Purchased in January at Kinase, a local sake brewery in Mito. I chose this brand for the Ibaraki local sake category. I was really torn between Watanabune and this one, which I had never had before. When I checked the aroma, I found a sour, vinegar-like smell... Looking at the label, we discovered that it had been bottled more than half a year. I didn't realize how much a draft sake deteriorates after half a year, even if the bottle is unopened... The taste is also undeniably deteriorated, but it is drinkable without any problems. It has a slight melon-like flavor with almost no sweetness. It is easy to drink as it is refreshing and sharp. I drank it much more smoothly. There is no doubt that the original is delicious. I want to revisit Matsumori for this...! But I didn't know it smelled like this. I learned a lot.

Bouken-san told me about it before, and I've become a fan of Watashibune's new sake 😚. But it's made with 100% short-stemmed Watashibune. I think this brand is as good as my favorite Genmai which I opened just before. The aroma is like a grape🍇, and in the mouth you can feel a very thin gas and a gentle sweetness. The aroma and taste are well integrated, and the transparent flavor fades out with a slight bitterness, which is brilliant 😆. Today I paired it with a yose-nabe with agaric broth, and the complex broth of the seafood and the flavor of this sake matched so strangely that I could really linger and eat and drink forever... It's still Monday, so I had to call it quits 😅.

The first bottle I opened this year was Suzukagawa from the same brewery as Saku, which I got at the end of the year. The aroma, sweetness, acidity, and bitterness in the mouth are very similar. It wasn't as impressive as the Saku, but it was a delicious gem. At the end of the year, I mainly drank the same brands, but now that the year has started, I would like to try more and more new ones that I have never tasted before. @Koriyama Iando After having a drink in Omiya, I got tired of going back to Tokyo, so I jumped on the 🚄 and went to Koriyama. I decided to have a quick bite in front of the station, but it was crowded everywhere, so I went to a new restaurant that I found. They have a good selection of local sake, and I chose "Yuri", which I had never had before, and it is from the same brewery as Aizu Nakasho! I heard that this sake is brewed by a mother and daughter who are both sake brewing technicians! It has a soft sweetness at first, but eventually it becomes slightly dry and pleasant to drink. It is very easy to drink, which is impressive and delicious.

Tonight, we paired this first sake with Japanese food for dinner. Saijotsuru Jun Dai Black Label Hibi Seishin Nakadori Nama Sake✨. I have not had much luck with Hiroshima sake so far, but I hope this will be a new encounter for you: ☺️ I've never had much luck with Hiroshima sake, but I'm hoping to meet some new people. Is Tachika a characteristic of the rice? Is it the yeast? The aroma is not so strong, but it is a bit of a "chemi" aroma. The taste has the fresh acidity and clear quality of Nakadori Nama-shu, with soft fruit flavors of muscat and lychee, and finishes crisply with a dry taste with a strong sense of alcohol in the latter half. It is perfect as a food sake and does not interfere with meals, but it is also delicious when drunk on its own 😋.
