-like flavor. It's light, but I'm not sure I like the sweetness and mouthfeel. If I were served this sake at midnight, I'd be in a bit of trouble.

The rice used in this is also unknown. A slightly low-alcohol type of Junmai Ginjo So far, this is the most authentic and the driest sake in the HINEMOS range. The mouthfeel is clear, light and refreshing. When you drink it, the umami-sweetness spreads out, and at the end, you can feel the bitterness and spiciness in the throat and nose, and it tightens up quickly. Yes, yes, this is my favorite type 😋.
